In a 12 inch cast iron pan, add the butter and shallots and fry on low heat for 5 minutes until the shallots have caramelized and squish the roasted garlic head.4. Mix caramelized onion and garlic with grated cheese, heavy cream, salt and pepper. Separate 1/4 of this mixture and set aside( for top) 5. Mix sliced potatoes with cheese mixture. 6. Arrange the sliced potatoes in a spiral pattern and add cheese mixture on top, sprinkle with fresh thyme leaves.7. Cover the cast iron pan tightly with a piece of tin foil.
