Peach, Basil, & Balsamic Flatbreads

Ingredients:
4 large naan breads
2 tbsp olive oil
1 fresh peach, thinly sliced
8 oz fresh mozzarella, sliced
1/2 cup fresh basil, chopped
1 cup balsamic vinegar
2 tbsp coconut sugar
Instructions:
On the stove, heat the balsamic & coconut sugar together over low heat. The balsamic should start to thicken over time. When it's thickened, remove from heat.
Preheat oven to 400F
Brush your flatbreads with olive oil Add sliced peaches & mozzarella
Bake for 15 minutes
Remove & top with basil & the balsamic drizzle!

Easy recipes for freezer meal prep. All you have to do is pull them out of the freezer and into the crockpot on low for 6-8 hours! Recipes are below
BBQ CHICKEN
• 1 bottle bbq sauce
• 1 tsp salt
• 1/2 tsp chili powder
BASIL PESTO CHICKEN
• 8 oz of basil pesto
• 1/4 cup balsamic vinegar
• 1 tsp salt
• 1 tsp pepper
HAWAIIAN CHICKEN
• 1 bottle teriyaki marinade
• 1 can crushed pineapple
• 1 tsp garlic powder
• 1 tsp salt
• 1/2 tsp ground ginger
Dump everything into a baggie & FREEZE. When you're ready to cook, dump it all into the crockpot on low for 6 to 8 hours. Serve on top of rice, as a taco base or plain with a your favorite veggie as a side! Enjoy
HONEY LIME CHICKEN OVER RICE
Chicken marinade
1.5- 2 pounds chicken thighs
Juice of 1 1/2 lime
2 tablespoon honey
2 tablespoon olive oil
3 garlic minced
1/2 teaspoon salt, black pepper, 1 teaspoon each onion powder, paprika, cumin, cayenne, 1/2 teaspoon chili flakes
2 tablespoons cilantro chopped
Cooked white rice
Spinach Salad
2 cups spinach
1/2 cup tomato diced
2 tablespoons cup sliced onion
2 tablespoons olive w
1 large garlic minced
1/4 teaspoon salt
Few squeezes of lemon juice
Directions:
1. Cook some rice.
2. Mix the chicken marinade ingredients and set aside 1/4 cup if the marinade for basting the chicken
3. Marinade the chicken thighs in listed ingredients.
4. Mix the salad dressing ingredients
5. Mix spinach, tomato, onion and set aside
6. Cook and sear the chicken in 1-2 tablespoons oh olive oil for 8-10 minutes. Cook undisturbed for first
2-3 minutes and then flip. Get a nice sear on the chicken.
7. Put chicken on a cutting board to rest. Brush on the marinade and chop into slices.
8. Serve chicken over the rice with a salad.
Easy Salsa Verde Chicken Enchiladas
Full recipe:
1/2 tbsp Butter
1/2 cup yellow onion, diced
1 jalapeño, diced (remove seeds for less spice)
4-5 cloves garlic, grated Salt and pepper, to taste Cumin, to taste
3.5-4 cups salsa verde, to taste
1 cup sour cream
1/4 cup cilantro, chopped Juice from 1 lime, to taste 1 rotisserie chicken, shredded
4 oz Monterrey jack cheese, freshly shredded
4 oz white cheddar cheese, freshly shredded
8 flour tortillas (can sub corn)
1-2 avocados, cubed (optional)
Garnish: Sour cream, lime wedge, cilantro
Directions:
1. Preheat oven to 350F
2. In a large sauce pan, melt your butter and olive oil over med-low heat. Add in your onion and jalapeño, followed by your salt, pepper, and cumin. Stir and saute for 5-6 minutes. Grate in your garlic and stir.
Cook for another 30 seconds.
3. Pour in your salsa verde, sour cream, and cilantro.
Stir. Taste and adjust seasoning as needed. Remove a little more than 1 cup of sauce and set aside.
4. Add in your shredded chicken and half of your shredded cheese. Stir until combined.
5. In a 9x13" baking dish, spread a light layer of your enchilada sauce.
6. Place about 3 tablespoons of your chicken mixture in the center of your tortillas, followed by your cubed avocado, to taste. Roll and place in your baking dish.
7. Once your enchiladas are rolled, pour the remainder of your enchilada sauce over the top.
Sprinkle the rest of your cheese, cover with foil, and bake for 20-30 minutes. Remove foil and finish baking until the cheesy is bubbly (can finish under the broiler).
8. Serve with sour cream, cilantro, and a lime wedge. Enjoy!

PUMPKIN CHEESE BALL
Ingredients:
(2) 8oz softened cream cheese
1 cup shredded cheddar cheese
1/4 cup bacon bits
1 tsp garlic powder, 1/2 tsp onion powder
1/2 tsp pepper
1 tsp red pepper flakes
1/2 tsp paprika
Directions:
Mix all ingredients in a bowl.
Form a ball with your mixture, wrap it in plastic wrap, and loop bakers twine (or rubber bands) around the ball to make a pumpkin shape. Refrigerate for at least an hour.
Unwrap and place a pepper stem on the top!
