Summer Strawberry Peach Salad.....
Recipe:1 pound fresh organic strawberries, halved / 2 large organic peaches, sliced / 1/4 cup small fresh basil leaves / 1 cup fresh orange juice / 1 tbsp honey or sugar (optional) /1 1/2 tbsp white wine vinegar / 1 tbsp extra virgin olive oil / sea salt to taste. In a small saucepan, combine orange juice, honey and vinegar. Bring to a boil, then cook for 15 minutes or until the liquid is reduced to about 1/2 cup. Remove from heat and add oil and salt to pan, stirring with a whisk. Let stand 2 minutes. Combine strawberries and peaches in a serving dish. Pour the dressing over the fruit. Sprinkle with basil. Serve immediately

A family stands before a 1,341-year-old Sequoia tree known as "Mark Twain," which was cut down in 1892 in the Pacific Northwest. The tree, towering at 331 feet (100 meters) in height, was brought down by a pair of men who worked for 13 days to saw it. SAD!

Cauliflower Piccata...:)
Recipe:1 head cauliflower, cored / olive oil, for cooking /sea salt and freshly ground black pepper/2 shallots, finely minced/1 cup sliced mushrooms /1/3 cup dry white wine /3 tablespoons fresh lemon juice/1 to 2 tablespoons capers /4 paper-thin slices lemon /1/4 cup minced fresh parsley. Preheat the oven to 425 degrees F. Place the cauliflower on a cutting board, cored side down and cut it into 1/2-inch slices, as if you were cutting a loaf of bread. Arrange the cauliflower slices on a lightly oiled baking pan and season with salt and pepper to taste. Drizzle with a little olive oil and roast until tender and nicely browned, about 30 minutes, turning once with a large metal spatula about halfway through. While the cauliflower is roasting, make the sauce. Heat 3 teaspoons of olive oil in a skillet over medium heat. Add the shallot and sauté for 3 minutes, then stir in the mushrooms. Add wine, lemon juice, and capers and cook, stirring, until the liquid reduces slightly. Just before serving, add the parsley and lemon slices.

LARGEST TREE IN THE WORLD!

The General Sherman Tree is the world's largest tree, measured by volume. It stands 275 feet (83 m) tall, and is over 36 feet (11 m) in diameter at the base. Sequoia trunks remain wide high up. Sixty feet above the base, the Sherman Tree is 17.5 feet (5.3 m) in diameter.
It is estimated to be around 2,300 to 2,700 years old.

Our Story

Solstice Green Directory is the first local publication to offer sustainability tips plus resources for green and healthy living. It publishes 4 times each year, Summer, Fall, Winter and Spring. Each edition reaches about 30,000 readers. The publication is distributed at over 500 locations along the California Central Coast. They are available in free standing displays, libraries, doctors offices, and various local businesses. The directory has a social media presence of over 13,000 people, and posts daily on Facebook and Twitter.

There are also business mixers annually, where like minded individuals can make new friends. Each event raises funds for a different local non-profit organizations. Mixers are available to the public with a small donation which is given to a local non profit. To date over $15,000 has been raised. Solstice Green Directory is now in it’s 12th year.
