Having worked in France, London (England), Sao Paulo (Brazil), Chef Erwann Serene decided to settle in Vietnam where he worked in La Camargue (Ho Chi MInh city) for the past 8 years. Recently, he decided to launch his own restaurant, and worked on the La Cuisine concept, wh

ich is a mix of a home and restaurant. His idea was to cook in an open kitchen so that the clients may see how a kitchen really works. The restaurant being of a reasonnable size, which is 25 seats, he and his team can focus on both the quality of the service and the cuisine. "I am not interested in serving a lot of clients, but my aim is to serve them well, and to be close to them" says Erwann, "with an open kitchen, you can communicate with them while you work, and be opened for special requests".
