Dessert
Griddled Tw***ie Strawberry Shortcake

Ingredients:

6 Tw***ies

1 lb fresh strawberries (sliced)

2 tbsp sugar

1 tbsp butter (for griddle)

Whipped cream (store-bought or homemade)

Instructions:

1. Prepare the Strawberries:

In a bowl, combine the sliced strawberries with 2 tablespoons of sugar.

Stir well and set aside for about 10-15 minutes to allow the strawberries to release their juices.

2. Preheat the Blackstone Griddle:

Preheat your Blackstone griddle to medium heat.

Add a tablespoon of butter to the surface and let it melt.

3. Grill the Tw***ies:

Place the Tw***ies on the griddle, turning them occasionally to toast all sides.

Grill for about 1-2 minutes per side, or until they are golden brown and slightly crispy on the outside. Be careful not to overcook.

4. Assemble the Shortcake:

Place a griddled Tw***ie on each serving plate.

Spoon the macerated strawberries and their juices over the Tw***ie.

Top with a generous amount of whipped cream.

5. Serve:

Serve immediately while the Tw***ies are warm and enjoy your simple yet delicious dessert!

This version is perfect for a quick and flavorful twist on a traditional strawberry shortcake!

Tailgate entry for the Great Griddle Off 2024

Philly Cheesesteak Egg Rolls

Ingredients:

1 lb ribeye steak (thinly sliced)

1 green bell pepper (thinly sliced)

1 small white onion (thinly sliced)

8 slices provolone cheese

12-14 egg roll wrappers

1/2 cup Cheese Whiz

Blackstone Cheesesteak seasoning (to taste)

Vegetable oil (for frying and sautéing)

Salt and pepper (to taste)

Instructions:

1. Prepare the Griddle:

Preheat your Blackstone griddle to medium-high heat.

Add a tablespoon of vegetable oil to the surface.

2. Cook the Steak:

Once the griddle is hot, place the thinly sliced ribeye steak on it.

Season generously with Blackstone Cheesesteak seasoning, salt, and pepper.

Sauté until the steak is browned and cooked through (about 3-4 minutes), then remove from the griddle and set aside.

3. Cook the Vegetables:

On the same griddle, add more oil if necessary, and sauté the green bell pepper and white onion until softened and slightly caramelized (about 4-5 minutes).

Season with salt and pepper to taste.

4. Combine Ingredients:

Mix the cooked steak with the sautéed green pepper and white onion.

Add the provolone cheese on top and let it melt into the mixture.

Once everything is melted and combined, remove from the griddle and let cool slightly.

5. Assemble the Egg Rolls:

Lay out the egg roll wrappers on a flat surface.

Place a spoonful of the steak, vegetable, and cheese mixture in the center of each wrapper.

Add about a tablespoon of Cheese Whiz on top of the filling.

Roll the wrappers tightly, folding in the sides and sealing the edges with water.

6. Heat the Oil Directly on the Griddle:

On your Blackstone griddle, place a deep, flat-bottomed pan or cast iron skillet directly on the surface.

Fill the pan with enough vegetable oil to submerge the egg rolls (about 2-3 inches deep).

Heat the oil until it reaches 350°F (use a thermometer to check the temperature).

7. Fry the Egg Rolls:

Once the oil is hot, carefully place a few egg rolls into the pan on the griddle, making sure not to overcrowd it.

Fry for about 2-3 minutes per side, or until golden brown and crispy.

Use tongs or a slotted spoon to remove the egg rolls from the oil, placing them on a paper towel-lined plate to drain excess oil.

8. Serve:

Serve hot with melted Cheese Whiz inside each egg roll for a deliciously cheesy experience.

Enjoy your Philly Cheesesteak Egg Rolls cooked entirely on the Blackstone griddle!

My second entry for the Great Griddle Off 2024.

Chicken Pot Pie Puff Pastry Hand Pies that you can cook on your Blackstone griddle:

Ingredients:

1 sheet puff pastry, thawed

1½ cups cooked chicken (shredded or diced)

1 cup mixed vegetables (peas, carrots, corn)

1 cup heavy cream or half-and-half

2 tbsp butter

2 tbsp all-purpose flour

½ tsp garlic powder

½ tsp salt

½ tsp pepper

1 egg (for egg wash)

Flour for dusting

Olive oil or butter (for greasing the Blackstone)

Instructions:

Prepare the Filling:

1. Make a Roux: In a small saucepan, melt the butter over medium heat. Once melted, add the flour and stir continuously for 1-2 minutes until smooth.

2. Add Cream: Slowly add the heavy cream, stirring until the mixture thickens. This should take about 3-4 minutes.

3. Add Seasoning & Chicken: Stir in garlic powder, salt, pepper, chicken, and mixed vegetables. Cook for another 2-3 minutes until the filling is well combined and heated through. Remove from heat and let it cool slightly.

Assemble the Hand Pies:

1. Prepare Puff Pastry: Lightly dust a surface with flour and roll out the puff pastry sheet to about 1/8-inch thickness. Cut the sheet into 4-6 equal rectangles (depending on how big you want the hand pies).

2. Fill: Place 2-3 tablespoons of the chicken filling in the center of one half of each rectangle, leaving space around the edges.

3. Seal: Fold the other half of the rectangle over the filling, pressing the edges down with a fork to seal. You can also crimp the edges for a decorative look. Cut out a shape for a little more decoration if preferred.

4. Egg Wash: Beat the egg and brush the tops of the pies with the egg wash.

Cook on the Blackstone:

1. Preheat the Blackstone: Heat your Blackstone griddle to medium heat. Add a bit of olive oil or butter to grease the surface.

2. Cook the Pies: Place the hand pies on the Blackstone, cooking for 5-7 minutes per side, until golden brown and puffed. Rotate as needed for even cooking.
You can place then on parchment paper to help cook. I also use a dome to retain heat like an oven.

3. Rest: Remove from the griddle and let the pies cool for a few minutes before serving.

Enjoy your delicious, flaky chicken pot pie hand pies straight from the griddle!
