Filipino pork adobo: once again Porkchop and Bacon make the best meal—all that free range living made a satiating offering. These were just chunks and trimmings thrown in a plastic bag in the freezer. It tastes and smells amazing!🤩😋😋😋😋

Ecuadorian fritada like my mom used to make in three hours. The aromas in the kitchen are amazing—no pork should ever have a bad smell, even when aged.

A bully all her life, Pork Chop redeemed herself on the plate.

Having the right kit, and knowing how to use it, is the way to get things done. Last half of Bacon and Pork Chop is done: bacon curing for smoking, chops, Boston butt, picnic shoulder, ribs, fat for rendering, hams in salt to be hanged for one to two years for prosciutto and jamon Serrano, coppa resting to get a day to cure tomorrow, to be strung up and aged for a month, into capicola. Done, done, and done!

When it comes to pork, the tell is the fat: when it’s clean and tasty, free of any funk, you’ve done an excellent job of turning out a great product.

This is a taste test trim chop from Pork Chop. Her antibiotic and chemical free life, on land that let her root and run free, with a Kobe beef style head and shoulder rub and massage, turned out a clean and great tasting meat.

She will continue to be respected with finely prepared meals this winter. I might add that, like with wild game, a free range, well non-corporate farming contaminated cut of meat will actually fill you up and satisfy you much more than a corporate farmer animal—it’s a lot of work from field to table, but well worth the effort: for our ancestors, it was all they had! 🐖🐖🐖🥓🥓❤️❤️❤️❤️
