It has been a while!! I missed the art of coffee making and you know me…I take coffee quite SERIOUSLY 😳🤣
So I teamed up with the awesome guys of and WAS BORN! We decided to serve only the BEST coffee, 👉 and the BEST pastries 👉 🤤

Real talk alert! 👇
Yesterday a friend of mine made me realise I need to clarify few things about me…☺️
I wish I had a booklet to hand every time a get or meet a new follower/friend…but I don’t.
So here are few things: 👇

1. When I say I don’t drink, I don’t mean totally, I have a glass or 2 at times

2. I share my stories on SM because I want to inspire others to share it as well. I’m a true believer of breaking the silence & to forgive 🙏🏼

3. When I created my GoFundMe page it was mostly targeted to my cooking show supporters that KNOW me well and never doubted about my integrity. If you have donated, thank you so much, the lawyers are happy and I’m less stressed.

4. When I share my happy times on SM it’s because I want to remember those days, i don’t mean to brag. Sorry not sorry.

5. When I share my sad times (Reason #2) I realise it might seem I look for sympathy, but that’s not my goal.

6. I don’t want to be remembered as “poor Ruby that had a sad story”, cause we all have…and worst than mine. PLUS I live in Noosa, I’ve nothing to complain about it!
I want to be remembered as the crazy Italian that makes the best tiramisu in town, dance while cooking and occasionally raise money for DV victims and give cash to strangers…because why not!

7. I now have a boyfriend, sorry guys…and I shared it on social media. Who doesn’t?!!😆

8 and last. I’m a full time single mum (with a boyfriend now…) that for 6 years had to deal with separation crap, big dramas, left over debts and raise 2 kids on her own (not looking for sympathy here…) I had to find a job I could do from home so I invented one. I now have 2 more jobs, and I get some single parental payment from the government that helps to pay my bills. God bless Australia. (Now that’s some serious talk 😳!)

Obviously there’s so much more about me but my caption is too long… if you want to know more, I live stream every week or simply DM or call if you have any questions. I don’t mind confrontations.

Omg when emailed me last week asking me to be part of their challenge, I was like 😱 Wonton???
I mean I LOVE Asian food but never made then...well guess what?? It was easier than it looked but, or course, I had for create my Italian version which kinda reminds me of ravioli...😂 so instead of Soy sauce I made a balsamic reduction 😉 with garlic and rosemary flavour... the filling of Italian sausage and truffled mushrooms was Devine. So, in the end I totally screw up Asian wonton but I guess I created Italian ones!! So Salute to you 🍷 and buon appetito!

When I see a business that makes good products I got to tell everyone...🤩🍦 so here I am!.co is a local Noosa business that produces amazing ice cream 🤤 you can find them at the local IGA and some restaurants too!! 👏🏼👏🏼👏🏼
I had so much fun tasting all the flavours and I’ve been hiding them under the frozen peas (third pic is me trying to be sneaky...🤣) so my kids hopefully won’t find them...😜

But it’s Easter time so I guess I have to be nice and share for this time...

Wow I haven’t posted a actual photo in ages!! Hahaha that tells you how much I love videos!
I just feel I have to say hello to the many new people that have followed me the last few weeks!! Since I’ve been using reels I have gained so many new friends! So....Hello there! My name is Ruby and I’m Italian, I moved to Australia 14 yrs ago. I am a single mum of 2 wonderful children and I now live in a beautiful town called Noosa (no it’s not my last name 😜)
I have always worked in hospitality and gained loved for food since my mum is a great cook! I owned a little restaurant for 4 yrs while I had my 2 children (man that was hard!) and developed even more knowledge around the food industry. I stated live streaming 5 yrs ago and I now have my cooking show over different platforms like TikTok, Twitter live and now Happs. I’m also a social media manger and, this year, I plan to grow the business.
I could tell you so much more but for now let’s stop here and if you have more questions please ask 😀 I would love to know where you all come from and see who actually read the whole post ..😂 one more thing: my motto is “choose joy”, There’s a big and long story behind this, but I’ll leave that to another time...have a good one! I feel I haven’t posted on here in ages!! Thank God I still do my lives that keep me ALIVE AND JOYFUL.
TBH I could not imagine my life without a fun live stream anymore. Maybe it’s like an artist that needs the stage and the audience interaction, maybe is the good vibe and the adrenaline. 🤷🏻‍♀️🤩 I just need it!
Anyway....today I got to cook one of my favourite dish 😍 Seafood risotto, the real one, the proper one, the king!!
Secret #1 Stock: use the natural stock and juice that come from the mussels, they give you LIQUID GOLD
Secret #2 Rice: only use rice that is made for Risotto, so Arborio or Carnaroli, their grain is short and richer in starch which means...they give you a creamy dish 😎
Secret #3 : patience. There’s no shortcut for a good risotto, the grain will overcook if left cooking in water PlUS you’ll never get that rich taste.😋
Secret #4: dance while you cook 💃🏻😜

