Mayfield 🏃‍♀️🏔

In honour of Maxine Mayfield, this cocktail draws inspiration from the final scene from episode 4 of the newest season of Stranger Things, using colours from the iconic shot of her rising into the air. Now we’ve had a week to process the finale, it seems like a few of us could use something to brighten the mood that ending may have left us in! 😅

Cocktail Specs:

50ml London Dry Gin
12.5ml Blue Curaçao
20ml Orange Juice
12.5ml lemon juice
12.5ml sugar syrup
A Handful of Mint

Lightly clap then muddle the mint in a shaker tin, then add all other ingredients and lightly whip shake with some pebble ice. Strain into a cocktail glass and top with ice. Garnish with lemon and mint.

Lizard Tail 🦎

Another trip down to Cornwall meant a long break from cocktails and gin making last week, (although I still was drinking lots of them whilst I was away!) Now I’m back I thought there’s no better drink to make than one in theme with the holiday!

So using Tarquins Gin, I combined ginger syrup and Aperol for some spicy and bitter flavours, with lemon juice balancing the sugar in the syrup, finishing with just 1 drop of cardamom bitters and an egg white for the silky finish and froth.

Cocktail Specs:
50ml Tarquins Gin
25ml Ginger Syrup
25ml Aperol
20ml Lemon Juice
1 drop of Cardamom Bitters
Egg white/Aquafaba

Add all ingredients to a shaker and shake without ice. Then add ice and shake again. Fine strain into a Collins glass and top with ice.

Happy world gin day!!

I’m getting lots of use out of our Papermill Chai Gin, and If there’s ever a drink that feels like a guilty treat when in a coffee shop, it’s a Dirty Chai. When I realised I could use one of our own gins to make a cocktail variation of the drink, I immediately went and grabbed my shaker tins.

The result was exactly like I had hoped, as you can expect, that being a sweet and spiced espresso martini with lots of chai goodness.

Cocktail Specs.
50ml Chai Gin
25ml Coffee Liqueur
25ml Espresso
1 Barspoon Vanilla Syrup

Add all the ingredients to a shaker and shake for roughly 15 seconds. Strain into a chilled rocks glass. Top with ice and garnish with cinnamon powder.

Something simple to highlight the flavours of the Papermill Chai gin. An amazing gin distilled then compounded at our distillery in Cheddleton! Using any black tea should work well with this cocktail, with the lemon and the sugar helping to lengthen out some of the citrus and spice elements.

50ml Papermill Chai Gin
25ml Black Tea
20ml Lemon Juice
12.5ml Sugar Syrup

Add all the ingredients to a cocktail shaker and shake with ice. Fine strain into a tea cup. Garnish with a lemon zest.

The Hellfire Club 🔥🐉

With the release of Stranger Things season 4, it only seemed right to make a cocktail to celebrate! A drink worthy of a dark wizard, this cocktail is a cocktail adapted from a Jungle Bird. The Grapefruit adds an extra citrus layer whilst the Caramel and Glayva add a rich sweetness. We hope all the stranger things fans out there enjoy the new season!

Cocktail Specs:
37.5ml 8 Year Aged Rum
25ml Pineapple Juice
12.5ml Pink Grapefruit Juice
12.5ml Campari
12.5ml Lime Juice
10ml Glayva Liquor
10ml Caramel Syrup
1 Dash of Angostura Bitters

Add all the ingredients to shaker and shake for around 15 seconds. Strain into a rocks glass and fill with ice. Garnish with grapefruit and pineapple leaves.

Just one of the great recipes that can be found in The Alchemist cocktail book, the Amaro Mio is an excellent drink which pairs the bitterness of the amaro with the sweetness of a good aged rum, which itself is complimented by the brown sugar. The limes then add a really zesty and citrusy kick. A cocktail which highlights the best parts of every ingredient in it!

