Broccoli Caesar Salad with Chickpea Croutons

This completely redone version of a Caesar will be a summer staple!

Salad Ingredients:
1 head broccoli, chopped into florets
1 can rinsed, drained and dried chickpeas
Parmesan cheese to taste

Dressing ingredients:
1 cup raw cashews, (can soak in hot water before blending for smoother)
1 TB olive oil
2 TB lemon juice
1 TB capers (optional)
1 tsp Dijon mustard
½ tsp salt
¾ cup water
1 tsp garlic powder
Pinch pepper

Instructions
Preheat oven to 425 F. Line a baking sheet with parchment paper.
Chop broccoli and drain chickpeas, drying them off. Add broccoli & chickpeas to baking sheet. Spray with olive oil and season with salt & pepper. Roast 25-30 minutes until broccoli is soft and browning in places, and chickpeas are getting crispy. Toss in a bowl and let cool slightly, then add parmesan and dressing. Enjoy the flavors of a Caesar salad with much more filling and nutritious ingredients!

St. Mary’s School announced the groundbreaking of the Design The Future project, encompassing a cutting-edge, two-story, 28,000-square-foot state-of-the-art building and outdoor park-like spaces. This new building will house a Design Center tailored to all students and a new space for its Early Education Program. The project also includes the creation of 40,000 square feet of park-like community spaces, contributing to an enriched campus environment. Groundbreaking will occur on June 21, 2024, and construction will be completed by the start of the school year in September 2025.

Delicious Butter Lettuce Salad to enjoy two difference ways for the perfect Springtime pick me up. Dive in and enjoy!

Option 1 For The Salad:
The Dressing
1/3 cup olive oil
2 tablespoons lemon juice
2 tablespoons golden balsamic vinegar or champagne vinegar
1 to 2 teaspoons honey
1 clove garlic, minced
1 teaspoon Dijon mustard
Kosher salt and black pepper, to taste
Salad Ingredients
2 heads butter lettuce, roughly chopped
6 radishes, thinly sliced
2 Persian cucumbers, sliced
1 large avocado, sliced
1/3 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh chives
Instructions
In a small bowl or jar, whisk together the olive oil, lemon juice, vinegar, honey, garlic, and Dijon. Season with salt and pepper, to taste.
In a large bowl, combine the lettuce, radishes, cucumbers, avocado, Parmesan cheese, and chives. Drizzle dressing over the salad and toss. Serve immediately.

Option 2 For The Salad
Ingredients
2 tablespoons extra-virgin olive oil
1 tablespoon grated lemon zest, plus more for garnish
2 tablespoons lemon juice
1 ½ teaspoons white balsamic vinegar
1 tablespoon finely chopped fresh chives or tarragon
1 teaspoon honey
½ teaspoon ground pepper
6 cups torn butter lettuce
⅓ cup cubed cooked beets (1/4-inch)
¼ cup halved and sliced watermelon radish (1/8-inch)
2 tablespoons unsalted sunflower seeds
¼ cup crumbled goat cheese
Directions
Whisk oil, lemon zest, lemon juice, vinegar, chives (or tarragon), honey and pepper together in a small bowl until well combined.

Combine lettuce, beets, radish and sunflower seeds in a large bowl. Drizzle with the vinaigrette and toss until evenly coated. Sprinkle evenly with goat cheese. Garnish with additional lemon zest, if desired.

Mother's Day is more than just appreciating your own mother. It's the woman next door, the woman at the grocery store, the woman at the veterinarian, or the woman at the charity marathon you just attended, who helped you out when you needed it, or another family member who took you under their wing. Being a mother extends to more than just our own brood.

We received many beautiful entries about mothers from their kids, and some of our contest entries were about someone else's mother who made a difference in someone else's life. It's such an honor to learn about these amazing women, beautiful inside and out, with their unconditional love.

This June, a Newport Beach festival is charting a course to celebrate the timeless beauty of wooden watercraft. The Newport Beach Wooden Boat Festival is returning to the docks of Balboa Yacht Club for its eighth year from June 7-8, this time with a brand-new format and theme: “The Art & Craft of the Wooden Boat.”⁠

The 7th Annual Port Streets Spring Cleaning Event was a huge success!!!

On March 1, 2024, Holly Duplanty of Compass organized the 7th Annual Spring Clean Event at the Andersen Elementary Parking Lot. This event was a collaboration aimed at benefiting the community in multiple ways.

Goodwill OC participated by collecting donations and e-waste, providing opportunities for people to contribute to a caring and connected community while supporting personal development and career goals. Their vision of ensuring meaningful career opportunities for everyone underscores the transformative power of work.

Haz Away Today was also present, offering a solution for recycling batteries and paint cans to prevent them from ending up in landfills, thereby promoting environmental sustainability.
Furthermore, Pro Shred provided a crucial service by shredding documents, safeguarding individuals' privacy and security.

The event garnered significant success, with truckloads of donations, e-waste, shredded documents, batteries, and paint cans collected. Residents appreciated the opportunity to participate and are eagerly anticipating next year's event.

A heartfelt thank you goes out to Holly Duplanty of Compass for her efforts in hosting this impactful event, which brought together various stakeholders to benefit the community both environmentally and socially.

Chickpea, Avocado & Feta Salad

Light, bright, & easy for spring. You’ll come back to this again and again. Eat it straight, on toast, crackers, or on lettuce!

Ingredients

15 ounces chickpeas, rinsed and drained
2 avocados, pitted, and chopped
1/3 cup chopped cilantro
2 tablespoons green onion
1/3 cup feta cheese
Juice of 1 lime
Salt and black pepper, to taste

Instructions

In a medium bowl, combine chickpeas, avocado, cilantro, green onion, feta cheese, and lime juice. Stir until mixed well. Season with salt and pepper.

Serve.
