(recipe belowš) I grew up in my parentsā Greek restaurant, and when I was really hungry after a long school day, Iād head back to the fryer and make french fries tossed with greek seasoning and topped with olives, feta, oregano and tzatziki. These Greek-style potato chips are inspired by that childhood memory, and theyāre made extra crispy in my Basket Air Fryer! Comment āRECIPEā and weāll send the recipe straight to your DMs š or bookmark the recipe below! š Homemade Greek-Style Potato Chips Serves 1-2 2 russet potatoes 1 tbsp olive oil 3/4 tsp garlic powder 3/4 tsp onion powder 2 tsp dried oregano 1 tsp salt pinch of pepper Ā¼ - Ā½ crumbled feta cheese lemon zest (optional) Slice the potatoes super thin with a knife or on a mandolin if you have one - about 1/16 inch. In a large bowl add all the potato slices and fill with cold water, even adding some ice cubes to keep the water cold. Let soak for 30 minutes. Drain the potatoes and pat them as dry as you can. Add the dried potatoes to a dry bowl and season with olive oil. Toss to coat, ensuring all of the slices are seasoned. Set the air fryer to 350F. Cook in batches and make sure you only have about one layer at a time of potatoes in the bottom of the basket, itās ok if the potatoes are overlapping. Air fry for 12-15 minutes, flipping halfway through. Repeat with potatoes until theyāre all cooked. Once all chips are cooked, season with garlic powder, onion powder, dried oregano, salt, pepper and toss gently. Top with crumbled feta and lemon zest (if desired). Welcome back to Episode 27 of All Things Greek. Today we are making Maroulosalata (Greek Lettuce Salad). This is a salad Iāve grown up on. My mom would always make this salad, still does to this day, and itās such a popular Greek dish thatās super simple to make (but tastes like a ton of effort went into it). This salad only has 5 ingredients - CAN YOU BELIEVE IT! It takes under 10 minutes to put together. All you have to do is chop, toss and combine with a lemon olive oil ādressingā. This seriously has got to be one of the easiest (but flavorful) salads you can make! SHEāS easy, quick, fresh and something you need to try IMMEDIATELY! Hereās all you need! 1 Ā½ heads romaine lettuce 5 sprigs green onion 1/3 cup fresh dill chopped 2 tbsp. olive oil 2 tbsp. vinegar (or substitute with lemon juice) 1 tsp. salt Ā½ tsp. black pepper Instructions: 1. Wash the romaine lettuce and chop to your desired size. 2. Transfer to a large bowl. 3. Thinly slice the green onion and add it to the bowl along with the freshly chopped dill. 4. Add the olive oil, vinegar, salt, and black pepper. 5. Mix to combine, and adjust seasoning to taste. 6. Serve this delicious salad as a side dish to any meal!!

So weāre bring it back for round 2, but this time with a non-traditional chicken and feta filling. Arayes are a classic Lebanese & Syrian street food. (Thereās also an Egyptian version called Hawawshi.) Theyāre fried or grilled meat-stuffed pita that is popular in Middle Eastern cuisine. They are usually stuffed with minced meat like beef or lamb, along with a combination of aromatic seasonings and spices. Think of them as a better, Middle Eastern version of a pizza pocket. These are so tasty and your whole family will love them (even the picky eaters). Theyāre incredible easy to make, perfect for a quick dinner and a party friendly! This flattens the chicken and allows for an even cook as well as the most crispy surface and edges. If you ask any chef about frying anything, theyāll tell you that itās imperative to season with salt after frying, while itās hot. Chef Jet Tilla told me himself and we trust the source. Thatās why I cook with when enhancing the flavors of my recipes. Remember, salt makes a dish pop! One of the things I love most about this recipe is that you can customize it! I make mine with rice, vegetables and a creamy Greek yogurt sauce, because a good sauce makes EVERYTHING better! Once hot, reduce heat slightly and fry 2 chicken filets at a time for 3-4 mins per side, until golden brown and cooked through to 165F in the center. Welcome back to Episode 29 of All Things Greek! My new Greek series where I share recipes from my childhood and summers spent in Greece as a kid. Today we are making Banana-Nutella Crepes. The iconic street food dessert of Greece (at least where I am from). I made this recipe a bit smaller so everyone can enjoy it because the ones back home are HUGE! So, break out your skillet because you are going to love these Nutella crepes as much as I do. A few recipes why I love this easy, delicious recipe! 1. Can be made sweet OR savoury! 2. Customizable! Not feeling Nutella, add peanut butter! Not feeling sweet, add cheese! 