Spaghetti with Garlic and Oil
So many requests for this recipe this pst week. With just a couple ingredients and just minutes from prep to table. If you have not made this recipe yet you need too its delicious.
You’ll only need-
•1 lb-spaghetti
•1/2-cup Extra virgin olive oil
•8-10 garlic cloves sliced
•1/2-tsp crushed red pepper
•a little chopped parsley
•pasta water
•1-tsp salt
1-bring a pot of salted water to boil.
2-add the olive oil, salt, garlic, red pepper to a skillet large enough to hold the finished dish. Put the heat to low sauté for 5 minutes until the garlic releases their aroma and turns golden but do not burn the garlic.
3-remove the skillet from the heat and add 2 tablespoons of water to the skillet this will stop the garlic from cooking
4-cook the spaghetti 2 minutes short of done
5-remove 1 cup of pasta water but only add 1/4 cup to the skillet put the heat to medium strain the pasta add it to the skillet toss this all together for 2 minutes. Add a little more pasta water if needed
6-toss in the parsley

My Italian Beef Stew
So many requests for this recipe so here it is. The key to achieving the rich deep flavor of this Stew is to be sure to brown the beef properly. The brown bits that are left in the pot when you remove the beef is the foundation for the rich flavor we are building. Brown the beef in stages, a few pieces at a time is best. And if you don’t like peas just don’t use them.
You'll need-
•2.5-3 lbs of beef chuck cut into small cubes about 1.5” seasoned with salt and pepper
•6-garlic cloves smashed
•1/2-cup minced onion
•2-medium yellow onions quartered
•4-carrots cleaned cut into quarters
•2-celery stalks cut into 1" pieces
•4-large red potatoes quartered
•1-cup of frozen peas
•1-cup dry red wine chianti is good
•1-qt beef or chicken stock
•1/2-cup of tomato sauce
•Salt
•Pepper
•1-tbs of flour
•2-bay leaves
•1/4-cup vegetable oil
•2-tbs tomato paste
1-Pre heat oven to 325 degrees.
2-In a heavy oven proof pot with a tight fitting lid stove top heat the oil to very hot add a few pieces beef at a time do not crowd the pot or it will steam and not brown.
3-Brown on all sides, remove to a plate brown all the beef, remove to the plate. It's very important to create that brown foundation in the pot
4-drain all but 2 tbs of oil, add the minced onion, garlic, tomato paste sauté for 2 minutes
5-deglaze the pot with the wine scraping all the brown bits from the pot mixing everything together
6-add the beef back to the pot with the liquid that has gathered on the plate. Sprinkle the flour all over the beef.
7-add the tomato sauce and enough stock just to cover the beef, mix everything together
8-add the bay leaves, celery and stir this all together
9-bring to a boil cover, place in the oven, after one hour check the liquid level and if need be add more stock to just cover the beef.
10-after 2 hours total add the potatoes, quartered onions and carrots. Stir everything together cover and place back into the oven
11-after 40 min add the peas, stir, cover and place back into the oven for 15 minutes.
12-remove from the oven, discard the bay leaves and stir everything together.
I love serving this rustic Italian beef stew with a crusty bread.
