Primavera-Stuffed Chicken

Ingredients
4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 zucchini, halved lengthwise and thinly sliced into half-moons
3 medium tomatoes, halved and thinly sliced into half-moons
2 yellow bell peppers, thinly sliced
1/2 red onion, thinly sliced
2 Tbsp. extra-virgin olive oil
1 tsp. Italian seasoning
Kosher salt
Freshly ground black pepper
1 c. shredded mozzarella
Freshly chopped parsley, for garnish

Directions
Step 1
Preheat oven to 400°. Make slits in each chicken breast, being careful not to cut through completely, and stuff with zucchini, tomatoes, bell peppers, and red onion.
Step 2
Drizzle with oil and season with Italian seasoning, salt, and pepper. Sprinkle with mozzarella.
Step 3
Bake until chicken is cooked through and no longer pink inside, 25 minutes.
Step 4
Garnish with parsley before serving.

Cajun-Stuffed Chicken

Ingredients
2 Tbsp. extra-virgin olive oil
1 c. medium onion, diced
1 c. red and green bell pepper, diced
Kosher salt
Freshly ground black pepper
4 boneless, skinless chicken breasts
1 c. shredded cheddar
2 Tbsp. Cajun seasoning

Directions
Step 1
Preheat oven to 350°. In a large ovenproof skillet over medium heat, heat oil. Add onions and peppers and cook until soft, 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
Step 2
With a sharp paring knife, create a pocket in each chicken breast. Stuff each with vegetable mixture, then top with cheddar. Season chicken all over with Cajun seasoning, salt, and pepper.
Step 3
Add chicken to skillet and bake until cooked through, about 25 minutes.

Slow-Cooker Beef & Broccoli

Ingredients
1 1/2 lb. sirloin steak, thinly sliced
1 c. low-sodium beef broth
1/2 c. low-sodium soy sauce
1/2 c. brown sugar
3 Tbsp. sesame oil
1 Tbsp. sriracha
3 cloves garlic, minced
3 green onions, thinly sliced, plus more for garnish
2 Tbsp. cornstarch
2 c. broccoli florets
Sesame seeds, for garnish
Cooked jasmine rice, for serving

In a large slow-cooker, add steak. Add beef broth, soy sauce, brown sugar, sesame oil, Sriracha, garlic, and green onions.
Step 2
Cover and cook on low until beef is tender and cooked through, 3 1/2 to 4 hours.
Step 3
When the steak is tender, spoon a few tablespoons of the slow-cooker broth into a bowl and whisk with cornstarch. Pour into slow cooker and toss with the beef until combined. Add broccoli and cook, covered, 20 minutes more.
Step 4
Garnish with sesame seeds and green onions and serve over rice.

Crockpot Buffalo Chicken Dip

Ingredients
1 rotisserie chicken, shredded
3 (8-oz.) blocks cream cheese
2 c. shredded cheddar
3/4 c. buffalo sauce
1/2 c. ranch dressing
FOR SERVING:
1/2 c. crumbled blue cheese
Freshly chopped chives, for garnish
Sliced baguette
Celery sticks
Carrots

Directions
Step 1
In a large slow cooker, combine chicken, cream cheese, cheddar, buffalo sauce, and ranch.
Step 2
Cook on low for 3 hours or until everything is melted together and warmed through.
Step 3
When ready to serve, top with blue cheese and chives and serve with dippers.

Slow-Cooker Ribs

Ingredients

2 racks baby back pork ribs (4 to 5 lb. total)
5 tsp. kosher salt
2 tsp. cayenne pepper
2 tsp. dried oregano
2 tsp. garlic powder
2 tsp. smoked paprika
1 tsp. onion powder
1 tsp. freshly ground black pepper
1 3/4 c. homemade or store-bought BBQ sauce, divided

