Homemade Mayo
It’s so easy to make delicious, homemade mayonnaise! It just takes a minute or two and you will love it.

*Please note, I made a double batch of this for the video as I was using it for my homemade ranch and deviled eggs. The written recipe is for a single batch of mayo. 👇🏼

RECIPE - Makes 1 & 1/4 cups
INGREDIENTS:
1 cup avocado oil
1 room temperature egg
2 tsp Dijon mustard
1 tsp lemon juice
1/2 tsp salt

DIRECTIONS:
1. Pour the avocado oil in a wide mouth mason jar that an immersion blender will fit inside of.
2. Next, crack in the room temperature egg and then add in the remaining ingredients.
3. Place the immersion blender all the way to the bottom of the mason jar and turn it on.
4. Blend for 10 seconds without moving the blender and then slowly move it up and down to fully incorporate all of the ingredients.
5. Once it is thickened, remove the blender and store in an airtight container in the fridge.

*Since this recipe uses a raw egg and does not contain preservatives, it should last in the fridge for up to 7 days.

Pull Apart Jalapeño Popper Chicken Tacos
These were so delicious. Even my kids loved them. ☺️👏🏼

RECIPE - Makes 36 pieces
INGREDIENTS:
4 Cutdacarb Flatbreads
3 cups of rotisserie chicken, shredded
8 oz softened cream cheese
2 jalapeño peppers
5 slices of bacon, cooked & crumbled
2 cups of shredded Colby Jack cheese, divided
1 tsp garlic powder
1 small green onion, sliced

DIRECTIONS:
1. Preheat oven to 375 degrees Fahrenheit.
2. Cut the jalapeños in half and place them face down on a baking sheet. Cook them in the oven for about 15-20 minutes.
3. Remove them from the oven once tender and chop into small pieces.
4. In a bowl, combine the cream cheese, rotisserie chicken, garlic powder, bacon pieces, chopped jalapeños and half of the shredded cheese. Stir to combine.
5. Lay a flatbread out horizontally and spread 1/4 of the chicken mixture on the end closest to you.
6. Roll it up tightly. Repeat with the remaining flatbreads and chicken mixture.
7. Cut the logs into 9 equal pieces and then place them upright in a greased springform pan.
8. Top with remaining shredded cheese and then bake for 25-30 minutes.
9. Garnish with the sliced green onions, remove the outer layer of the pan and dig in!

Annual Reindeer Games!!! We have been doing these games for a few years now and the kids have so much fun! My oldest daughter and Mimi coordinate it all every year and they do such a good job. I’ll never forget the time we had to do a relay race of putting on a skirt, hat, sweater and shoes….run to the other side of the basement and then take them off. My pants came down with the skirt and everyone saw my underwear!!! They tease me about it to this day. 🤦🏼‍♀️🤣

High Protein Chicken Salad
1 serving has 25g of protein, 145 calories and just 3g of total carbs. 👏🏼

I lost 60 lb living a keto lifestyle and chicken salad was something I ate very often. Now that I have been maintaining that weight loss for almost 5 years, I have added more healthy carbs into my diet. Hence, the apples. Even with the added apple, one serving has just 3g total carbs and 2g of sugar. 🙂

RECIPE - Makes 2 servings
INGREDIENTS:
12.5 oz can of chunk chicken in water, drained
1-2 Tbsp of mayo
2 Tbsp cottage cheese
1 apple slice, diced (about 1/5 of an apple)
1 celery stalk, diced
salt & pepper to taste

DIRECTIONS:
1. Mix all of the ingredients together in a bowl and enjoy!

NUTRITION: 1 serving | 2.5g net carbs | 3.2g total carbs | 0.5g fiber | 145 calories | 25g protein | 4g fat | 2g sugar

‘Twas the night before Christmas! We had a busy day today. We decorated cookies, ran some last minute errands, made Pot Roast for dinner, went to Christmas Eve service at church, drove around looking at lights and watched Home Alone in matching pj’s. I’m exhausted. Good night! ♥️🎄

Christmas Tree Pepperoni Rolls 🎄🍕
These were gone in minutes. My girls love them!! I did hear them say “save 2 for dad!” ♥️☺️

