Austin Markland heads up the pastry department at Chef Robbie Jester’s InJest Events & Catering, where he crafts dessert menus for some of the area’s popular eateries, leads pastry workshops, and caters weddings and events alongside Jester.

But Markland never dreamed of being a pastry chef. In fact, for years, he actively resisted the idea. His path to culinary excellence started at Saint George’s Technical High School, where he applied for the EMS program to pursue his dream of becoming a doctor.

“I thought I was going to get into EMS,” Markland says. “I was going to become an EMT while I was studying to be a doctor.” That plan changed abruptly when his third-choice program—culinary arts—became his reality. “I did not want it at all,” he admits. “I strongly disliked it, even though I was great at it.”