3. Quick ā Between prep and cook time, you can whip up this Nutella crepe recipe in only 25 minutes. Hereās everything you need to be teleported back to Greece for the last hints of summer! For the crepe batter: 2 eggs, room temperature 2 tbsp butter, melted and slightly cooled 1 cup all purpose flour 1/4 tsp salt 1/2 tbsp sugar 1 cup whole milk Toppings: 4-5 bananas (about 1/3 banana sliced, per crepe) 1 cup or other chocolate spread (1-2 per crepe) 6-8 digestif biscuit cookies (around half per crepe) INSTRUCTIONS: 1. Whisk the eggs, melted butter, flour, salt and sugar to combine. Then, gradually whisk in the milk until all of the ingredients are well mixed together. Let the batter sit for 5 minutes.ļæ½ 2. To a 8-10 inch nonstick skillet or crepe pan, melt Ā½-1 tablespoon of butter over medium-low heat, make sure it covers the bottom of the entire pan. Once the butter is melted, add a 1/4-1/3 cup of the batter, enough to evenly coat the pan, rotate the pan to help coat the bottom with the batter. Welcome Back to Episode 32!!!! Of All Things Greek and Episode 2 of Ellinikes Soupes (Greek Soups!). Today we are making Youvarlakia Avgolemono (Lemony Greek Meatball Soup). Itās a traditional Greek dish consisting of meatballs made with ground meat (usually Lamb or Beef but weāre using Chicken), rice, and seasonings that are cooked in a pot of broth or water. I grew up eating this meatball soup and itās such a comforting, nostalgic dish for the fall season. Avgolemono has quite a history that dates all the way back to ancient times in Greece. The name literally translates to āegg-lemonā and the soup is made with just that ā eggs, lemon, and broth. Why Youāll Love Meatball Soup! Welcome Back to Episode 34 of All things Greek! Today we are making Greek Meat Sauce the recipe is more traditionally known as Makaronia Me Kima and it is my younger brotherās favourite! TO THIS DAY. This is a comforting sauce that I grew up with - but now I enjoy it with Chichen or Turkey. It smells so good when itās cooking, and it tastes even better over a bowl of spaghetti noodles. Comment āRECIPEā to get the recipe sent straight to your DMās or BOOKMARK the recipe below š Air Fryer Shrimp Bowls (Serves 2-3) Bowls: 3/4 cup uncooked basmati rice 1-2 avocado, sliced 1 mango, sliced or diced 1 cup baby tomatoes, halved Shrimp: 350-400 g defrosted shrimp, peeled and deveined 1/2 cup panko breadcrumbs 1/4 cup flour 1 tsp garlic powder 1 tsp onion powder 1 tsp salt 1/2 tsp pepper 1/2 tsp cumin 1/2 tsp paprika 1 egg Cilantro Yogurt Sauce: juice of one lemon 1/4 cup olive oil 1/4 cup plain Greek yogurt 2 tbsp minced fresh cilantro 3 garlic cloves, pressed 1 1/2 tsp salt 1/2 tsp pepper Cook the rice according to package instructions and set aside. Make the cilantro sauce: whisk together the lemon juice, olive oil, greek yogurt, minced fresh cilantro, pressed garlic, salt and pepper. Prepare the shrimp: In one low bowl mix together breadcrumbs, garlic powder, onion powder, salt, pepper cumin and paprika. In another bowl whisk the egg. In one more bowl add the flour. Dip shrimp in flour and shake off any excess. Then dunk the shrimp in egg wash and allow the excess to drip off. Finally, dunk into the breadcrumbs mixture, pressing gently to adhere the breadcrumbs to the shrimp and set aside on a plate. Preheat air fryer to 400F. Transfer a few shrimp at a time to the air fryer basket and spray the shrimp with cooking spray. Air fry for 4 minutes, flip and air fry for 4 more minutes or until shrimp are cooked through and crispy. Assemble the bowls by adding rice, mango, tomatoes, sliced avocado and cooked shrimp to bowls. Then, drizzle the sauce over the bowls and enjoy!

Greek Baked Lemon Chicken Meatballs & Potatoes (serves 4) Potatoes: 4 yukon gold potatoes, cut into wedges & halved (~1 1/2 ā 2 inch pieces) 5 garlic cloves, smashed juice of 1 1/2 lemons 1/4 cup olive oil 2 tsp yellow mustard 1 tsp salt 1/2 tsp pepper 2 1/4 tsp dried oregano 1 1/4 tsp garlic powder 1/2 cup water Meatballs: 1 lb ground chicken 1 small onion, grated 3 garlic cloves, pressed 1 tsp salt 1/2 tsp pepper 1 tsp dried oregano 1 tsp onion powder 1/2 tsp garlic powder zest from 1 lemon 1/2 cup breadcrumbs 1 egg 1 tbsp yellow mustard 1/4 cup fresh minced mint Serving: * 1 cup cubed feta cheese * 1 cup halved cherry tomatoes * fresh mint INSTRUCTIONS: Preheat the oven to 375F. To a large baking dish add the potatoes and garlic. Make the lemon sauce by whisking together the lemon juice, olive oil, mustard, salt, pepper, dried oregano & garlic powder. Add half of the sauce to the baking dish, toss with the potatoes and then add 1/2 cup water to the baking dish too. Bake for 40 mins. Mix together all the meatball ingredients in a bowl, then scoop about 2 tbsp at a time and form into meatballs. After 40 minutes, take the potatoes out of the oven and nestle the meatballs in between the potatoes. Drizzle the other half of the lemon sauce over the meatballs. Sprinkle the 1 cup of cubed feta throughout the baking dish. Bake for 18-20 more minutes or until the meatballs are cooked through to 165F. Garnish with tomatoes & mint. Comment āRECIPEā and weāll