RECIPE - Makes 16 rolls
INGREDIENTS:
16 Rhodes Dinner Rolls
16 slices of pepperoni
3 mozzarella cheese sticks
2 Tbsp butter
1 tsp minced garlic
1/2 tsp dried parsley
32 mini pepperonis
avocado oil spray

DIRECTIONS:
1. Grease two 9x13” baking dishes with cooking spray.
2. Divide the rolls amongst each pan, spreading them apart.
3. Spray the rolls with cooking spray, cover tightly with plastic wrap and place in a warm location. *I placed mine in my office since it’s the toastiest room in the house.
4. Let them rise for a few hours. *Mine took 4 hours.
5. Cut the cheese sticks into small chunks.
6. Pull the plastic wrap back and then spread a roll out with your hands.
7. Fill it with 1 chunk of cheese and 1 slice of pepperoni.
8. Close the roll making sure to completely cover the cheese and pepperoni.
9. Place the sealed side down into the pan.
10. Repeat with remaining rolls.
11. Cover with the wrap and place in a warm location to rise again. *This takes about 2 more hours.
12. Preheat oven to 350 degrees F.
13. Line a large baking sheet with parchment paper.
14. Place the rolls onto the sheet in a tree shape. I used one roll for the trunk, 5 for the bottom row, 4 for the second row, 3 for the third row, 2 for the fourth row and 1 for the top.
15. Melt the butter in a bowl and stir in the parsley and garlic.
16. Brush the garlic butter all over the rolls and then top each one with 2 mini pepperonis.
17. Bake for 15 minutes and then enjoy!!

Pizza Stuffed Spaghetti Squash Rings
I will only make spaghetti squash like this from now on! It reduced the cooking time and was the perfect portion. 👏🏼

RECIPE - Makes 4 rings
INGREDIENTS:
1 medium spaghetti squash
avocado oil spray
s&p to taste
1/4 cup Rao’s pizza sauce
1/4 cup good culture cottage cheese
5 slices of turkey pepperoni, quartered
1/3 cup shredded mozzarella cheese
crushed red pepper flakes
dried oregano

DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. Use a fork to poke some holes in the squash.
3. Microwave it for 3 minutes to soften it a bit.
4. Trim the ends off and then cut it into 4 rings.
5. Scoop out the inside guts and seeds (like carving a pumpkin) and then place them on a parchment lined baking sheet.
6. Spritz with avocado oil spray and season with salt & pepper.
7. Bake for 20 minutes.
8. Remove from the oven and then use a fork create “noodles” by pulled the sides toward the center.
9. Add 1 Tbsp of cottage cheese and 1 Tbsp of pizza sauce to each one and mix it in with the noodles.
10. Top with pepperoni, mozzarella cheese, oregano and crushed red pepper flakes.
11. Bake for another 15-20 minutes.

Chocolate Peanut Butter Fudge
I made another batch of my Peanut Butter fudge but decided to add a layer of chocolate on the top. It is absolutely delicious!!

RECIPE - Makes 30 pieces
INGREDIENTS:
1 stick salted butter
2 cups natural peanut butter
1 & 1/4 cups powdered monkfruit sweetener
2 tsp vanilla extract
7 oz bag of choczero milk chocolate baking chips

STEPS:
1. Put the butter in a microwave safe bowl and microwave for 30-60 seconds.
2. Stir in the remaining ingredients until smooth and creamy.
3. Place the peanut butter mixture in a greased, parchment lined or silicone 8x8” dish.
4. Freeze or refrigerate until semi-solid.
5. Melt the chocolate in a microwave safe bowl in 30 second intervals at 50% power. (It took mine about 90-120 seconds to melt.)
6. Pour the melted chocolate all over the peanut butter and then refrigerate until hardened.
7. Cut into 30 pieces and store in an airtight container in the fridge or freezer.

