Pineapple Peach Smoothie
2 handfuls of spinach
1 handful of spring mix
2 cups of water
1 1/2 cups of peaches
1 cup of pineapples
2 Tbsp flaxseeds
1/2 Tbsp chia seeds
1 scoop of protein powder (optional)
Spinach Pineapple Smoothie 🍍
Ingredients:
2 handfuls of spinach
1 cup pineapple
2 cups peaches
2 bananas
2 cups of water
2 Tbsp flaxseeds
1/2 Tbsp chia seeds
Granola
220g rolled oats
170g Maple syrup
45g Avocado oil
zest of 1 orange
1 tsp vanilla extract
½ tsp cinnamon
pinch salt
30g raisins
70g dried cranberries
80g raisins
Directions:
1. Preheat the oven to 350F. Line a baking tray with parchment paper, and grease an 8-inch square pan and line it with parchment paper so that it comes up the sides of the pan.
2. Spread the oats onto the baking tray and toast for about 12 minutes, stirring once, until lightly browned.
3. While the grains are toasting, heat the honey, coconut oil, orange zest, vanilla, cinnamon and salt until the coconut oil has melted. Place the sunflower seeds, dried cranberries and raisins in a large mixing bowl.
4. Pour the toasted grains into the bowls with the seeds and fruit and add the warm Maple syrup mixture. Stir this well to fully coat everything and scrape this into the prepared pan. Bake for about 15 minutes.
Oatmeal Banana Pancakes 🥞🍌
Ingredients:
1 cup oats
1/2 cup oatmilk
2 eggs
1 banana
2 Tbsp maple syrup
1 tsp baking powder
Pinch of salt
Directions:
Place the oats in the blender and pulse until the texture of the oats becomes similar to flour.
Add oat milk, eggs, banana, Maple syrup, baking powder, and salt to the blender and blend for about 1 minute until everything is well combined. Heat the skillet over medium low. Grease the skillet with butter or oil, and then pour the pancake mixture and cook for 2-3 minutes or until you see bubbles start to form. Flip, and cook for another minute or so.
Almond Thumbprint Cookies
Ingredients:
220g Almond Flour
1/2 tsp cinnamon
1/8 tsp sea salt
1 egg
80g pure Maple syrup
1/4 cup avocado oil
2 Tbsp Oatmilk
1 tsp vanilla extract
1/4 cup fruit preserves
Directions:
Preheat the oven to 350° F.
In a large bowl, whisk together the dry ingredients. In a small bowl, whisk together the egg, maple syrup, avocado oil, oat milk and vanilla extract until smooth.
Pour the wet ingredients over the dry ingredients and stir until smooth. Roll out 30 g balls of dough onto a baking sheet lined with parchment paper. Using a damp finger, make an indentation in the center of each cookie.
Fill each cookie with about a quarter of a teaspoon of the fruit preserves. Bake the cookies for about 15 minutes. When cookies are cooled, drizzle some dark chocolate on top and enjoy!
Healthy Blueberry Scones 🫐
Ingredients:
180g Oat Flour
1 1/2 tsp baking powder
1/2 tsp salt
28g butter, cold and cubed
120g Plain nonfat Greek yogurt
45ml Pure Maple syrup
3 tsp + 3 tsp Oat milk
1 tsp vanilla extract
80g fresh Blueberries
Instructions:
Preheat the oven to 425°F, and line a baking sheet with a silicone baking mat or parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the butter, with the back of a fork until the mixture resembles fine crumbs. Make a well in the center, and add in the Greek yogurt, maple syrup, 3 tablespoons of milk, and vanilla. Stir until just incorporated. Gently fold in the blueberries.
Using a spatula, shape the dough into a ¾” tall circle on the prepared baking sheet. Brush with the remaining milk. Slice the circle into 8 triangular segments with a sharp knife (but don’t separate them!). Bake at 425°F for 18-22 minutes, or until the tops are golden. Cool on the pan for 5 minutes before transferring to a wire rack.
Sometimes we like to bake treats without all the work. So here's a recipe for quick and easy Bunny Cinnamon Rolls:
Preheat the oven to 400 degrees Fahrenheit. Unroll three of the rolls and cut the dough into 10 pieces shaped like bunny ears. Place the ears on five of the cinnamon rolls so that they resemble bunnies. Flatten them a little. Bake for 15 to 20 minutes or until golden brown and puffy. Pour the icing that is included in the cinnamon roll dough package over the rolls while they are still hot. You can add food coloring if you wish. Let cool, and enjoy!
