Yummy

Crispy Potato Rolls

Ingredients:
4 large potatoes, peeled and grated
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
2 eggs, beaten
Vegetable oil, for frying
Directions:

Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

In a large bowl, combine grated potatoes, breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Add beaten eggs to the potato mixture and stir until well combined.

Heat vegetable oil in a large skillet over medium-high heat.

Take about 2 tablespoons of the potato mixture and form into small rolls or patties.

Carefully place the potato rolls into the hot oil and fry in batches for 3-4 minutes per side, or until they are golden brown and crispy.

Remove from the oil using a slotted spoon and place on a plate lined with paper towels to drain excess oil.

Serve hot with your favorite dipping sauce, such as ketchup, aioli, or sour cream with chives.
