Have you ever? I hadn’t until last week.
I strolled to Rue des Saints Peres via a sun r and r break in the Jardin des Tuileries.
And what a treat awaited as I set eyes on the Debauve et Gallais chocolat shop. Founded by Sulpice Debauve in 1800 the Gallais part followed when Antoine Gallais joined Debauve in 1823. As Royal Warrant holders they supplied Napoleon, Louis XVIII, Charles X and Louis Philippe. Oh and far more important, well to me, Marie Antoinette!
It’s seriously chic. It’s very ‘grown up’. It was on my list to discover with all its history and heritage and my fascination with Marie Antoinette’s life!

Just mebbe … if I pass my course … and I’m telling you now that’s gonna take a lot of brain fuel (not aided by cracking headaches jumping out to say ‘hiya’ from the concussion episode) and I win the premium bonds … ✈️🥾🌎☀️👙.

Yasssss! This week I was finally up front and personal with the ONLY flodeboller which will make your tastebuds go loop the loop, send glitter to your soul and just oh flippin’ heck well just make you soar to the most divine of places.
I bought 4 … swiftly down to 3 … will try and contain myself and do a reel before all are gone ✅.
Any guesses who the chocolate maker is? He’s a pioneer, he’s a chocolatier I truly admire, he roar’s with a passion for what he believes in and has heart of total gold.
swipe right for the marzipan bars. I’ve been treated to one and promise to pop a reel up before I consume it … is promise a dangerous commitment 😉.
Paris … a heart which pours fairy dust into me each time I go there. Each time I discover a new pocket of inspiration … by just getting lost between destinations.
Last year one of my destinations was chocolat chaud at the amazing bean to bar team .
Tomorrow I’m off for a fix … any ideas where I may head too?

A little smidgeon of creativity which I’ve realised I haven’t shared with you yet!l which I conjured up in the summer.
I adore walnuts especially slightly toasted in a pan. So …
Toasted dipped walnuts in dark chocolat (I can’t remember whose I used but it was sublime), a sprinkle of Maldon sea salt (once an Essex girl always an Essex girl 😉) and a fleck of gold leaf.
A little nod to how I started my chocolat business back in 2007 👀 with crystallised flora dipped in chocolat and decorated in gold leaf.
You will still find me dipping in and out of stories.
Let’s hope the sun shines at some stage soon this month 🙏.

These chocolate dipped rose petals were the very very beginning. The pansies and mint leaves followed. Quite literally they appeared as a finished product in my mind and it took me 3 months of experimentation and a few tears of frustration!
The moisture of the petals caused such challenges with the tempered chocolat. I fell in love with each one. Oh and in case you were wondering I had to source organic rose petals to make sure they were safe to consume. In 2007 it was a massive challenge. When my ma wasn’t looking I acquired a few of her wild rose petals 🫢.

How I started out in chocolate … crystallising flora (rose petals and pansies) and mint leaves, then dipping them in Valrhona Abinao and finally a speck of gold leaf. All back in 2007.
From time to time I feel homesick for them. Who knows maybe I will again though I need to remind myself how to temper 🫢. It’s so challenging when you do it on a marble slab.
They were unique - certainly at the time. The petals made it to Middle Eastern royalty, celebs, tv, radio et al. My challenge … their fragility and the time it took

This is one of thr new fermentation centres in Nan Province which is being supported from experts Nuttaya and Paniti Junhasavasdikvl, and Dr Tik and Dr Tiyayon from - the soon to be launched - Innovative Centre for Research and Development of Sustainable Cocoa. Part of Thailand’s leading university - Chulalongkorn.

Have you ever … I hadn’t until my BKK super star buddy, Aitch, and I hopped on our favourite mode of travel - Grab mopeds - and dropped by the talented duo Nuttaya and Paniti’s Kad Kokoa.

There is nothing more restorative than returning to the essence, the beating heart, the soul … of what magics itself into chocolate - Cocoa.
My adventure was with Nuttaya and Paniti, Founders of the award-winning Kad Kokoa, BKK.
Our trip - to visit the ISTC which is part of the Chula University and a joint project with Kad Kokoa and the University. It’s mission is to educate cocoa farmers and university students about the importance of good farming, sustainability and understanding the importance of fermentation to produce superb quality cacao beans.

Have you tried ricotta and chocolat before? I hadn’t but after this little gem it’s a combo I’m hot in pursuit of. The gem delivers on textures from the crunchy biscuit lining the thin dark chocolat putter and then a most fascinating end note - almost savoury but not. The centre is a blend of ricotta, orange peel and candied cherries. I’m not totally sure I picked up the notes of the candied cherries but it was still seriously good.
