Classic Mud Pie🍫🥛

Oreo Crust:
2 cups crushed Oreo
6 tbsp unsalted butter, melted
Brownie:
6 tbsp unsalted butter, melted
1/3cup dark brown sugar
1/3 cup granulated sugar
1/3 cup cocoa powder
1 large egg
2 tsp vanilla extract @singingdogvanilla
1/3 cup flour
¼ tsp baking powder
Pudding:
3.9 oz box Chocolate Fudge Pudding
1 ½ cup milk
Whip cream:
1-pint heavy whipping cream
¼ cup powder sugar
1 tsp vanilla extract @singingdogvanilla
Garnishes, Optional:
¼ cup crushed Oreos
Shaving from ½ a chocolate bar
Squares of chocolate for decoration
Directions:
1. Preheat oven to 350 degrees F. Grease an 8” or 9” spring form pan and line bottom with parchment paper.
2. Make crust by combining crushed Oreos and melted butter. Press crust down the bottom of the pan and slightly up the sides. Put in fridge while making brownie batter.
3. Make brownie batter by combining meted butter and sugars. Mix together. Add in cocoa powder and stir. It will be thicker.
4. Add in large egg and vanilla extract and mix. Combine flour and baking powder and stir into wet mixture with a spoon or whisk. I like using a spoon.
5. Pour brownie mix over crust and smooth out. Bake for 18-22 minutes or till a toothpick comes out clean in the center of brownie.
6. Remove from oven and let it cool for 30 minutes. Make pudding by combining pudding package and milk. Do not follow box instructions. Smooth pudding layer over brownie layer and put in the fridge for 2-4 hrs to set.
7. When ready make whip cream by whipping together heavy cream, powder sugar and vanilla extract for 2-3 minutes till soft peaks form. Spread over pudding layer.
8. Garnish with crushed oreos, chocolate shavings and chocolate squares. Slice and enjoy.

Ingredients:
Pancake:
* 1 large egg
* 2 tbsp brown sugar
* 1 cup flour
* 1 tbsp cinnamon
* 1 tbsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp cream of tartar
* 1/4 tsp salt
* 1 cup milk
* 1 tsp vanilla extract
* 2 tbsp brown butter
Icing:
* 5 tbsp powder sugar
* 2 1/2 tsp milk
* 1/2 tsp cinnamon
Garnish.
* Dusting of cinnamon sugar
* 2 cinnamon sticks
Directions:
* To make the brown butter place butter in a small pot on medium heat on the stove top. And stir for 3-5 minutes till butter simmers and browns.
* In a 4 cup measuring cup or medium bowl whisk a large egg. Add brown sugar. Add flour, cinnamon, baking powder, baking soda, cream of tartar and slat. Add milk. Add vanilla extract and brown butter. Whisk all together till combine. There will be some lumps.
* To make the pancakes, scoop 1/4-1/2 cup of batter into a medium greased skillet, on medium heat. Let pancake cook for 2 minutes on each side. Repeat till batter is finished. It makes 8 pancakes using 1/4 cup.
* In a small cup or bowl combine powder sugar, cinnamon and milk, stir together.
* Pour icing over pancakes and sprinkle with cinnamon sugar. Garnish with cinnamon sticks. Slice and enjoy!