Directions
Step 1
Remove ribs from packaging and pat dry with paper towels. Cut each rack in half. Arrange ribs bone side up. Using a flexible knife, loosen thin layer of membrane from one of the half-racks of ribs. Using a dry paper towel for grip, pull membrane from ribs until it comes off and discard. Repeat with remaining racks.
Step 2
Season ribs on both sides with salt. In a small bowl, stir cayenne, oregano, garlic powder, paprika, onion powder, and black pepper. Sprinkle seasoning mix on both sides of ribs.
Step 3
Transfer ribs to a 6- to 7-quart slow cooker, arranging so bones are parallel to long sides of slow cooker. Pour 1 1/2 cups BBQ sauce over ribs. Using a pastry brush, make sure sauce coats front and back of ribs.
Step 4
Cook ribs until very tender, on high for 3 1/2 hours or low for 7 hours.
Step 5
Preheat oven to 400º. Transfer ribs bone side down to a large foil-lined baking sheet. In a small bowl, whisk 1/4 cup leftover cooking liquid and remaining 1/4 cup BBQ sauce. Brush sauce mixture over ribs.
Step 6
Bake ribs until sauce begins to brown and caramelize, about 10 minutes. Transfer to a cutting board and let cool slightly before slicing.

Grilled Zucchini Carbonara

Ingredients

2 large zucchini (about 10 oz. each), cut into 1/4" rounds
2 Tbsp. extra-virgin olive oil
Kosher salt
12 oz. spaghetti
6 large egg yolks
1 large egg
1 c. finely grated Pecorino (about 3 oz.), plus more for serving
1/4 c. coarsely chopped fresh basil
1 Tbsp. unsalted butter
1 Tbsp. white miso
2 tsp. finely grated lemon zest
Freshly ground black pepper

Directions
Step 1
Prepare a grill for medium-high heat (or heat a large grill pan over medium-high heat); preheat 5 minutes. In a medium bowl, toss zucchini, oil, and 1 teaspoon salt. Let rest 5 to 10 minutes while grill heats up.
Step 2
Working in batches if needed, grill zucchini, turning halfway through, until charred and softened, 5 to 6 minutes per side.
Step 3
In a large pot of boiling salted water, cook pasta, stirring occasionally, until just al dente or a little white still appears once bitten into, about 10 minutes.
Step 4
Meanwhile, in a large bowl, mix egg yolks, egg, Pecorino, basil, butter, miso, and lemon zest; season with pepper. Set aside away from heat.
Step 5
Add pasta and zucchini to egg mixture, gently but quickly tossing to incorporate hot pasta and egg mixture, until sauce is glossy and coats pasta.
Step 6
Divide pasta among bowls. Top with Pecorino; season with pepper.

🍌Ingredients:🍌

- 3 large ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup plain yogurt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)

👉Instructions:👈

1. Preheat the oven to 350°F (180°C). Grease two 9-inch round cake pans.
2. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, use an electric mixer to cream together butter and sugar until light and fluffy.
4. Beat in eggs one at a time, then stir in mashed bananas and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, alternating with yogurt, beginning and ending with dry ingredients.
6. Stir in chopped walnuts, if using.
7. Divide the batter evenly between prepared pans.
8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
9. Let cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Zucchini Grilled Cheese

Ingredients
2 c. grated zucchini
1 large egg
1/2 c. freshly grated Parmesan
2 green onions, thinly sliced
1/4 c. cornstarch
kosher salt
Freshly ground black pepper
Vegetable oil, for cooking
2 c. shredded Cheddar

Directions
Step 1
Squeeze excess moisture out of zucchini with a clean kitchen towel. In a medium bowl, combine zucchini with egg, Parmesan, green onions and cornstarch. Season with salt and pepper.
Step 2
In large skillet, pour enough vegetable oil to layer the bottom of the pan. Scoop about 1/4 cup of the zucchini mixture onto one side of the pan and shape into a small square. Repeat to form another patty on the other side.
Step 3
Cook until lightly golden on both sides, about 4 minutes per side. Remove from heat to drain on paper towels and repeat with remaining zucchini mixture. Wipe skillet clean.
Step 4
Place two zucchini patties in the same skillet over medium heat. Top both with shredded cheese, then place two more zucchini patties on top to form two sandwiches. Cook until the cheese has melted, about 2 minutes per side.
Step 5
Repeat with remaining ingredients. Serve immediately.
