Ingredients:

500g of sliced Okazi leaves (Afang leaves)
500g of sliced Water leaves or Spinach
Assorted meats (beef, cow tripe, stockfish, smoked fish, etc.)
1 cup of Periwinkle (optional)
2 cups of Palm oil
2 tablespoons of ground crayfish
2 seasoning cubes
Salt to taste
Ground pepper to taste
1 medium-sized onion (chopped)
3-4 cups of meat stock or water
Instructions:

Prepare the Ingredients: Wash the assorted meats thoroughly and place them in a pot. Season with onions, seasoning cubes, and salt. Cook until tender. Also, soak the stockfish in hot water until soft and debone the smoked fish.

Prepare the Leaves: Rinse the Okazi (Afang) leaves thoroughly and slice thinly. If using water leaves, wash them and slice thinly. If using spinach, chop finely.

Blend Okazi Leaves: In a blender or food processor, pulse the sliced Okazi leaves briefly to break them down a bit. They should still have some texture.

Cooking Process: In a separate pot, heat the palm oil until hot (but not smoking). Add the chopped onions and sauté until translucent.

Add Blended Okazi Leaves: Add the blended Okazi leaves to the pot and stir. Allow it to cook for about 5-7 minutes, stirring occasionally.

Add Meat Stock: Pour in the meat stock (or water if using) into the pot with the cooking Okazi leaves. Let it simmer for about 10-15 minutes until the leaves soften further.

Incorporate Water Leaves or Spinach: Add the sliced water leaves or spinach into the pot, stir, and allow it to simmer for an additional 5-7 minutes until they wilt.

Add Assorted Meats and Seafood: Now, add the cooked assorted meats, stockfish, smoked fish, periwinkle (if using), and ground crayfish into the pot. Stir gently to combine all ingredients.

Season and Adjust: Season the soup with ground pepper and additional salt if needed. Stir well and let it simmer for another 5-10 minutes to meld the flavors together.

Final Touch: Taste the soup to ensure the seasoning is to your liking. Adjust if necessary. Once done, remove from heat.

Serve: Afang Soup is traditionally served with a side of your choice—rice, fufu, pounded yam, or any preferred swallow. Serve hot and enjoy this flavorful Nigerian delicacy!

Feel free to adjust the seasoning and ingredients according to your taste preferences. Enjoy cooking and savoring this delightful Afang Soup!
