Broccoli Caesar Salad with Chickpea Croutons
This completely redone version of a Caesar will be a summer staple!
Salad Ingredients:
1 head broccoli, chopped into florets
1 can rinsed, drained and dried chickpeas
Parmesan cheese to taste
Dressing ingredients:
1 cup raw cashews, (can soak in hot water before blending for smoother)
1 TB olive oil
2 TB lemon juice
1 TB capers (optional)
1 tsp Dijon mustard
½ tsp salt
¾ cup water
1 tsp garlic powder
Pinch pepper
Instructions
Preheat oven to 425 F. Line a baking sheet with parchment paper.
Chop broccoli and drain chickpeas, drying them off. Add broccoli & chickpeas to baking sheet. Spray with olive oil and season with salt & pepper. Roast 25-30 minutes until broccoli is soft and browning in places, and chickpeas are getting crispy. Toss in a bowl and let cool slightly, then add parmesan and dressing. Enjoy the flavors of a Caesar salad with much more filling and nutritious ingredients!
