Rhubarb Custard Bars

Ingredients:

For the crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 cup unsalted butter, cold and cubed

For the custard filling:
- 2 cups granulated sugar
- 7 tablespoons all-purpose flour
- 1 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 4 cups rhubarb, diced

For the topping:
- 1 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Directions:

1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper, leaving an overhang on the sides.

For the crust:
2. In a medium bowl, mix together the flour and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan.
3. Bake the crust in the preheated oven for 10-15 minutes, or until lightly golden. Remove from the oven and set aside.

For the custard filling:
4. In a large bowl, whisk together the sugar, flour, and salt. Add the eggs and heavy cream, and mix until smooth and well combined. Fold in the diced rhubarb.
5. Pour the custard filling over the pre-baked crust and spread it evenly.

For the topping:
6. In a small bowl, mix together the sugar, cinnamon, and nutmeg. Sprinkle the mixture evenly over the custard filling.

7. Bake for 45-50 minutes, or until the custard is set and the top is golden brown. Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.

Peach, Basil, & Balsamic Flatbreads

Ready in just 15 minutes! Make sure you follow along all week for more peach recipes

Ingredients:
4 large naan breads
2 tbsp olive oil
1 fresh peach, thinly sliced
8 oz fresh mozzarella, sliced
1/2 cup fresh basil, chopped
1 cup balsamic vinegar
2 tbsp coconut sugar

Instructions:
On the stove, heat the balsamic & coconut sugar together over low heat. The balsamic should start to thicken over time. When it's thickened, remove from heat.
Preheat oven to 400F
Brush your flatbreads with olive oil Add sliced peaches & mozzarella
Bake for 15 minutes
Remove & top with basil & the balsamic drizzle!

Hummingbird Bread with Heavenly Cinnamon Cream Cheese Frosting
Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 large egg
- 1/4 cup canola or vegetable oil
- 1 and 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sweetened shredded coconut
- 1/2 cup diced pineapple, patted dry
- 1/2 cup chopped pecans
For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Directions:
1. Preheat the oven to 350°F (175°C). Grease a loaf pan with nonstick cooking spray.
2. In a large bowl, combine mashed bananas, sugar, brown sugar, egg, and oil until well combined. Add flour, baking powder, baking soda, and salt; mix until just incorporated. Fold in shredded coconut, diced pineapple, and chopped pecans.
3. Pour the batter into the prepared loaf pan. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Cool the bread on a wire rack.
4. For the frosting, beat together cream cheese and butter until smooth. Add powdered sugar, vanilla extract, and ground cinnamon; beat until creamy and well combined.
5. Spread the cream cheese frosting evenly over the cooled bread. Sprinkle with additional chopped pecans if desired.
6. Slice and serve. Enjoy!

Easy recipes for freezer meal prep. All you have to do is pull them out of the freezer and into the crockpot on low for 6-8 hours! Recipes are below

BBQ CHICKEN
• 1 bottle bbq sauce
• 1 tsp salt
• 1/2 tsp chili powder

BASIL PESTO CHICKEN
• 8 oz of basil pesto
• 1/4 cup balsamic vinegar
• 1 tsp salt
• 1 tsp pepper

HAWAIIAN CHICKEN
• 1 bottle teriyaki marinade
• 1 can crushed pineapple
• 1 tsp garlic powder
• 1 tsp salt
• 1/2 tsp ground ginger

Dump everything into a baggie & FREEZE. When you're ready to cook, dump it all into the crockpot on low for 6 to 8 hours. Serve on top of rice, as a taco base or plain with a your favorite veggie as a side! Enjoy

Raspberry Cinnamon Rolls with Lemon Glaze 😍🍋🍓
Ingredients:
Dough:
1 cup warm milk
2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1 teaspoon salt
2 large eggs
4 cups all-purpose flour
Filling:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 tablespoons ground cinnamon
1 1/2 cups fresh raspberries
Lemon Glaze:
1 1/2 cups powdered sugar
2-3 tablespoons fresh lemon juice
1 tablespoon lemon zest
Directions:
Prepare the dough:
In a large bowl, mix the warm milk and yeast. Let sit for 5 minutes until frothy.
Add the sugar, melted butter, salt, and eggs to the yeast mixture. Mix well.
Gradually add the flour, one cup at a time, until a soft dough forms.
Knead the dough on a floured surface for about 5-7 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
Prepare the filling:
In a small bowl, mix the softened butter, sugar, and ground cinnamon until well combined.
Assemble the rolls:
Roll the dough out into a large rectangle, about 1/4 inch thick.
Spread the cinnamon butter mixture evenly over the dough.
Sprinkle the fresh raspberries over the cinnamon butter mixture.
Roll up the dough tightly, starting from the long side, and cut into 12 equal rolls.
Bake:
Preheat the oven to 350°F (175°C). Place the rolls in a greased baking dish, cover, and let rise for another 30 minutes.
Bake for 25-30 minutes or until golden brown.
Prepare the glaze:
In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
Drizzle the lemon glaze over the warm rolls before serving.

