🥳✨ Crispy, creamy, and oh-so-yummy! These Squished Potatoes on Hummus with Basil Pesto Roasted Tomatoes are a must-try.
• 500g New Potatoes boiled
• 1 lemon
• Olive oil
• Salt and pepper to taste
• Chicken spice
• 1 punnet roasted cherry tomatoes
• 3 cloves crushed garlic
• Handful Chopped parsley
• 1 small bottle basil pesto
• 500 ml shop bought hummus
Garnish
• Toasted sesame seeds
• Black olives
• Chopped parsley
• Olive oil for drizzling
Method
1. Preheat oven to 190 deg C
2. Start by roasting the potatoes, arrange the potatoes over the two baking sheets, spread them so they are not touching each other.
3. Press them down to flatten, squeeze over the lemon juice, drizzel with olive oil, season with salt,pepper and chicken spice.
4. Roast till crisp and golden, set aside.
5. Heat some olive oil in a pan abd add the tomatoes and garlic and parsley and fry till the tomatoes get wrinkled. Stir in 2 heaped tablespoons of pesto , set aside.
6. Pile the hummus onto the base a pretty dish, spoon over the tomatoes, arrange the potatoes onto the hummus and garnish.

What an incredible day at the Youth In Action Expo with the Cape Town International Convention Centre (CTICC) and Gift of the Givers. Keeno L. Hector spoke to Dr Imtiaz Sooliman and discussed how important it is to empower the youth of tomorrow.

Serves 4
Ingredients
• 5 tablespoons olive oil
• 1 cup chopped Celery
• 6 cloves chopped Garlic
• 1 cup chopped leeks
• 3 medium Potatoes peeled and cut. into small cubes
3 tablespoons fresh thyme leaves
• 1250 ml Vegetable or chicken stock
• 1 x 410g tinned butter beans
• 2 x 410 g tinned sugar beans drained
• 250 g crisply Fried Bacon bits .
Method
Heat the olive oil in a saucepan and saute the celery , garlic, leeks and potatoes with the thyme until the vegetables are translucent and the garlic fragrant .
Add the chicken stock and simmer until the vegetables are tender, add the beans and simmer for 5 minutes. Remove half the veg and then blitz the remaining vegetables in the saucepan.
Return the remaining vegetables to the pot with the bacon bits, thin with a little more stock to the soup if you would it less chunky

Fish this good should come with a warning: highly addictive! Jenny Morris' Asian-inspired fish recipe below. 🐟🔥
• 1 whole fish about 800g with head on, gutted and scales removed .( I like to use a silver fish)
• Enough oil for deep frying
• Cornflour for dusting
• Salt and pepper to taste
Method
1. Make sure not to cut all the way down to the bone. If you do, don’t panic, the world won’t end.
With a sharp knife make a couple of deep slits into the flesh of the fish on both sides, don't cut down to the bone.
2. Make sure that you pat the fish completely dry with paper towel, season with salt and pepper, dust lightly with cornflour, before you add it to the oil.
3. Heat enough oil in a large pan or wok to cover the fish, gently slid the fish into the hot oil and cook till golden and crisp and cooked through, it takes about 15 minutes.
4. Make sure to spoon some hot oil over the fish while its cooking to cook any parts that arnt immersed in the oil
Garnish
Sliced chillies
Fresh coriander
Thinly sliced spring onion
Toasted sesame seeds
The Sauce
You need a little hot oil from the pan you are cooking the fish in.
• 5 cm Ginger peeled and
• 6 cloves garlic peeled and sliced
• 4 red chillies roughly chopped
• 4 x Bai Makrut leaves crumpled
• Spring onions with tops sliced diagonally
• 1/2 cup Soy sauce
• Juice of 2 limes
• Honey to taste
• Small handful chopped coriander
• 5 ml sesame oil
Method
1. Place the oil in a small saucepan and heat it.
2. Add the ginger, garlic , limes leaves and chillies and fry until fragrant.
1. Add the soy sauce, lime juice and honey.
2. Stir together well and bring to the boil. As soon as it reaches boiling point remove immediately from the heat, stir in the coriander and sesame oil, taste and adjust seasoning
3. Place the fish onto a serving platter abs spoin over the sauce.
4. Garnish and serve.

Cottage Pie
Serves 4
Ingredients
• 3 tablespoons olive oil
• 2 onions diced
2 carrots, diced
2 stalks of celery finely chopped
• 2 tablespoons Harissa paste
• 1 tablespoons oregano
• 1 teaspoon paprika
• 1 teaspoon ground cumin
• 1/2 teaspoon ground cinnamon
• 500g steak mince
• 500g pork mince
• 1 heaped tablespoon tomato paste
• 4 tablespoons chopped parsley
• Salt and pepper to taste
• 350 ml beef or chicken stock
Method
1. Heat the oil in a saucepan over medium-high heat.
2. Fry the onions, celery. carrots, harissa, oregano, paprika, cumin and cinnamon together till fragrant, if need be add a little water to prevent the spices from burning.
3. Add the mince and cook till it is no longer raw.
4. Add the remaining ingredients and simmer gor 15 mins.
5. Taste and adjust seasoning, mix a tablespoon of flour with a little water and stir into the mince.
6. Spoon into an oven-proof dish and top with mashed potatoes
7. Bake for about 25 minutes or until the top is golden.

Potato Topping
• 1 1/2 kg peeled Potatoes and quartered
• 3/4 cup Milk
• 80g Butter
• Salt and pepper to taste
• Nutmeg
• 1 cup grated cheddar Cheese
• 2 spring onions with tops finely chopped
Method
1. Boil the potatoes in cold salted water until tender, drain.
2. Add the butter and milk and mash till smooth and fluffy.
3. Stir in the cheese and spring onions, taste and adjust seasoning and its ready to top the mince

Ingredients
• 3 over ripe banana chopped
• 125 ml Buttermilk
• 125 ml Vegetable oil
• 2 Eggs
• 1 1/2 cups Sugar
• 1 teaspoon vanilla extract
• 1/2 teaspoon Salt
• 1 3/4 cups Cake flour
• 5 ml Bicarbonate of soda
Method
1. Preheat the oven to 180 deg C
2. Line the base of one large or 2 small loaf tins with grease proof paper. Lightly spray the sides of the tons with nonstick cooking spray
3. Place the bananas, buttermilk, oil, eggs and sugar and vanilla into the bowl of a food processor and beat together unil smooth and there are no lumps of banana left in the mixture.
4. Very gently, without overmixing stir in the flour and bicarbonate of soda.
5. Spoon the batter into your prepared loaf tin and bake at 180 deg C for 1 hour or until a skewer inserted into the cenrre of the cake comes out dry.
6. If you are making 2 smaller loafes check after 45 minutes for doneness.
7. Let the banana bread rest for 10 minutes in the pan before turning out onto a cooling rack.
