No doubt our river’s dynamic tidal flow, from outer S**o Bay deep into the protected wetlands, has something to do with this! Incoming tides usher in pure, briny seawater and sweet brackish water rushes through our site on the outgoing tides. The balance of the two gives Nonesuch oysters their unique flavor. Our Nonesuch Bélons are making a splash as well. The edulis has a round, almost scallop-sh

aped shell, and is considered one of the world’s most desirable oysters, no doubt due to its bold brininess, with what the French call a «noisette», or hazelnut, finish.