HONEY LIME CHICKEN OVER RICE

Chicken marinade
1.5- 2 pounds chicken thighs
Juice of 1 1/2 lime
2 tablespoon honey
2 tablespoon olive oil
3 garlic minced
1/2 teaspoon salt, black pepper, 1 teaspoon each onion powder, paprika, cumin, cayenne, 1/2 teaspoon chili flakes
2 tablespoons cilantro chopped

Cooked white rice

Spinach Salad
2 cups spinach
1/2 cup tomato diced
2 tablespoons cup sliced onion
2 tablespoons olive w
1 large garlic minced
1/4 teaspoon salt
Few squeezes of lemon juice

Directions:
1. Cook some rice.
2. Mix the chicken marinade ingredients and set aside 1/4 cup if the marinade for basting the chicken
3. Marinade the chicken thighs in listed ingredients.
4. Mix the salad dressing ingredients
5. Mix spinach, tomato, onion and set aside
6. Cook and sear the chicken in 1-2 tablespoons oh olive oil for 8-10 minutes. Cook undisturbed for first
2-3 minutes and then flip. Get a nice sear on the chicken.
7. Put chicken on a cutting board to rest. Brush on the marinade and chop into slices.
8. Serve chicken over the rice with a salad.

Easy Salsa Verde Chicken Enchiladas

Full recipe:
1/2 tbsp Butter
1/2 cup yellow onion, diced
1 jalapeño, diced (remove seeds for less spice)
4-5 cloves garlic, grated Salt and pepper, to taste Cumin, to taste
3.5-4 cups salsa verde, to taste
1 cup sour cream
1/4 cup cilantro, chopped Juice from 1 lime, to taste 1 rotisserie chicken, shredded
4 oz Monterrey jack cheese, freshly shredded
4 oz white cheddar cheese, freshly shredded
8 flour tortillas (can sub corn)
1-2 avocados, cubed (optional)
Garnish: Sour cream, lime wedge, cilantro

Directions:
1. Preheat oven to 350F
2. In a large sauce pan, melt your butter and olive oil over med-low heat. Add in your onion and jalapeño, followed by your salt, pepper, and cumin. Stir and saute for 5-6 minutes. Grate in your garlic and stir.
Cook for another 30 seconds.
3. Pour in your salsa verde, sour cream, and cilantro.
Stir. Taste and adjust seasoning as needed. Remove a little more than 1 cup of sauce and set aside.
4. Add in your shredded chicken and half of your shredded cheese. Stir until combined.
5. In a 9x13" baking dish, spread a light layer of your enchilada sauce.
6. Place about 3 tablespoons of your chicken mixture in the center of your tortillas, followed by your cubed avocado, to taste. Roll and place in your baking dish.
7. Once your enchiladas are rolled, pour the remainder of your enchilada sauce over the top.
Sprinkle the rest of your cheese, cover with foil, and bake for 20-30 minutes. Remove foil and finish baking until the cheesy is bubbly (can finish under the broiler).
8. Serve with sour cream, cilantro, and a lime wedge. Enjoy!

A top request! Here are some more tricks to keep bugs + spiders away from your home (including a couple of dog-friendly options too!) have you tried any of these yet?

1. Put lavender or peppermint oil on cotton balls + place these under your bin liners to repel bugs
2. You can also place these inside your vacuum canister to make your home smell amazing
3. Place bay leaves in flour to repel pantry bugs
4. Spiders hate rosemary, so boil lemon + rosemary on your stovetop to make your home smell incredible
5. Then use the extra water as a spray on your windows to keep crawling insects away - including ants

Old Fashioned Fudge - Don't Lose This😍
2 cups sugar
4 Tablespoons Hershey’s cocoa
1 stick of salted butter
5 ounce can of Carnation Evaporated Milk
1 teaspoon of vanilla
nuts are optional
Mix sugar and cocoa in a saucepan, then add a stick of butter and the can of evaporated milk, and stir until the mixture starts boiling.
Stir continuously for 7 minutes, then remove from heat and add vanilla, then stir the mix continuously for 3 minutes, then pour into a buttered baking dish to set.
Great fudge in less than 20 minutes!

MAGIC LEMON COBBLER 🍋🍋
Ingredients:
½ cup unsalted butter
1 cup flour
1 cup granulated sugar
1 cup buttermilk
1 tsp vanilla extract
2 tbsp. lemon zest, approx. 2 lemons
1 ( 22 oz ) can of lemon pie filling
½ cup of lemon curd

