Gnocchi di spinaci con burro e salvia fritta…sinfonia di sapori💚🫠🥹 Resident Chef Creator @sebastian_fitarau
Ingredienti x 4 persone:
- Per gli gnocchi:
- 250 g di ricotta
- 200 g di spinaci freschi o 100 g di spinaci surgelati
- 100 g di farina 00 più extra per spolverare
- 1 uovo
- 50 g di parmigiano grattugiato
- Sale e pepe q.b.
Per il condimento:
- 50g di burro
- 10-12 foglie di salvia fresca
Procedimento:
lava bene gli spinaci e cuocili in poca acqua salata per 5-minuti finché sono teneri. Scolali e strizzali molto bene per rimuovere l’eccesso d’acqua, quindi tritali finemente.
in una ciotola, unisci la ricotta, gli spinaci tritati, l’uovo, il parmigiano, sale e pepe. Mescola bene fino a ottenere un composto omogeneo.
Aggiungi gradualmente la farina, mescolando fino a formare un impasto morbido ma lavorabile. Se l’impasto è troppo appiccicoso, aggiungi un po’ di farina in più.
Spolvera un piano di lavoro con un po’ di farina. Preleva porzioni di impasto e forma dei cilindri di circa 2 cm di diametro. Taglia ogni cilindro in pezzi di circa 2 cm per formare gli gnocchi.
Se desideri, puoi rigare gli gnocchi con una forchetta per creare delle striature che trattengono meglio il condimento.
Porta a ebollizione una pentola d’acqua salata. Cuoci gli gnocchi in piccoli lotti. Sono pronti quando salgono a galla.
In una padella, sciogli il burro a fuoco medio, aggiungi le foglie di salvia e friggile per 1-2 minuti fino a quando diventano croccanti.
Unisci gli gnocchi cotti con il burro, mescola delicatamente per condire uniformemente.
Servi gli gnocchi guarnendo con le foglie di salvia. Se desideri, puoi aggiungere un po’ di parmigiano grattugiato sopra.

If you’ve been following me for awhile, you would have gotten the hint that I am an absolute fan of miso paste and will add it to many recipes for a salty depth of flavor and punch of umami. This is no different and instead of a normal beef tenderloin for my traditional Wellington, a Short Rib just adds a deeper beefy flavor that you will immediately appreciate.

Glazed Beef Short rib on top of crispy garlic and herbed potato filled with homemade ricotta. ♥️ The most delicious starter you’ll ever try and it would be difficult to save some room for your main dish after having a few of these bad boys.
After roasting a rack of beef short ribs, sometimes I am left with burnt ends or scraps which I often put into a nice demi and stir into some delicious pasta, make ravioli or tortellini, but this time I wanted to add this saucy topping on fried potato that’s been herbed and garlicky and I’ll never go back again. How perfect is this as a starter ♥️🤌🏽
