Kate's strawberry cobbler recipe will make you 'berry' happy this summer!

INGREDIENTS
12 tablespoons cold salted butter
1 cup whole wheat pastry flour (or all-purpose flour)
½ cup old fashioned oats
½ cup light or brown dark sugar
2 teaspoons baking powder
½ teaspoon kosher salt
1 cup milk
1 tablespoon vanilla extract
6-7 cups sliced strawberries
2 tablespoons maple syrup
2 teaspoons arrowroot powder

INSTRUCTIONS
1. Preheat oven to 375 degrees. Drop 8 tablespoons butter into a 9x13 inch baking dish and place the dish in the oven to melt, about 10 minutes.

2. To make the batter, stir together the flour, oats, ½ cup brown sugar, baking powder, and salt. Mix in 4 tablespoons shredded/grated butter. Add the milk and vanilla, mix until just combined.

3. In a bowl, toss the strawberries with the maple syrup and arrowroot powder.

4. Layer ¾ of the strawberries over the melted butter in the baking dish. Then pour the batter over the top, do not stir. Layer the remaining strawberries over the batter. Bake 45-50 minutes, until the center is just set and the edges begin to brown.

5. Serve warm or at room temperature with ice cream.

Together, Phil and Maureen are the proud parents of two creative and accomplished children, Ryan and Lauren. As a CPA, Phil suggested both kids go into Public Accounting, so naturally Ryan chose culinary arts working throughout the US, and Lauren focused on theater. She later discovered her knack for mathematical sciences and is currently pursuing a career as a civil engineer after graduating from California State University Long Beach, Phil’s alma mater.

Reflecting on fatherhood, Phil shares that “being a dad has been astoundingly rewarding. I remember when Ryan was born, I put my index finger in his hand and he grabbed it. I realized he was a living, breathing human being and he smiled at me. It was one of the most amazing experiences of my life.”

Born in La Mirada, Phil's early years were marked by a series of relocations, from Bangor, Maine, to Westwood, CA, before settling in Newport Beach during his formative years. It was here, amidst the tranquil beauty of Lido Isle, that Phil's lifelong connection to the ocean and sailing first took root. As a youngster, he immersed himself in the LIYC Junior Sailing program, honing his skills on the water and competing in regattas including the Sabot Nationals.

But Phil's story is not just one of sailing and seaside adventures; it's also a tale of love and partnership. In 1979, while working at the Old Spaghetti Factory in Newport Beach, Phil crossed paths with Maureen, the woman who would become his beloved wife. Despite the challenges of a long-distance relationship while Maureen attended college at Cal Poly San Luis Obispo, their bond endured, culminating in a wedding celebration on June 29, 1985. Nearly four decades later, their love continues to flourish, a testament to the enduring power of commitment and devotion.

The sun glints off Newport Harbor, casting long shadows on the water as a fleet of sailboats gracefully cut through the water. This isn't just any regatta - it's the Flight of Newport Beach, the city's oldest and most cherished sailboat race, boasting a vibrant history that stretches back decades.

The story begins when a race started as the Flight of the Snowbirds in 1936 and became one of the largest small sailboat races in the world, with 200 boats entered at its height of popularity in 1950. A Snowbird is a small wooden boat class with an 11-foot hull and was once the most popular boat in Newport Beach. Little did the sailors of yesteryear know, they were laying the foundation for a tradition that would endure for generations.

Louis Vuitton is a ten-year-old male cat. Charina Na, his current and forever owner, has had him since he was one, making their time together nine years. He is a super compassionate and sweet cat who seems to be able to understand how you are feeling.

Priceless Pets, the non-profit, no-kill rescue where he came from, had been aware of Charina wanting a Persian cat, and when they met, it was love at first sight. His first family loved him, but when they had a baby, she was allergic and they had to let him go. Now he lives on Via Quito and enjoys being very well known. Louis Vuitton not only has been featured in the photo section of our newspapers, but also receives compliments on the various strolls he goes on. After being strapped up in his stroller, he enjoys going to the many restaurants and coffee shops on the peninsula. And of course, he enjoys receiving all the love from passerby who watch and start conversations about him and his history, which often leads to people checking out Priceless Pets for themselves, helping to spread the word. Through these interactions he has many human friends and admirers all over the island.

This June, a Newport Beach festival is charting a course to celebrate the timeless beauty of wooden watercraft. The Newport Beach Wooden Boat Festival is returning to the docks of Balboa Yacht Club for its eighth year from June 7-8, this time with a brand-new format and theme: “The Art & Craft of the Wooden Boat.”

A message from Will O’Neill, Mayor of Newport Beach

Newport Beach remains a vibrant American Riviera mixed with community hospitality. Our coastal beauty, wide array of locally-owned shops and restaurants, strong schools, clean environment, and world-class public safety has ensured that our little city endures as a desirable place to live, work, and play.

Like a great baseball umpire, our City Council focuses on unnoticed excellence. We treat tax dollars as if they were earned by hard work, because each and every dollar was. Our largest tax revenue comes from property taxes, followed by sales tax and transient occupancy tax (hotels, etc.). These resources are then used primarily to provide core services and infrastructure that facilitate our city’s flourishing.

The largest amounts spent go to our Police and Fire Departments. We commit more than half of our general fund budget to these departments because they are and will continue to be our biggest priorities.

Not only do we invest in hiring, training, and retaining, but we have also invested in public safety infrastructure as well. Over the past six years, we have replaced Fire Stations in Corona del Mar and Lido Village and will complete the last phase of replacements this coming year on the Balboa Peninsula. We also purchased property to replace our Police Station to bring the department even more into their modern demands.

This year, as Mayor, I also get the chance to celebrate people and groups who bind our community together. Using a famous quote from our childhood teacher, Mr. Rogers, I’m encouraging people to “Look For The Helpers.” We have been celebrating these Helpers with certificates and proclamations and other recognitions at our City Council and other community meetings.

We are a blessed community. Thank you for the honor to serve as your Mayor.

Berrylicious Blueberry Muffins
Makes 1 dozen muffins

INGREDIENTS
8 tablespoons (1 stick) unsalted butter, melted and cooled
2 large eggs
½ cup milk
2 cups unbleached all-purpose flour
¾ cup plus 1 teaspoon granulated sugar
2 teaspoons baking powder
½ teaspoon fine salt
2 ½ cups fresh blueberries

DIRECTIONS
1. Preheat the oven to 375 degrees. Line a 12-cup muffin tin with papers.

2. Whisk the butter, eggs, and milk together in a bowl. In another bowl, whisk together the flour, the ¾ cup of sugar, baking powder, and salt. Stir the wet ingredients into the dry ingredients and fold in the blueberries.

3. Divide among the muffin cups and sprinkle the muffins with the remaining teaspoon of sugar.

4. Bake until a toothpick tests clean and the muffins are golden brown, 25-30 minutes.

Twenty-four years ago, Judy Weightman bought a beautiful Harbor 20, after purchasing it from Tom Shock, who built the sailboat. Originally, the boat was meant to be sold in San Francisco, but nobody was interested, so Tom called Judy and told her that he had a great deal for her.
