Lemon 🍋 Velvet Cake
Citrus Bliss Velvet Delight
Ingredients:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 cup buttermilk
1/2 cup sour cream
1 teaspoon vanilla extract
Zest of 3 lemons
1/4 cup lemon juice
Lemon Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
Zest of 1 lemon
2 tablespoons lemon juice
1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
4. Combine buttermilk, sour cream, vanilla extract, lemon zest, and lemon juice in a separate bowl.
5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture. Begin and end with the dry ingredients.
6. Divide the batter evenly among the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
7. While the cakes cool, prepare the Lemon Cream Cheese Frosting. In a large bowl, beat cream cheese and butter until smooth. Add powdered sugar, lemon zest, lemon juice, and vanilla extract. Beat until creamy and well combined.
8. Once the cakes are completely cooled, frost and layer them with the Lemon Cream Cheese Frosting.

Warm up with a bowl of our Stuffed Bell Pepper Soup tonight! It's like the classic stuffed peppers but in a cozy, sippable form. 🍲🌶️🧀 Perfect for chilly evenings!
Ingredients:
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 ounces) tomato sauce
1 can (28 ounces) diced tomatoes, undrained
2 cups cooked rice
4 bell peppers, chopped
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Shredded mozzarella cheese for garnish
Fresh parsley, chopped, for garnish
Directions:
In a large pot or Dutch oven, cook the ground beef over medium-high heat until it's no longer pink. Drain any excess fat.
Add chopped onions and minced garlic to the pot. Sauté for about 2-3 minutes, until the onions are translucent and fragrant.
Stir in the tomato sauce, diced tomatoes (with their juice), cooked rice, chopped bell peppers, beef broth, dried oregano, dried basil, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes, or until the bell peppers are tender and the flavors meld together.
Serve the Stuffed Bell Pepper Soup hot, garnished with a sprinkle of shredded mozzarella cheese and chopped fresh parsley.

Ingredients:
1 cup fresh blueberries 🫐
2 cups all-purpose flour 🌾
1/2 teaspoon baking powder
1/4 teaspoon salt 🧂
1/2 cup unsalted butter, softened 🧈
1 cup granulated sugar
1 large egg 🥚
1 teaspoon vanilla extract 🌿
1/4 cup sour cream
Directions:
Preheat oven to 375°F (190°C).
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
Gradually mix in the dry ingredients, alternating with sour cream.
Gently fold in the blueberries.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until edges are lightly golden.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Blueberry Cheesecake Rolls🫐
Ingredients:
3 oz cream cheese, softened
1/2 teaspoon vanilla extract
2 1/2 tablespoons powdered sugar
1 (8 oz) tube of crescent roll dough
2/3 cup fresh blueberries
Directions:
Preheat oven to 375°F.
Mix cream cheese, vanilla, and powdered sugar.
Separate crescent roll dough into triangles. Spread cream cheese mix on each, top with blueberries.
Roll the dough, place on baking sheet.
Bake for 10-13 minutes until golden.
Prep Time: 10 minutes | Cooking Time: 10-13 minutes | Total Time: 20-23 minutes

Peanut Butter Cup Brownies (Makes 1 dozen brownies)
Ingredients:
3/4 cup granulated sugar
1/4 cup butter, softened
1 tablespoon water
1 cup semi sweet chocolate chips
1 large egg
1/2 teaspoon vanilla
1 cup all purpose flour
1/4 teaspoon baking soda
3/4 cup milk chocolate chips
3/4 cup creamy peanut butter

Directions
Preheat oven to 350 degrees.
In a medium sized microwave-safe bowl combine sugar, softened butter, and water. Microwave on high for about 45 seconds or until butter is melted. Stir in 3/4 cup semi-sweet chocolate chips until melted. Stir in egg and vanilla extract, mix well. Add flour and baking soda, stir until combined. Allow the batter to cool to room temperature (doesn’t take very long). Then, stir in 3/4 cup milk chocolate chips and remaining 1/4 cup of semi-sweet chocolate chips. Spoon batter evenly into Reynolds Staybrite muffin cups.
Bake for 13-15 minutes or until top is set and a toothpick inserted into centre comes out slightly wet. After brownies are out of the oven, wait for centres to fall. This will happen upon cooling. If not then tap the centres with the back of a teaspoon to make a hole for the peanut butter.
Place peanut butter in a small microwave-safe bowl. Microwave on high for 45 seconds then stir. While brownies are still war spoon about a tablespoon full of peanut butter into the centre of each brownie. Top with remaining 1/3 cup of milk chocolate and semi-sweet chocolate chips. Cool completely in pan.
Store at room temperature or in the refrigerator. To reheat the brownies just pop ‘em in the microwave for 10-15 seconds.
