সত্যি কথা বলতে, আমার Mud Cake বানানোর inspiration Shumi’s hot cake …এত মজা লাগতো ওদের mud cake ,এখন জানিনা কী হয়সে , আগের মত taste পাই না ।
এখন আমার নিজের MudCake ই বেশী ভালো লাগে 😉🌝

Chocolate melt করার জন্য কাটতে গিয়ে হঠাৎ হাত কেটে যায়,তাও আমরা Baker রা হাসিমুখে কেক complete করে আপনাদেরকে send করি । কত গল্প থাকে এক একটা কেক এর সাথে,কিছু বলা হয়,কিছু না বলায় থেকে যায় ।

কেক আমি শুধু sell করার intention এ কখনো বানাইনা । এক একটা কেক আমার কাছে ভালোবাসা,Emotion . যত ছোটো কেক ই হোক ,আমি আমার 100% দেই । sometimes আম্মু বলে এতো ছোটো কেকে এত কষ্ট করতেসো কেন? But আমার কাছেতো কেক গুলো বেবীর মতো।এত যত্ন নিয়ে বানাই , আমার এত শখের জিনিস ,কেও যখন review দেয় এক লাইনের তখনই খুশীতে পাগল হয়ে যাই।
PS- এই কেক এর design টা Sugar Bliss এর নিজস্ব creation .যদি কেও recreate করেন খুশী হবো , but design inspiration credit দিলে কৃতজ্ঞ থাকবো !

২০২১-২২ এর দিকে খুব hyped ছিলো Chocolate Overloaded cake । কিন্তু এখন এই টাইপ কেক এর অর্ডার কম আসে । এটা কি এখন out of trend ? এই কেক গুলো ডেকোরেশন করতে খুব ভালো লাগতো

আপনারা যেমন “Bad hair day” ফেইস করেন ,আমরা baker রা করি “Bad baking day ! “
কেন জানিনা এই কেকটা শুরু থেকে শেষ পর্যন্ত ঝামেলা ছিল । কেকটা full frosting করে রাতে রেখে দিতে হবে,কারণ পরেরদিন দুপুরের আগেই ডেলিভারী দিতে হবে। তাই আগেরদিন সকালে বেক করতে গেলাম । দেখি ময়দা নাই ! এরপর বিকালে আব্বু ময়দা এনে দেয়ার পর বেক করি। ঠিকঠাক হয়। কেকটা অর্ডার নেয় whipped frosting এর pricing এ। পরে মনে হল buttercream দিয়ে করলে ভাল হবে। fridge খুলে দেখি বাটার নাই !

বাটার আনতে আনতে রাত ১০ টা । আমি তাই crumb coat করে রেখে দেয় তখন রাত ১২ টা, কারণ তখন আর buttercream করার এনার্জি ছিলনা ।
পরদিন ফজর এর নামাজ পরে কাজ start করি। Buttercream ও ঠিকঠাক হয়। ৩ ঘন্টা পর mirror glaze ready করলাম। কেক এর colour দেখে মনে পরলো peach colour করার কথা ছিল ! I got freaked out ! তারপর ভাবলাম glaze টা peach colour করি আর doube coat করলে base দেখা যাবেনা । Alas ! কেন জানি glaze টা সেট ই হচ্ছেনা !
৩/৪/৫ বার করলাম তাও কেক থেকে সরে যাচ্ছে !
কী পরিমাণ stressed ছিলাম বলার মত না কারণ আর ১ ঘন্টা পরই ডেলিভারী । শেষ পর্যন্ত আর উপায় না দেখে পাশে white chocolate grate করে দিয়ে দিলাম 🙂
Happy birthday লিখা টাও ২ বার করতে হয়েছে 🫠

আরো অনেক ঝামেলা ছিল এগুলো আর বললাম না 🙂
But Alhamdulillah finallly delivered it in due time …

একটা fondant cake বানাতে কি পৱিমান effort দিতে হয়,এটা যাৱা কৱে শুধু তাৱাই কষ্ট টা realise করে।Cake টা একবার ready করে আমারই করা sample design full frosting তুলে আমি আবার করি,কারণ board টা comparatively ছোটো হয়ে গিয়েছিলো Rosette Design এৱ জন্য। But self satisfaction is very important for me . Customer কে কিছু একটা করে দিয়ে দিবো,I don’t have that mentality . তাই আবার simple কৱে frosting করলাম ,সব শেষ করে দেখি it was almost 1 am . So I decided to do the fondant part on next day . পরদিন 4.5 hours কাজ করে topper গুলো ready কৱি।
I do baking only because I love doing it ,it’s not my profession …So I put my 100% on any order that comes …End of the day a happy customer is my reward …
