Coquito de Calabaza Facilito!

1 lata de leche de coco
2 latas de leche evaporada de coco
2 latas de crema de coco
1 lata leche condensada de coco
1/2 lata de puré de calabaza o calabaza hervida fresca
2 cdtas vainilla
Canela en polvo a gusto
Pumpkin spice a gusto
Palitos de canela para añadírselos adentro de las botellas (1 palito por botella)
Opcional:
1 taza ron de coco
1 taza ron blanco

English:
Pumpkin Coquito

1 can coconut milk
2 cans evaporated coconut milk
2 cans coconut cream
1 can condensed coconut milk
1/2 can pumpkin puree or fresh boiled pumpkin
2 tsp vanilla
Cinnamon powder to taste
Pumpkin spice to taste
Cinnamon sticks to add inside the bottles (1 stick per bottle)
Optional:
1 cup coconut rum
1 cup white rum

Jamón con Piña y Guayaba 😋

Jamón ahumado con o sin hueso (puede ser jamón regular)
1 1/2 taza Nectar de guayaba
1 lata de piña.
*Añádele el jugo de la Piña enlatada a la salsa*
1/4 a 1/2 taza de azúcar morena
2 palitos de canela
8 a 10 clavitos de olor
1/2 pqte (7 oz) de pasta de guayaba
1 cebolla picada en trozos grandes
Puedes añadirle una cdta de sal a la salsa. (Se me pasó grabar esa parte)

English:
Ham with Pineapple and Guava 😋

Smoked ham with or without bone (regular ham can be used)
1 1/2 cups guava nectar
1 canned pineapple
*Add the juice from the canned pineapple to the sauce*
1/4 to 1/2 cup brown sugar
2 cinnamon sticks
8 to 10 cloves
1/2 package (7 oz) guava paste
1 onion, chopped into large pieces
You can add a teaspoon of salt to the sauce. (I forgot to record that part)

🔥You guys asked for it and here it is!😊
Preparing the Turkey with my original recipe! But this time, I stuffed it with stuffing, ground beef, bacon, and yellow (ripe) plantains. It's finger-licking good! Remember to cook the Turkey with the breast side down so all the juices make the breast moist and juicy **You will see that I did a bigger amount of the marinade in this video since I prepared it for two turkeys**

Ingredients:

1 Turkey of 12 to 15 lbs
1 tbsp cumin
1 tbsp salt
4 tbsp adobo
4 tbsp dried oregano
2 tbsp chicken bouillon powder
2 tbsp onion powder
4 tbsp minced garlic
4 tbsp sofrito
Sazon to taste
1 bunch of chopped parsley
1 bunch of chopped cilantro
3/4 cup olive oil
1/4 cup white or cider vinegar

For the filling:
2 packages of stuffing (chicken, cornbread, etc.) whatever you want!
1/2 package of bacon
1 lbs of ground beef
1 ripe plantain (the plantain to make tostones, patacón, but ripe... yellow)
1/2 diced onion
1/2 of each pepper, diced: green, yellow, orange, red
Chicken or vegetable broth to cover the mixture

🔥 375° degrees for 2.5 to 3 hours of cooking, or until the turkey reaches an internal temperature of more than 165° degrees!

‼️Tips:
-Place the turkey with the breast down so that it stays juicy!
-Add 1 beer (without flavors) of your preference before putting the turkey in the oven. This is completely optional, but please add a cup of "moisture" be it water or stock.
-Do not stuff the turkey if you ain't cooking it at the moment. When you stuff the turkey and let it marinate, you are inviting cross contamination and we must avoid that completely!!!

Arroz con Gandules y Costillas! Este arrocito quedó... a otro nivel!
Aquí los ingredientes que utilicé:
2 lbs de costillas picadas
1/4 taza Aceite de achiote
1/2 taza jamón de cocinar picado
2 a 3 cdas de sofrito
1 cda de ajo molido
1 cda de pasta de pollo (esto le va a aportar sabor, bajo en sodio) no lo tiene que utilizar es opcional
30 oz de gandules (equivalente a 2 latas)
Cilantro y recao a gusto
1 cda de cada uno: ajo en polvo, cebolla en polvo, paprika, cubito de pollo en polvo
1/2 cdta de comino
Sazon a gusto
Sal o adobo a gusto si es necesario (ajuste a su gusto)
8 tiritas de pimientos morrones
1 cerveza (la de su preferencia y sin sabores)
4 tazas de arroz grano mediano (ya lavado)
Agua hasta cubrir el arroz
2 Hojas de Guineo (opcional)

English:

2 lbs ribs pieces
1/4 cup achiote oil
1/2 cup chopped cooking ham
2 to 3 tbsp sofrito
1 tbsp ground garlic
1 tbsp chicken paste (this will add flavor, low in sodium), you don’t have to use it. It’s optional
30 oz pigeon peas (equivalent to 2 cans)
Cilantro and recao (culantro) to taste
1 tbsp each: garlic powder, onion powder, paprika, chicken bouillon powder
1/2 tsp cumin
Sazon to taste
Salt or adobo to taste if necessary (adjust to your taste)
8 strips of roasted red peppers
1 beer (your choice and with no flavors! Just plain ol' beer)
4 cups medium grain rice (already washed)
Water to cover the rice
2 Banana leaves (optional)

Preparando el Pavo con mi receta original! Pero esta vez, lo rellené con Stuffing, carne molida, tocineta, y amarillos (maduros). Quedo para chuparse los dedos! Recuerda cocinar el Pavo con la pechuga para abajo y así todos los jugos hacen que la pechuga quede a otro nivel de jugosa! **Van a ver más cantidad de este adobo ya que preparé para dos pavos**

Ingredientes:

1 Pavo de 12 a 15 lbs
1 cda comino
1 cda sal
4 cdas de adobo
4 cdas oregano seco
2 cdas cubito de pollo en polvo
2 cdas cebolla en polvo
4 cdas de ajo molido
4 cdas sofrito
Sazon a gusto
1 ramo de perejil picadito
1 ramo de cilantro picadito
3/4 taza de aceite de oliva
1/4 taza de vinagre blanco o de cidra

Para el relleno:
2 pqtes de Stuffing (pollo, cornbread, etc) el que quieras!
1/2 pqte de tocineta
1 lbs de carne molida
1 Plátano maduro (el Plátano para hacer tostones, patacón, pero maduro... amarillo)
1/2 cebolla picada
1/2 de cada pimiento: verde, amarillo, anaranjado, rojo
Caldo de pollo o vegetal para cubrir la mezcla

🔥 375° grados por 2.5 a 3 horas de cocción, o hasta que el pavo alcance una temperatura interna de más de 165° grados!

‼️Tips:
-Coloca el pavo con la pechuga hacia abajo para que esta quede jugosa!
-Añadir 1 cerveza (sin sabores) de su preferencia antes de poner el pavo al horno.
-No rellenes el pavo si no lo vas a cocinar al momento. Cuando rellenas el pavo y lo dejas marinando, estás invitando a la contaminación cruzada y debemos evitar eso completamente!!!
