3 Baking hacks that will save your life! In the world of Macarons every little detail matters so I am giving you 3 tips that helped me a lot. Here are three helpful hacks to make baking Italian macarons easier and more consistent:

1. Use Pasteurized Egg Whites

• Since egg whites are crucial for the macaron’s structure, consistency is key. I use pasteurized liquid egg whites for my batter. That can help ensure consistency in every batch, especially if you’re making them often. I use fresh egg whites for the meringue with a pitch of cream of tartar.

2. Cook the Sugar Syrup Precisely

• Italian macarons require a hot sugar syrup to create a stable meringue. Invest in a reliable digital thermometer to reach the exact temperature, typically around 118°C (244°F). Pour the syrup slowly down the side of the mixing bowl with the mixer running. This prevents the egg whites from curdling and keeps the syrup evenly distributed.

3. Use an Oven Thermometer and Preheat Longer

• Macarons are sensitive to temperature, and even slight fluctuations can cause them to crack or bake unevenly. Many ovens have hot spots and may not accurately match the set temperature.

Bonus Tip: Double Up the Baking Sheets

• Placing your baking tray on top of another tray helps prevent the bottom of the macarons from getting too hot too quickly. This can help with achieving the perfect “feet” and prevents browning on the bottoms.

Here are some tips to help you to get a full macaron:

- [ ] Correct Oven Temperature: Taking time to test out your ovens inner temperature could make all the difference. Full vs hollow.

Meringue is a crucial component of making full macarons. Clean your Equipment. Ensure that all bowls and utensils are clean and free of grease. Whipping the egg whites on a low speed until they become foamy, then gradually increase the speed.Add sugar gradually, allowing it to combine thoroughly. Whip until stiff peaks form. The timing and consistency of whipping meringue is crucial to avoid hollows in macarons

- [ ] Mastering macarons takes time and practice. Don’t get discouraged by initial failures. I have had so many it’s part of the journey.
