One of my go to quick and easy meals is this veggie stir fry with egg and nuts. Sometimes I eat it for breaky!
You could add chicken if you wanted more protein.
1. Cut up lots of different veggies.
2. Put some butter in a pan on low heat
3. Throw the cut up veggies in and c stirring occasionally
4. Beat some eggs in a bowl
5. Once veggies are slight cooked mix in egg and cook. Stirring to make sure it’s cooked through.
6. Make sauce - in a bowl mix 2 tablespoons light soy and 2 tsp of cornflour together. Then add 2 tablespoons of oyster sauce and Chinese cooking wine. Add sriracha to taste. Add a cup of water and mix well.
7. Add in the sauce to veggies
8. Add in nuts. I used mixed crushed nuts otherwise I would use cashews.
9. Simmer and stir occasionally
10. Serve and enjoy! If you want more heat add
