with easy peasy. Carefully fry one onion and some garlic until translucent. Add small bouquets of broccoli and cook for 10 minutes. Whisk 6 eggs with a dash of water and session with salt, pepper and thyme. Cook gently until it’s “dry”. Put under the grill until golden and serve! Use a frying pan with a handle that can take the heat!

🍌 for my vegan part of the family. Very easy to make and a good use of overripe bananas. Will make12-15 muffins.
You need
225 g plain flour
4 overripe bananas
100 ml light brown moscovado sugar
100 ml rapeseed oil
3 tsp baking powder
1 tsp salt
1 tsp cinnnamon
1 tsp ground cloves
1 tsp ground allspice

The spices are optional!
Mash the bananas and mix in the rest of the ingredients. Spoon into cupcake cases and bake for approx 10-14 min in 225 degrees Celsius.
Decorate with your choice of icing.

Swedish pancakes. I think I learnt how to make them when I was about 8! Easy peasy to make and cheap! Always my sons choice for birthday celebrations,all day! Since I these days have vegans in the family I tried a vegan version! Just swap the milk to a vegan milk option , add 1,5 tsp baking powder and use vegan margarine while frying and no eggs!
250 ml plain flour
3 eggs
600 ml milk
Butter to fry in

Mix all the ingredients and rest for at least 10 min. Use a frying pan or pancake pan. Melt a dollop of butter and add 100 ml of the mixture. Fry until “solid” and turn over and fry for another couple of minutes.Serve with jam or lemon and sugar as is the tradition in the UK!

Spaghetti a la Carbonara was my first ever food photo shoot and write up as a journalist apprentice when I was working for VeckoRevyn (Bonnier Magazine Group) in 1980! I spent some time in Italy that summer and then created this dish from memory! The dish was even approved of by a Italian friend of mine! I recently made a cookbook for my sons birthday and this recipe is in there, of course! According to the Italians this dish should be made with Panchetta but I found that smoked bacon is a less pricey and a valid alternative. A dash of red wine when cooking the bacon give the dish that little extra.
1 tsp olive oil
1 chopped onion
3-4 chopped garlic cloves
1 tbsp course black pepper
250 g chopped smoked bacon or panchetta
A splash of red wine
300 ml whipping cream
200 g grated Parmesan cheese
Egg yolks
Spaghetti.

Fry the onion with the chopped garlic until soft and golden. Add the bacon/panchetta and fry gently until it gets a bit caramelised. Add the pepper and wine and cook out for about 7 minutes. Warm the cream and add the grated Parmesan leaving some for serving. Cook the spaghetti according to the package. Serve up in bowl with the bacon and pour over some of the cream mix . Sprinkle some cheese on top and serve with a egg yolk in its shell. Delicious!
