Today we were out in Valley Center installing some new roofs, and when lunchtime rolled around, we realized we were too far from the new Gilley’s to pass up the chance to try it. I’d heard mixed reviews and wanted to see for myself.
First impression walking up — the place is massive and hard to miss. The remodel is impressive. You can tell serious money went into the renovation — it’s clean, stylish, and well put together. The attached BBQ restaurant is beautiful.
I ordered the 3-meat dinner: brisket, ribs, and hot link. The brisket was solid — lean with a nice smoke ring and a good bark. The ribs were well-seasoned and tender. The hot link was decent, but nothing standout. The mac and cheese could’ve used a little more flavor, but overall, the meal was enjoyable, and the prices were surprisingly reasonable for BBQ.
We explored the rest of the building, and it’s packed with entertainment — arcades, slots, bowling, a sports bar, golf simulators — they’ve covered it all.
That said, it was pretty quiet when we were there. Hopefully, with the events and shows they have coming up, the crowds will start to show.
