Watermelon Fruit Salad
Ingredients

For the Mint Lime Dressing:

β–’Juice of 1 lime about 2 Tablespoons
β–’Zest of 1 lime
β–’1 Tablespoon honey
β–’ΒΌ cup fresh mint leaves sliced thinly
For the Salad:
β–’5 cups cubed watermelon
β–’1 Β½ cups strawberries hulled and halved
β–’1 cup blueberries
β–’1 cup blackberries
β–’1 cup raspberries
β–’fresh mint thinly sliced, for garnish
Instructions

In a small bowl, whisk to combine the lime juice, lime zest, honey, and mint. Set aside.
In a large bowl, combine the watermelon, strawberries, blueberries, blackberries and raspberries.
Pour the dressing over the fruit; toss gently to coat.
Garnish with a bit of extra mint leaves and serve.

Hashbrown Breakfast Casserole

Ingredients:

1 package (20 oz) frozen hash browns, thawed
1 pound sausage, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/4 cup finely chopped onion
6 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Directions:

Preheat oven to 350Β°F (175Β°C). Lightly grease a 9x13 inch baking dish.
Spread hash browns evenly in the bottom of the prepared dish. Top with cooked sausage, cheddar cheese, green bell pepper, red bell pepper, and onion.
In a medium bowl, whisk together eggs, milk, salt, pepper, and garlic powder. Pour the egg mixture over the hash brown layer.
Bake in preheated oven for 35-40 minutes, or until the eggs are set and the top is lightly golden.
Let the casserole cool for a few minutes before serving. Cut into squares and serve warm.
Prep Time: 15 minutes | Cooking Time: 40 minutes | Total Time: 55 minutes | Kcal: 320 kcal | Servings: 8 servings
