Laab Squid Tentacles

-Squid tentacles 500 g
-1 tablespoon of roasted rice
-1/2 tbsp of cayenne pepper
-2 tablespoons of fish sauce
-3 tablespoons of lime juice
-1/2 tbsp of granulated sugar
-4-5 Thai shallots, thinly sliced
-2-3 stalks of culantro, thinly sliced
-Mint leaf, put as desired

1. Blanch the squid tentacles in very boiling water, then set aside
2. Mix fish sauce, lime juice, granulated sugar, roasted rice and cayenne pepper in the bowl.
3. Put the blanched squid tentacles into the Laab sauce in the bowl, mix well
4. Add Thai shallots and culantro to the bowl, mix lightly.
5. Put them to a plate and decorate with mint leaf.