There’re places that will always stay in your heart...and this is definitely one of them. 🥰 My first time glamping, totally different to my usual small tiny camping tent and the uncomfortable inflatable mattress 😆 The owners of sescape created a beautiful, unique and luxurious glamping site right in the heart of Noosa Hinterland. 😍 the most comfortable bed I have actually slept on (true story!) and the most beautiful bath experience, overlooking the magnificent Sunshine Coast 🤩
The attention to details and the little extras were 5 stars hotel like. AND the continental breakfast and the cheese platter made everything even more amazing!!! exceeded my expectations, from the warm welcome by host Tracey to the relaxing fire pit overlooking a gorgeous sunset and full moon.
I highly recommend this place as a way to recharge with Mother Nature and indulge your senses. Couples or solo 😉 you decide.
Well done guys! Simply gorgeous 👏🏼👏🏼👏🏼

It took me 14 years to visit the tropical Queensland. 14!! 😨 I cannot believe it how much time I’ve wasted...I guess that’s why I’m so impatient to travel and visit new places every year. I want to show the world to my children, even if it takes me going crazy as solo parent 🤯 cause TRAVELLING is the best way to learn, grow and understand the differences between cultures and people. More understanding = more peace.🙏🏼 Wish school would make travelling a compulsory subject!😆

Anyway! First highlight was Fitzroy Island, an island surrounded by amazing reef and green sea turtles 😍

This is my state, QLD, and I’m so happy to call it home. Yes I’ll always be Italian and I’ll always have this bloody accent, but, hey (Brisbane accent on) proud to be here mate! 🌴

When I took this challenge on board by suggestion and inspiration from other people in the States, I never knew I was going to be part of something that would literally change my life. Days like today puts your life into perspective. Wendy helps the homeless community in the Sunshine Coast, she cooks meals and Vera, or V like she prefer to be called, helps too. She had a hard life, something I would never know how it even feels like. Nor our kids. This 2 minutes video shows how much happiness an act of kindness can give.
I cannot Thank you enough for giving the gift of happiness. Another reason to continue our challenge and to CHOOSE kindness.

A home style classic that I LOVE so much!! I used (for the first time I lived in Aussie) some Italian porcini mushrooms but NOT dried, frozen! I was never a big fan of dried porcini for their strong taste but when I finally found the frozen ones...omg...They were AMAZING! I’ve added some authentic Italian sausage, responsibly sourced and free range pork. And of course my favourite pasta 🤩 I used Pappardelle which is a very wide and flat pasta, typical of Northen Italian regions.
I personally prefer a white wine sauce on this dish but if you like, add a dash of cream and you will have a much more decadent flavour 😏
The best ingredients make the whole difference so thank you for supplying these amazing products!😋
My next delivery is coming up this week, can’t wait for my cheeses and salami 😍

One good reason to love winter?? Eating Fennel 😋 My favourite is usually fennel and orange salad with simple EVOO and lemon but this time I decide to make the cooked version in batter and lightly frying them. Results was so good! Fresh and naughty but in the healthier way. A fantastic entree or starter that no one will ever guess what is made of 😏😉 Mediterranean cuisine is the best!!😍🤩 @ Noosa Heads, Queensland