37.5ml Bacardi Ocho
37.5ml Amaro
8 Lime Wedges
20g Demerara Sugar

Coat the like wedges with sugar and blowtorch to caramelise. Add the wedges to a rocks glass and lightly muddle. Add the amaro and rum to the glass, then top with ice and stir thoroughly.

Pignoli Alexander 🍪🍊

Inspired by his childhood trips to Milan, the Pignoli Alexander was created by Leandro, creator of the , and is based on the chocolate orange cookies he ate in Italy as a child, acting now as a homage to the time he spent there growing up. As Leandro states In his video, the Pignoli is not the cookie he remembers eating, yet the name of the cocktail, however, still persists.

Watching videos for the past number of years has helped to teach me about cocktails whilst working as a bartender and now at our distillery. I love this cocktail and would highly suggest if you somehow haven’t already, please go and watch some of the videos on Leandro’s channel!

12.5ml Creme de Cacao
50ml Spiced Rum
Top with Heavy Whipped Cream

One of my favourite Liqueurs, Glayva has a complexity which is perfect for a cocktail which can simply help accentuate the main component. The spices, honey and nuttiness are all lengthened in this variation of a traditional sour, combining brilliantly for a perfect evening drink.

Cocktail Specs:
50ml Glayva Liqueur
12.5ml Cask Strength Scotch Whiskey
25ml Lemon Juice
Barspoon of Honey Syrup
1 Dash of Angostura Bitters
Aquafaba or Egg White

Arrakis ☀️🪐

“Dreams make good stories, but everything important happens whenever we’re awake.”

Dune is now releasing for everyone to watch at home! So now seems like a good time to post the cocktail I made inspired by the film (I am still getting through reading the books!)

This drink pays tribute to the spice which makes the planet Arrakis so desirable for outsiders, and of course references the rolling sand dunes which cover the planet.

The chilli gin and tequila pair brilliantly together, especially with the added kick from the fresh chilli. The Aperol adds a bittersweet flavour which when combined with the heat makes for a really refreshing drink.

Cocktail Specs:
A slice of muddled chilli
Chilli Gin 37.5ml
Tequila 12.5ml
Sugar syrup 12.5ml
Lime 20ml
Aperol 20ml
1 dash of Angostura bitters

Muddle the chilli in a shaker tin then add all other ingredients and shake over ice. Fine strain into a cocktail glass. Garnish with a lime zest or edible shimmer and cinnamon powder.

Satsuma Sour 🍊🍋

The sun came out last weekend for us so the daytime sippers are back out! One of those which I made was a slight riff on a typical gin sour.

The backbone of a traditional sour usually contains just the base spirit, the sour ingredient, and the sweetener, (with egg white or an alternative added if desired for the viscosity and foam of a classic sour)

Using this as a base you can really look at any way to adapt or enhance the sour. For this one, as you can probably guess, I added some satsumas!

Cocktail Specs:

50ml Gin
20ml Lemon Juice
12.5ml Vanilla Syrup
Egg White/Aquafaba
1 Small Satsuma

Muddle half a small satsuma in a cocktail shaker. Add all other ingredients and dry shake for around 20-30 seconds. Add ice and shake again for around 10 seconds to chill. Fine strain into a rocks glass and fill with ice. Garnish with satsuma slices.

After watching The Batman, I really wanted to make some cocktails themed around it. If you haven’t seen the film yet, I highly recommend you give it a watch if you can!

A simple twist on an Espresso Martini seemed the most fitting. The variation in this version is a deep sweetness coming from both cherry brandy and dark chocolate liqueur. Of course, the question mark had to appear, for this cocktail I used chocolate powder and a stencil I made to replicate that from the cafe scene in the film.

37.5ml Vodka
25ml Kahlua
25ml Espresso

Pornstar Martini 🏖🙋‍♀️

While I prepare some original cocktails, I thought I’d make a post for the cocktail I’ve quite easily had to make the most of whilst I was working as a bartender.

