A little quirky, a LOT tasty. 😋We got a little sneak peek inside of Kuirk's Bistro and wanted to show you how gorgeous it is!!
We wish we could share how delicious it is, too, but you’re just going to have to experience that for yourself during their upcoming pop-up events. 🤓 We got to try their perfectly seasoned fries, dynomite smash burger, buttermilk pancakes and savory bacon. It was nothing short of amazing.
Owner Kourtney Erickson is turning her hobby and passion into a new eatery for Yankton, and is having so much fun doing it. She loves to experiment with new recipes and flavors, creating quirky concoctions that absolutely tickle the taste buds.
She, along with parents Lisa A. Erickson and Tony Erickson, is getting ready to open a bistro in Yankton’s Meridian District, very close to the Meridian Bridge and Riverside Park. They are planning on starting with evening hours and are currently looking for wait and kitchen staff to make it happen!
Kourtney describes Kuirk’s as a scratch kitchen where she makes home-cooked meals from fresh ingredients. She will have a few steady menu items, like birria tacos and smash burgers, but looks forward to changing up the menu often to keep providing new, unique flavors for people to try.
One of the offerings she, Lisa and Tony are most excited about is Sunday brunch! They can’t wait to invite everyone in on Sunday mornings to enjoy heartwarming breakfast dishes and quirky brunch cocktails.
It’s a work in progress, and they are all learning together what it takes to open a bistro. They are starting with a few pop-up events to test the waters and get feedback. We encourage you to follow their page for more information on these and when their official opening day will be!
