Rice and pork is always a good idea, I made this delicious using National milling mother’s pride par boiled rice.

Ingredients

• 2 cups Mother’s Pride Parboiled Golden Rice
• 1 large onion, chopped
• 2 cups tomato puree (or blended fresh tomatoes)
• 1/4 cup tomato paste
• 1 teaspoon garlic, minced
• 1 teaspoon ginger, minced
• 1 teaspoon paprika
• 1 teaspoon curry powder
• 1 teaspoon dried thyme
• 1 teaspoon black pepper
• 1-2 bay leaves
• 3 cups vegetable stock or water
• 1/4 cup cooking oil
• Salt to taste

Instructions:
1. Heat oil in a pot and sauté onions until soft.
2. Add garlic, ginger, paprika, curry powder, thyme, and black pepper. Stir for a minute.
3. Mix in tomato paste and tomato puree. Cook until the oil separates from the tomatoes.
4. Pour in vegetable stock and bring to a boil.
5. Add washed Mother’s Pride Parboiled Golden Rice and bay leaves. Stir well.
6. Reduce heat, cover, and let it simmer until the rice is tender.

Here’s a simple Madeira raisin cake recipe to rescue those raisins from your cabinet:

Ingredients:
• 200g butter, softened
• 200g sugar
• 4 eggs
• 200g self-raising flour
• 100g raisins (dust with flour)
• Zest of 1 lemon or orange (optional for extra flavor.
• 1tsp vanilla essence
• 2 tbsp milk

Instructions:
1. Preheat your oven to 170°C and grease a loaf tin.
2. Cream the butter and sugar until light and fluffy.
3. Add the eggs, one at a time, mixing well after each addition.
4. Sift in the flour, and gently fold it into the mixture.
5. Stir in the raisins, lemon/orange zest, and milk.
6. Pour the batter into the prepared loaf tin and smooth the top.
7. Bake for 45–50 minutes, or until a skewer inserted in the center comes out clean.

Fried Rice with Steak Using Mother’s Pride Natural White Rice by National Milling Corporation Limited

Ingredients
• 2 cups Mother’s Pride Natural White Rice, cooked and cooled
• 1 cup carrots, diced
• 1 cup green beans, chopped
• 2 Hungarian sausages, sliced
• 1 tsp curry powder
• 1/2 tsp turmeric powder
• 3 tbsp soy sauce
• 1 tsp mixed herbs
• 2 tbsp cooking oil

For the steak:
• 2 beef steaks
• Salt and black pepper, to taste
• 1 tbsp oil

Instructions
1. Cook the rice: Prepare the rice according to package instructions. Let it cool completely for best results.
2. Prepare the fried rice:
• Heat oil in a large pan or wok over medium heat.
• Add the carrots and green beans. Stir-fry for 3-4 minutes until slightly tender.
• Add the sliced Hungarian sausages and cook for another 2-3 minutes.
• Stir in the curry powder, turmeric, and mixed herbs. Mix well.
• Add the cooled rice and soy sauce. Toss everything together and cook for another 5 minutes, ensuring the rice is evenly coated.
3. Cook the steak:
• Season the steaks with salt and black pepper.
• Heat a pan over medium-high heat, add oil, and sear the steaks for 2-3 minutes per side or until cooked to your desired doneness.
4. Serve: Plate the fried rice and place the steak on the side. Enjoy!

There’s something about Sunday chicken and potatoes, always understands the assignment. Here’s another entry for Country Choice Chicken 2025 calendar, braaied whole chicken, potatoes and veggies.

Braaied whole chicken

Ingredients (for the Chicken Marinade):
• 1 Country Choice whole chicken
• 1/4 cup sun-dried pepper sauce
• Juice of 1 lemon
• 4 cloves garlic, minced
• 1-inch ginger, grated
• Salt and pepper, to taste

Instructions:
1. Marinate the Chicken
• In a bowl, mix the sun-dried pepper sauce, lemon juice, minced garlic, grated ginger, salt, and pepper.
• Rub the marinade all over the chicken, ensuring it’s well-coated. Allow it to marinate for at least 1 hour for deeper flavor.
2. Cook the Chicken on the Braai
• Place the marinated chicken on the grill and cook slowly, turning occasionally.
• Brush it with any leftover marinade during cooking for extra flavor and moisture.
• Grill until the chicken is cooked through and the skin is golden and crispy.

Many people dream of baking, but let’s face it—without the essentials, you’re setting yourself up for disaster. Here’s what you absolutely need for those perfect baked treats:

Baking Cups – Honestly, how do you plan to measure accurately without these?

Measuring Spoons – No, your random kitchen spoon won’t cut it. That’s how you end up with cookies that taste like salt biscuits 😂😂😂

Baking Tins – Please, stop baking in pots. We’re not making nshima here 😂😂😂 we’re baking cakes.

An Oven – Whether it’s gas, electric, or charcoal, get yourself an oven.

Time and Patience – If you’re not ready to read the recipe thoroughly and follow it step-by-step don’t bake. Baking is a science. You can’t just say, “What if I don’t have baking powder?” Ma’am, the answer is simple: go buy it, then come back and bake.

Any small wind or water outside means it’s baking time. Here is a basic muffin recipe. You can add whatever extras you desire eg fruit, chocolate etc.

Ingredients:
• 2 cups all-purpose flour
• 1/2 cup sugar
• 2 tsp baking powder
• 1/2 tsp salt
• 3/4 cup milk
• 1/3 cup vegetable oil
• 1 large egg

Instructions:
1. Preheat your oven to 160 degrees and line a muffin tin with paper cups.
2. In a bowl, mix the flour, sugar, baking powder, and salt.
3. In another bowl, whisk together milk, oil, and the egg.
4. Pour the wet mixture into the dry ingredients and stir gently until just combined (don’t overmix).
5. Spoon the batter evenly into the muffin cups, filling them about 2/3 full.
6. Bake for 15–20 minutes or until a toothpick inserted in the center comes out clean.
7. Cool slightly before serving.

Goat Meat Curry with Vegetables

Ingredients:
• 500g goat meat (cut into small pieces)
• 2 tablespoons cooking oil
• 1 onion, finely chopped
• 2 tomatoes, grated
• 2 teaspoons curry powder
• 1 teaspoon paprika
• 1 teaspoon garlic and ginger paste
• 2 medium potatoes, peeled and cubed
• 1 cup green beans, trimmed
• 2 medium carrots, sliced
• 1 cup water
• Salt to taste

Instructions:
1. Heat oil in a pot and fry the onions until golden brown.
2. Add the garlic and ginger paste, cook for a minute.