Instructions

1. Preheat the oven to 350 degrees

2. In a small bowl melt the butter in the microwave.

3. Pour the butter into a 9×9 baking dish.

4. Make sure to spread the butter evenly.

5. In a large bowl add the flour, sugar, buttermilk, vanilla, and lemon zest.

6. Whisk until combined.

7. Pour the buttermilk batter evenly into the buttered baking dish.

8. Lightly spread the batter over the whole baking dish.

9. In a small bowl add the lemon pie filling and lemon cured, stir to combine.

10. Pour the lemon mixture over the buttermilk batter. Do not stir.

11. Bake for 55 to 60 minutes.

12. Remove from the oven and set to the side.

13. Garnish with powdered sugar or ice cream if desired.

Homemade🍑Peach Ice Cream🍑
Yield: 1 gallon
Ingredients
2 ½ pounds fresh peaches - peeled, pitted and chopped
1 cup white sugar
1 pint half-and-half cream
1 (14 oz.) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 tsp vanilla extract
2 cups whole milk, or as needed
Instructions
Step 1
Dice peaches and mix with sugar in a bowl. Let sit while you mix the remaining ingredients.
Step 2
Stir together the half & half, sweetened condensed milk, evaporated milk and vanilla. Then add peaches and sugar mixture. Stir until combined.
Step 3
Pour mixture in a gallon ice cream freezer container. Add in enough whole milk to fill the container to the fill line, about 2 cups.
Step 4
Follow the manufacturer's instructions to freeze the ice cream.
Cook's Notes:
Cooling the container first will help the ice cream harden faster.
*You can use this same recipe with other fruits such as; Strawberries, Blackberries, Bananas, Raspberries, Blueberries and many more

Garlic Bread Ritz Bits

Ingredients:
- 1 cup Ritz crackers, whole
- 1/2 cup Parmesan cheese, grated
- 1/4 cup unsalted butter, melted
- 1 tablespoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Directions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Mixture:
- In a medium bowl, combine the whole Ritz crackers, grated Parmesan cheese, garlic powder, dried parsley, salt, and black pepper.
3. Add the Butter:
- Drizzle the melted unsalted butter over the cracker mixture.
4. Toss to Coat:
- Gently toss the cracker mixture until all the crackers are well coated with the butter and seasonings.
5. Arrange on Baking Sheet:
- Arrange the coated crackers in a single layer on a baking sheet.
6. Bake:

Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
4 large eggs
1 1/2 cups sugar
1 cup vegetable oil
2 tsp vanilla extract
3 cups grated carrots
1 cup crushed pineapple, drained
1 cup chopped walnuts
Directions:
Preheat oven to 350°F (175°C).
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large bowl, beat eggs and sugar until creamy and light yellow. Stir in oil and vanilla.
Gradually add dry ingredients to the wet, mixing until just combined.
Fold in carrots, pineapple, and walnuts.
Pour batter into a greased and floured 9x13 inch pan.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Let cool before serving.

HASH BROWN CHICKEN CASSEROLE

Ingredients:
2 lbs frozen hash brown potatoes
2 c shredded cheddar cheese
1/2 tsp salt and pepper
1 c frozen peas and carrots
1/2 c sweet corn, canned
2 c sour cream or plain yogurt
1 can cream of chicken soup
1/3 c milk
3 c cooked, shredded roasted chicken
Corn Flake crumbs

Directions:
Heat the oven to 400 degrees
Place the potatoes in 9 by 13-inch pan. In a large bowl, mix together the remaining ingredients, except the bread crumbs. Layer the mixture over the potatoes. Sprinkle crumbs on top. Bake for 45 minutes or until top is golden brown.

Key Lime Pie Lush 🥧🍈

Enjoy the refreshing flavors of Key Lime Pie in a lush dessert format, perfect for summer gatherings or anytime you crave a citrusy treat!

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted 🧈
8 oz cream cheese, softened
1 cup powdered sugar
2 cups heavy whipping cream 🥛
1 (14 oz) can sweetened condensed milk
1/2 cup key lime juice
1 tablespoon key lime zest
1 (3.4 oz) package instant vanilla pudding mix
1 3/4 cups cold milk
Additional lime zest for garnish
Directions:

Preheat oven to 350°F (175°C). Combine graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Press mixture into the bottom of a 9x13 inch baking dish. Bake for 8-10 minutes, until lightly browned. Let cool completely.

In a large bowl, beat cream cheese and powdered sugar until smooth.

In a separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into the cream cheese mixture. Spread evenly over cooled crust.

In another bowl, whisk together sweetened condensed milk, key lime juice, and key lime zest until well combined. Pour over the cream cheese layer and spread evenly.

In a large bowl, whisk together instant vanilla pudding mix and cold milk until thickened. Spread over the key lime layer.

Top with remaining whipped cream and garnish with additional lime zest. Chill for at least 2 hours before serving to allow flavors to meld.

💛😋 Heavenly Easy Lemon Glaze Cake

Ingredients:

2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
3 large eggs
2 tbsp lemon zest
1 tbsp lemon juice
1 tsp vanilla extract
1 cup buttermilk
Lemon Glaze:
1 1/2 cups powdered sugar
3 tbsp lemon juice
1 tbsp lemon zest

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs, one at a time.
Stir in the lemon zest, lemon juice, and vanilla extract.
Gradually mix in the dry ingredients alternately with buttermilk, starting and ending with dry ingredients.
Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the glaze:
In a small bowl, combine the powdered sugar, lemon juice, and lemon zest until smooth.
Drizzle the glaze over the cooled cake. Allow it to set before slicing.