send the recipe straight to your DMs š or bookmark the recipe below! š Homemade Greek-Style Potato Chips Serves 1-2 2 russet potatoes 1 tbsp olive oil 3/4 tsp garlic powder 3/4 tsp onion powder 2 tsp dried oregano 1 tsp salt pinch of pepper Ā¼ - Ā½ crumbled feta cheese lemon zest (optional) Slice the potatoes super thin with a knife or on a mandolin if you have one - about 1/16 inch. In a large bowl add all the potato slices and fill with cold water, even adding some ice cubes to keep the water cold. Let soak for 30 minutes. Drain the potatoes and pat them as dry as you can. Add the dried potatoes to a dry bowl and season with olive oil. Toss to coat, ensuring all of the slices are seasoned. Set the air fryer to 350F. Cook in batches and make sure you only have about one layer at a time of potatoes in the bottom of the basket, itās ok if the potatoes are overlapping. Air fry for 12-15 minutes, flipping halfway through. Repeat with potatoes until theyāre all cooked. Once all chips are cooked, season with garlic powder, onion powder, dried oregano, salt, pepper and toss gently. Top with crumbled feta and lemon zest (if desired). Welcome back to Episode 27 of All Things Greek. Today we are making Maroulosalata (Greek Lettuce Salad). This is a salad Iāve grown up on. My mom would always make this salad, still does to this day, and itās such a popular Greek dish thatās super simple to make (but tastes like a ton of effort went into it). This salad only has 5 ingredients - CAN YOU BELIEVE IT! It takes under 10 minutes to put together. All you have to do is chop, toss and combine with a lemon olive oil ādressingā. This seriously has got to be one of the easiest (but flavorful) salads you can make! SHEāS easy, quick, fresh and something you need to try IMMEDIATELY! Hereās all you need! 1 Ā½ heads romaine lettuce 5 sprigs green onion 1/3 cup fresh dill chopped 2 tbsp. olive oil 2 tbsp. vinegar (or substitute with lemon juice) 1 tsp. salt Ā½ tsp. black pepper Instructions: 1. Wash the romaine lettuce and chop to your desired size. 2. Transfer to a large bowl. 3. Thinly slice the green onion and add it to the bowl along with the freshly chopped dill. 4. Add the olive oil, vinegar, salt, and black pepper. 5. Mix to combine, and adjust seasoning to taste. 6. The iconic street food dessert of Greece (at least where I am from). I made this recipe a bit smaller so everyone can enjoy it because the ones back home are HUGE! So, break out your skillet because you are going to love these Nutella crepes as much as I do. A few recipes why I love this easy, delicious recipe! 1. Can be made sweet OR savoury! 2. Customizable! Not feeling Nutella, add peanut butter! Not feeling sweet, add cheese! 3. Quick ā Between prep and cook time, you can whip up this Nutella crepe recipe in only 25 minutes. Hereās everything you need to be teleported back to Greece for the last hints of summer! For the crepe batter: 2 eggs, room temperature 2 tbsp butter, melted and slightly cooled 1 cup all purpose flour 1/4 tsp salt 1/2 tbsp sugar 1 cup whole milk Toppings: 4-5 bananas (about 1/3 banana sliced, per crepe) 1 cup @nutella or other chocolate spread (1-2 per crepe) 6-8 digestif biscuit cookies (around half per crepe) INSTRUCTIONS: 1. Whisk the eggs, melted butter, flour, salt and sugar to combine. Then, gradually whisk in the milk until all of the ingredients are well mixed together. Let the batter sit for 5 minutes.ļæ½ 2. To a 8-10 inch nonstick skillet or crepe pan, melt Ā½-1 tablespoon of butter over medium-low heat, make sure it covers the bottom of the entire pan. Welcome Back to Episode 32!!!! Of All Things Greek and Episode 2 of Ellinikes Soupes (Greek Soups!). Today we are making Youvarlakia Avgolemono (Lemony Greek Meatball Soup). Itās a traditional Greek dish consisting of meatballs made with ground meat (usually Lamb or Beef but weāre using Chicken), rice, and seasonings that are cooked in a pot of broth or water. I used tilapia for this one-pan recipe and itās very important to me to use tilapia which is certified by @bapcertification. Itās important for me since I started reintroducing meat and fish into my diet, to know that the protein Iām consuming is farmed with best practices that I can feel good about. Make the cilantro sauce: whisk together the lemon juice, olive oil, greek yogurt, minced fresh cilantro, pressed garlic, salt and pepper. Prepare the shrimp: In one low bowl mix together breadcrumbs, garlic powder, onion powder, salt, pepper cumin and paprika. In another bowl whisk the egg. In one more bowl add the flour. Dip shrimp in flour and shake off any excess. Then dunk the shrimp in egg wash and allow the excess to drip off. Finally, dunk into the breadcrumbs mixture, pressing gently to adhere the breadcrumbs to the shrimp and set aside on a plate. Preheat air fryer to 400F. Transfer a few shrimp at a time to the air fryer basket and spray the shrimp with cooking spray.
