ARGENTINE EMPANADAS 😋
Ingredients:
For the Dough:
3 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and diced
3/4 cup warm water
For the Filling:
1 pound ground beef
1 onion, finely chopped
2 hard-boiled eggs, chopped
1/2 cup green olives, pitted and chopped
1/4 cup raisins
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper, to taste
Olive oil
For Sealing:
1 egg, beaten
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the flour and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs.
Slowly add warm water while mixing until the dough comes together. Knead the dough on a floured surface until smooth. Cover with plastic wrap and let it rest for 30 minutes.
Prepare the Filling:
In a skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Stir in the cumin, paprika, salt, and pepper. Add the chopped hard-boiled eggs, green olives, and raisins. Mix well and remove from heat. Let the filling cool.
Assemble the Empanadas:
Preheat the oven to 375°F (190°C).
Roll out the dough on a floured surface to about 1/8 inch thickness. Using a round cutter (about 4-5 inches in diameter), cut out circles.
Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Seal the edges by pressing them together with a fork or your fingers.
Bake the Empanadas:
Place the assembled empanadas on a baking sheet lined with parchment paper.
Brush the tops of the empanadas with beaten egg for a golden finish.
Bake in the preheated oven for about 20-25 minutes, or until the empanadas are golden brown.
Serve:
Allow the empanadas to cool slightly before serving. They can be enjoyed warm or at room temperature.
Empanadas are often served with chimichurri sauce, a popular Argentine condiment made with parsley, garlic, vinegar, and oil. You can serve the empanadas with chimichurri on the side for dipping.
