🥔🍎 Potato Pancakes and Homemade Applesauce 🍎🥔

✨ Potato Pancakes

Ingredients
• 3 pounds russet potatoes, peeled and grated medium (washed, peeled and raw)
• 1 small yellow onion, finely grated
• 2 large eggs, beaten
• 1/4 cup all-purpose flour (or more if needed)
• 1 teaspoon sea salt
• Neutral-tasting oil for frying

Instructions
Grate potatoes.
Place grated potatoes in a medium-sized bowl with grated onion, eggs, flour and salt, mix. Heat 2 tablespoons of oil in a non-stick pan over medium-high heat and place a 4 oz. ice cream scoop of the mixture in the hot pan and flatten into pancakes with the back of a spoon. Fry on both sides for 3–5 minutes until the potato pancakes are golden. Place them briefly on paper towels.

Serve immediately while hot with homemade applesauce.



✨ Homemade Applesauce

Ingredients
• 4 lb. apples, peeled, cored, and cut into 8 slices
• 1 cup apple juice or apple cider
• Juice of 1 lemon
• 1/2 cup brown sugar, packed
• 1 tsp. cinnamon, more or less to taste
• Optional ingredients: Nutmeg, maple syrup, allspice, butter, to taste

Instructions
Peel, core and slice all of the apples.
Into a large stockpot, add 1 1/2 cups water and 2 Tbsp sugar. Place over medium heat and bring to a boil to dissolve sugar. Add all of the sliced apples, reduce heat to low then cover with lid and cook for 1 hour, stirring occasionally.
Mash apples to desired consistency, using either a potato masher, an immersion blender, or an electric hand mixer.

Founded by George Mason University graduate Jacob Weigel, is a donation-focused junk removal company serving Northern Virginia, Washington, DC, and Montgomery County, Maryland. After studying business management with a focus on entrepreneurship—while also running track at GMU—Jacob turned his vision into a purpose-driven business that keeps usable items out of landfills and in the hands of those who need them most. ♻️💙

Junk Runners partners with numerous charity organizations throughout the DMV so items removed from homes and businesses can be donated whenever possible. In 2024 alone, the team donated over 10,000 furniture items, keeping more than 50 tons out of landfills. 🙌

✨ Meet the Lee Family: New Faces in Cleveland Park ✨

“We moved here in 2023… just ten days before our second child was born,” says Emilie de Lozier. She and her husband, Andrew, along with daughters Penelope and Olive, always hoped to end up in Cleveland Park — just not quite that fast. 😅🏡

Even if you haven’t met them, you may know their 100-lb, bearded-since-birth dog, Cooper, a true neighborhood celebrity. 🐶💚 And yes, their very green house is hard to miss.

Emilie grew up in Chevy Chase, and Andrew is from “mythical central New Jersey.” They met 13 years ago at a party Andrew hosted — an instant, easy connection. ❤️

Now, their girls are trying it all: soccer, swimming, gymnastics… you name it. ⚽🤸‍♀️ They’re a family that goes all-in on holidays, eats dinner together every night, and never misses Friday pizza. 🍕✨ Evening walks and dance parties? Always.

They love traveling — Vermont for Christmas, South Carolina in the summer, and even Paris this year with both kids. 🇫🇷✈️ “Still recovering,” Emilie jokes.

At home, Andrew plays soccer and squeezes in golf or tennis, while Emilie wakes up at 5:30 a.m. to run. 🏃‍♀️⚽ As a family, they explore museums, the zoo, farmers markets, Rock Creek, and all the charm of Cleveland Park. 🌿🦓

By day, Andrew works in tech supporting global trade, and Emilie is a broadcast & media attorney turned partner. 💼⚖️

Our shortest day of the year marks the beginning of the winter garden season. As the weather cools, many of us instinctively retreat to cozy indoor spaces — but it’s never too late to bring a bit of nature inside. A winterberry branch, a cluster of pine cones… sometimes that’s all it takes to keep us connected. 🌿✨

You’ve likely read about the benefits of staying in touch with nature: reduced stress, better mental well-being, increased happiness. A Mayo Clinic–referenced study even shows that just 5 minutes outdoors can regulate the sympathetic nervous system — an almost immediate boost. 🌬️💚

Here in Cleveland Park, winter offers so many simple ways to reconnect. Wander the meandering trails of Tregaron Conservancy, stroll beneath the towering willow oaks of Hearst Park, or stretch your legs (or your pup’s!) across the lawns of Rosedale Conservancy. Keep an eye out for red berries still clinging to chokeberry and winterberry shrubs — bright reminders of the season. 🍂🫐

If you garden, winter is a powerful time. Leaving seedheads and fallen leaves provides essential habitat: seedheads feed birds, while leaves shelter overwintering insects — including beloved fireflies. Birds depend on these insects come spring; a pair of Carolina chickadees needs 300+ insects a day to feed their young. Incredible. 🐦✨ And the best part? Sometimes less garden work means more ecological benefit.

