- Banana leaves or aluminum foil (for wrapping)
Instructions:
1. Prepare the Okpa Batter:
- In a large mixing bowl, add the Bambara nut flour.
- Gradually add warm water while stirring continuously to form a smooth batter.
- Add palm oil to the batter, mixing well until it is fully incorporated and the batter takes on a bright yellow color.
- Crumble the seasoning cubes into the batter and add salt to taste. Mix thoroughly to ensure even distribution.
2. Prepare the Wrapping:
- If using banana leaves, rinse them thoroughly and pass them over low heat to make them pliable. If using aluminum foil, cut it into rectangular pieces.
- Scoop portions of the batter onto the banana leaves or foil and wrap securely to prevent leakage.
3. Steam the Okpa:
- Place a steaming rack or a layer of banana leaves at the bottom of a large pot.
- Arrange the wrapped Okpa on the rack or leaves.
- Add enough water to the pot to create steam (without submerging the Okpa).
- Cover the pot and steam on medium heat for about 45 minutes to 1 hour, or until the Okpa is firm and cooked through.
- Once cooked, remove the Okpa from the pot and allow it to cool slightly.

Calling all food lovers! Today, I had the pleasure of indulging in the rich and vibrant flavors of Ghanaian cuisine. From the mouthwatering jollof rice to the succulent grilled tilapia, every dish was a true delight for the taste buds.
The aroma of spices filled the air as I savored the tender and juicy kelewele - a dish made from fried plantains seasoned with ginger, garlic, and chili. And let's not forget about the famous waakye, a traditional dish of rice and beans cooked with a blend of unique ingredients that give it a tantalizing taste.
But the ultimate highlight was undoubtedly the banku with grilled fish and pepper sauce. The soft and doughy banku paired perfectly with the perfectly grilled fish, creating a symphony of flavors that left me craving for more.
Ghanaian cuisine is a true reflection of the country's rich cultural heritage, and I am grateful to have experienced it firsthand. If you ever get the chance, make sure to try these mouthwatering dishes!
Classic Glazed Donuts Recipe
Ingredients:
- For the donuts:
- 2 1/4 teaspoons active dry yeast
- 1/4 cup warm water (110ยฐF)
- 1 cup warm milk (110ยฐF)
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 3 1/2 cups all-purpose flour (plus extra for rolling)
- Vegetable oil for frying
- For the glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Dough:
- In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the warm milk, sugar, salt, melted butter, and egg. Add the yeast mixture and mix well.
- Gradually add the flour, one cup at a time, mixing until the dough comes together. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

- Use a donut cutter to cut out donuts and donut holes. Re-roll the scraps and cut out more donuts.
3. Fry the Donuts:
- Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350ยฐF (175ยฐC).
- Carefully place a few donuts in the hot oil, being careful not to overcrowd the pot. Fry each side for about 1-2 minutes or until golden brown.
- Remove the donuts with a slotted spoon and drain on paper towels.
4. Prepare the Glaze:
- In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Dip each warm donut into the glaze, ensuring itโs fully coated, and place on a wire rack to let the excess glaze drip off.
- Let the glazed donuts sit for a few minutes until the glaze sets.