The Pornstar Martini originated from London in the early 2000’s, with the original being created by bartender Douglas Ankrah. The drink is one which is easy to sell to a large audience as its passion fruit and vanilla profile doesn’t contain flavours included in many other cocktails that require a more broad palate. The other obvious reason this cocktail has become the star it has, is the presentation. Whether it has a passion fruit garnish or not, the foam that can be obtained combined with just a shot of Prosecco/sparkling wine makes for an iconic drink.

There are many different ways people make this cocktail, the recipe below is just one I have used. As it’s rare I will have vanilla vodka at home, I have used more vanilla syrup with a traditional vodka. Feel free to tweak yours to your own taste!

Cocktail Specs:
50ml Vodka
12.5ml Passoa
25ml Vanilla Syrup
12.5ml Lime Juice
50ml Passion fruit Purée
50ml Sparkling Wine/Prosecco

Add all the ingredients bar the Prosecco to a shaker. Shake vigorously with ice for around 10-15 seconds. Fine strain into a coupe/martini glass. Serve with a shot of Prosecco and optionally garnish with a half of a passion fruit.

French Martini 🇫🇷🍸

A modern classic, the french martini became a hit when it was made in the 1980s, whilst it still appears on the menu of many bars and clubs to this day. Arguably, two determining factors for this would be the simplicity of the cocktail, as well as its ingredients being sweet and fruity.

The classic consists of just three ingredients, vodka, black raspberry liquor, and pineapple juice. Although there is nothing wrong with this combination, I use one slightly different, but as the drink uses the structure of a base, modifier and juice, many variations are possible to suit your specific taste.

Cocktail Specs:
37.5ml Vodka
20ml Black Raspberry Liquor
50ml Pineapple Juice
10ml Lemon Juice
4-5 Fresh Raspberries

Muddle the raspberries in a shaker and add all the other ingredients. Shake well for roughly 10 seconds over ice. Fine strain into a cocktail glass. Garnish with raspberries.

Duppy Conqueror 🍍🌴

An expression that literally translates to ghost conqueror, also referring to someone overcoming their demons and spirits, seemed like a fitting name for this tropical and fruity rum punch!

Jaegermeister and Angostura Bitters add extra flavour to the sweet and sour combination of the fruit juices, whilst the praline syrup adds a slight hint of nuttiness to finish.

20ml Pineapple Juice
20ml Orange Juice
1 Barspoon Praline Syrup
12.5ml Jaegermeister

Card Counter ♦️♣️

After finding a miniature pack of cards fall out of a Christmas cracker, I knew I wanted to use them for my cocktails. As a result, the Card Counter was created! The flavours I wanted to theme the drink around were cinnamon and orange. I started with boulevardier specs and tweaked to add cinnamon whilst slightly reducing the bitterness, which then made me prefer this drink served straight up as an evening treat!

12.5ml Cointreau
12.5ml Cinnamon Whiskey
12.5ml Aperol
12.5ml Rye Whiskey
20ml Sweet Vermouth

Anyone care for a stroopwafel?

I made this cocktail after realising I still was yet to post a coffee cocktail on this account! The Espresso Martini is of course one of the cocktail greats, although there are many cocktails which can be made with fresh espresso that make excellent drinks. Obviously, the quality of coffee is extremely important here, which is why I am trying to learn more about coffee as I make more cocktails which utilise it.

This cocktail uses two of my favourite liqueurs, which introduce both almond and hazelnut flavours, along with caramel syrup for the sweetness of the centre of a stroopwafel. The spiced rum should be focused on traditional spices. A spiced rum heavy with citrus or cola won’t pair as well with this combination of flavours. The end product uses the bitterness of the espresso to balance the sweetness of all the other ingredients, you can even warm the stroopwafel up on the fresh espresso before mixing!

Cocktail Specs:
37.5ml Spiced Rum
12.5ml Amaretto
12.5ml Frangelico
1 Barspoon Caramel Syrup
50ml Espresso

Brew espresso and place stroopwafel slice on top for 30 seconds. Combine all the ingredients into a shaker. Fill with ice and shake vigorously for 8-10 seconds. Fine strain into a coupe glass. Garnish with stroopwafel slice.