Winter is also the perfect time to observe your garden’s structure — the paths, evergreens, and permanent features that reveal themselves once foliage fades. It’s the ideal moment to imagine what you might add next year. Native plants like American holly, winterberry, inkberry, and eastern red cedar make a world of difference. 🌲❤️

Since launching Casey’s Special Education Services in 2022, I’ve partnered with hundreds of families across the DMV—each with their own story. And yet, parents often ask the same big, important questions. Here are some of the most common ones (and the answers I share every day):

Q: How can I support my child’s learning at home—without becoming their teacher?
A: You don’t need to recreate school. 🎒 Start with routine, connection, and curiosity. Ask open-ended questions, create a consistent workspace, and build in downtime. Emotional safety at home makes all the difference. 💛

Q: Homework is a constant struggle. Help!
A: You’re not alone. ✨ Homework battles often mean the work isn’t matching your child’s readiness. Try breaking tasks into chunks, using breaks, and praising effort over perfection. If meltdowns are routine, talk to the teacher—homework should reinforce, not overwhelm. 📚

Q: My child is disorganized and distracted. What can I do?
A: Executive functioning is learned, not innate. 🧠 Visual checklists, calendars, and timers help create structure. Celebrate the small wins, and model planning aloud as you go through your day—they’re watching! 👀

Q: I think my child may have a learning difference. What now?
A: Trust your gut. 💬 Document what you’re seeing and reach out to your child’s teacher. You can request a formal school evaluation (in writing) or pursue private testing. Early support matters—and it exists. 🌟

Q: I’m overwhelmed. How do I advocate for my child?
A: Start with strong relationships. 🍎 Ask questions, request meetings, and remember your rights: to be involved, informed, and heard. Bring a support person if needed—you never have to do this alone. 🤝

In Stephen Covey’s Seven Habits of Highly Effective People, Habit Two — “Begin with the End in Mind” — asks us to picture ourselves at the end of life. 🌅 Did we follow our dreams? Live our purpose? Working backward from that vision helps us set priorities, choose aligned habits, and create a lifestyle that supports our goals. 💫

Covey reminds us that everything is created twice — first in the mind, then in reality. 🧠➡️🌍 Just like a house begins with a blueprint, our lives begin with intentional design.

Stroll partners from Chevy Chase Village, Palisades, Kent, Spring Valley, Cleveland Park, and Avenel gathered for an unforgettable evening at Joseph Gawler’s Sons Funeral Home. Guests were immediately captivated upon entering the grand lobby, with its gleaming marble floors and sweeping circular staircase leading upstairs to the reception ✨🪜.

Patrick McCoy, President of Joseph Gawler’s Sons, and his gracious team warmly welcomed everyone as they mingled and admired artwork adorning the walls 🎨. Over the years, this historic funeral home has served many notable figures—including Presidents Reagan, Kennedy, and Bush, as well as Madeleine Albright and Jacqueline Kennedy Onassis 🇺🇸✨.

Attendees enjoyed an open bar 🍸, delicious hors d’oeuvres by Catering by Seasons 🥂🍴, and a private tour of the home. McCoy shared that the venue hosts both traditional and non-traditional celebrations—ranging from memorials featuring a rock ’n’ roll band 🎸 to a 95-year-old who celebrated his life with a “funeral birthday” so he could join the festivities himself 🎉💙.

❤️ A Sweet Slice of History: My Beloved Linzertorte

Have you ever tasted a dessert that feels like a warm hug from the past? For me, that’s Linzertorte—a rich, nutty, raspberry-filled treasure that’s as beautiful as it is delicious. Here’s my beloved recipe.

Ingredients
2 cups flour
2 cups ground hazelnuts or almonds
½ cup granulated sugar
½ cup brown sugar
1 tsp baking powder
⅛ tsp salt
1 tsp ground cinnamon
1 cup cold unsalted butter, cut into cubes
2 eggs, room temperature
1 tsp vanilla extract
Zest & juice of 1 small lemon (about 2 tbsp)
1 cup raspberry preserves
1 tbsp brandy (optional)
Powdered sugar, for dusting

Directions
You’ll need a 9-inch tart pan with a removable bottom.

In a large food processor, combine flour, nuts, sugars, baking powder, salt, and cinnamon. Pulse to mix.

Add the cold butter and pulse until the mixture looks like coarse crumbs. Add eggs, vanilla, lemon zest and juice. Pulse again to bring the dough together.

Form the dough into two balls—about 60% in one and 40% in the other. Wrap both and refrigerate for at least 1–2 hours.

Roll out the larger dough ball between parchment sheets and press into the tart pan, making sure it reaches the top edges evenly.

Spread raspberry preserves over the dough. (A splash of brandy in the fruit is lovely!)

Roll out the smaller dough ball and cut strips for a lattice—or, if the dough is a bit moist like mine was, roll little ropes between your hands and arrange them decoratively on top. Perfectly imperfect!

Bake at 350°F for 40–45 minutes. Cool completely.

Dust with powdered sugar. Serve with whipped cream or ice cream. A very rich dessert—and so very pretty.
