I have always been a "wing it" and "figure it out as I go" kinda cook. I very very rarely measure anything out, make up my own recipes, and just cook from the heart. So, when I started thinking about dabbling in the sourdough world it was extremely intimidating. All the measuring, different techniques, different recipes had me like...🥴🥴. But, I was determined. I wanted to learn, and continue to help us on our self sustaining journey with our food. Now, I can't stop. 🤣🤣 Tonight I made bagels, and two nights ago I made a jalapeno/cheddar loaf and regular loaf. They are no way perfect, and my carefree nature when it comes to cooking has come back. I'm trying to find my own way when it comes to sourdough, and learning what works for me. The fact is, anything I make from scratch at-home is hands down 100% better than store bought. 😉😉

Back in September, my sweet neighbor gifted me with about a tablespoon of her very mature sourdough starter. I will be honest, sourdough and their starters scared me. It was so intimidating and scary. So, I put it in my fridge and forgot about it. Thursday evening I decided I was going to wing it. I researched every part of the process until I was...🥴🥴🥴. I added some flour, water, and lovingly called her Susan. The next morning she doubled in size. I was shocked. It was still only about 1/2 cup of starter, but it was working. Over the last couple days Susan has matured and became very active. Tonight I took a stab at cinnamon rolls. They turned out absolutely amazing and delicious. The kids were begging for more than one. I guess you can say Susan and I are like this...👯‍♀️👯‍♀️. I am excited to branch out and try more recipes.