Happy New Year everyone!

We have had a good rest over the holidays, and now I can get back to work with all my new ideas for conconctions this year! One of the drinks we’ve made over the festive period has been this cocktail, utilising the chilli gin my mum had for Christmas.

I combined ingredients I knew all work well together with chilli and lime, including tequila and agave syrup. Adding the sweetness of pineapple juice and the introduction of heat from a fresh sliced chilli gave us a tasty drink with gin and tequila subtleties and a kick from the chilli!

Cocktail Specs:
37.5ml Chilli Gin
25ml Tequila
20ml Lime Juice
12.5ml Agave Syrup
37.5ml Pineapple Juice

De-seed a chilli and cut into slices. Add one slice to a shaker and add lime juice. Muddle the chilli gently, then add the rest of the ingredients. Shake over ice for 8-10 seconds. Fine strain into a cocktail glass. Garnish with angostura bitters and a slice of chilli.

Hot Toddy 🥃🍋

After a brilliant Christmas, things have now toned down. We imagine many may be in situations where they are feeling a bit under the weather or needing a small pick-me-up style drink before the new year.

Of course, we have a cocktail for just that! A common classic, the Hot Toddy has been used for years, with estimates dating its origin back to the 18th century. Although we now thankfully have medicines and other effective treatments for colds and sore throats, the combination of lemon, honey and boiling water still help to do the trick!

We hope everyone has had a great Christmas in whatever way they could with their current situations!

50ml Whiskey
12.5ml Lemon Juice
12.5ml Honey Syrup
50-75ml Boiling Water

Warm a heat resistant glass to prepare for the boiling water. Then add all the ingredients to the glass and stir thoroughly. Add a cinnamon stick and/or a lemon wheel stuffed with cloves for garnish.

Brandy Alexander 🌲🍨

A decadent classic, the Brandy Alexander is a creamy boozy treat perfect as an alcoholic alternative to a dessert. The original Alexander was a gin based drink, yet it’s the brandy counterpart which seems to have came out as the preferred version of this classic after years of cocktail making. The ingredients in the recipe can vary on quantity, but my favourites all have a little something extra added to enhance the flavour just a little! So if you want to try yours with frangelico you can follow this recipe, but it is by no means necessary!

We’ve brought Hogsmeade to Leek!

Butterbeer being a fictional drink from Harry Potter, it seemed like a great opportunity to make our own version! Starting with a traditional hot buttered rum, we simply added the butterscotch liqueur and the cream. It’s a real winter warmer, with the flavours of traditional Christmas spices and the sweet hints of butterscotch and vanilla. It’s perfect for a cosy night in with a Christmas film (or yet another Harry Potter Marathon)!

Cocktail Specs:

Butter spice mix:
Tablespoon of butter (softened)
1 dash of cinnamon powder
1 dash of nutmeg powder
1 dash of ground clove

Combine this mix with -

Ingredients:
37.5ml Traditional Spiced Rum
25ml Butterscotch Liqueur
1 Barspoon of Vanilla Syrup

Add the butter mix and ingredients to a heat resistant glass, top with boiling water and stir thoroughly, top with cream and crushed biscoff if desired.

It’s time to step into Christmas! 🎄

Easily my favourite time of year, so making cocktails to go with the season is always fun! Winter warmers, sweet treats and spiced tipples are the best around Christmas. Here is a drink that’s like a dessert in a glass! A cocktail I made last year which is a good start for the Christmas cocktails on the page.

Cocktail Specs:
25ml Butterscotch Liqueur
25ml Cinnamon Whiskey
12.5ml Cream
25ml Baileys
12.5ml Frangelico

Add all the ingredients to a shaker and shake vigorously for 8-10 seconds. Strain into a coupe glass and garnish with cinnamon dust and a cinnamon stick.