Sea Salt Chocolate Bark
I love making these during the holidays. It’s nice to have something to turn to when that sweet tooth hits! I used ChocZero milk chocolate baking chips for these but you can use your favorite sugar free chocolate. ❤️

RECIPE - Makes 35 pieces
INGREDIENTS:
1/3 cup coconut oil
1 bag of ChocZero milk chocolate baking chips
2/3 cup crushed almonds
2 tsp coarse sea salt

STEPS:
1. In a saucepan over medium-low heat, melt the coconut oil and baking chips.
2. Lay a piece of parchment paper on a baking sheet.
3. Spread the crushed almonds on the parchment lined baking sheet.
4. Pour the melted chocolate over the almonds.
5. Let it cool in the fridge or freezer for 2 minutes.
6. Top with sea salt and then continue to cook in the fridge or freezer until hardened.
7. Cut into squares and store in an airtight container/bag in the fridge or freezer.

Homemade Dog Treats 🎄
Your dogs want you to bake them some Christmas cookies too!

Jack, Bailey and Kevin helped me make Christmas dog treats and it was a blast. I made them two different ways. One was in a Dash dog treat maker and the other was in a silicone Christmas tree mold in the oven. THE DOGS LOVED THEM!!! *I am storing ours in an airtight container in the fridge.

🥜I used all natural peanut butter for these. Be sure not to give your pups any kind of peanut butter with xylitol in it because it is poisonous for them.

RECIPE - Makes 6 trees and 6 bones
INGREDIENTS:
1 cup whole wheat flour
1 egg
1/2 cup natural peanut butter
2-3 Tbsp bacon pieces
1/2-1 ripe banana
4 oz unsweetened applesauce

STEPS:
1. Preheat the dog treat maker (if using) or your oven to 350 degrees Fahrenheit.
2. In a bowl, mix all of the ingredients until well combined.
3. Grease the dog treat maker or silicone mold with bacon fat for extra flavor!
4. Fill each mold and then cook for 3 minutes in the dog treat maker or 12 minutes in the oven.
*Let them cool completely before feeding to your dogs. Store in an airtight container in the fridge.

Good morning!! We hosted Derek’s family for Christmas yesterday. It went well and Derek looked so happy! I’ll be honest and say I don’t love hosting. I am not the hostess with the mostest. 🤣 I get stressed with all of the random cleaning one feels needs done before a party. Do you guys feel me on this one?! And can we talk about how husbands help with weird things instead of what really needs done? Like doing a deep sweeping of our upstairs bedroom (where no one was going to go and I kid you not, for like a good 30 minutes) instead of sweeping the living room like I asked or caulking some tiny spots in the kitchen and then getting said caulk on the walls to which it wouldn’t come out and I didn’t have time to paint over it or hanging the wreath above the garage that I asked him to hang a month ago? I know it’s not just my husband. I got some some funny messages last night about what their husbands like to do when it’s time to clean the house….organize the garage, mow the lawn that didn’t need mowed, blow leaves, etc. 🤭🤪 But rest assured, he did finally get the living room swept and he did a very good job. lol ♥️

One of my girls doesn’t like antique stuff and has said to me “mom, this house was so modern when we moved in and you ruined it with all of this old stuff.” So in the back of my head, I was a little worried about what they would all think of my decor and all of my “old” stuff. But his aunts were so sweet saying how pretty our house is and that they loved how I decorated it. It made me feel so good! Derek’s uncle said “so, you like antique stuff, huh?” lol. Yes, yes I do. 🤣☺️♥️ They even noticed some of their late sister’s (Derek’s mom who passed away years ago) Christmas decorations.

Anyways, it was a great night, I think they all had a good time and I got some good sleep last night!! I only got a few photos so here they are. ☺️🎄

Chicken, Broccoli & Bacon Roll Ups
This recipe is sure to be a crowd pleaser! My whole family loved it.

RECIPE - Makes 9 rolls
INGREDIENTS:
3 Cutdacarb Flatbreads
Filling:
1 rotisserie chicken shredded (2-3 cups)
1 bag of frozen broccoli, steamed (1.5-2 cups)
1 cup of ricotta cheese
1/4 cup shredded Parmesan cheese
1/4 cup cooked bacon crumbles
Sauce:
1 cup heavy cream
3 Tbsp butter
2 Tbsp cooked bacon crumbles
2 tsp minced garlic
1/3 cup shredded or grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes
Toppings:
1/2 cup shredded mozzarella cheese
2 Tbsp cooked bacon crumbles

DIRECTIONS:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a small sauce over medium-low heat, melt the butter and garlic.
3. Pour in the heavy cream and then add in the remaining sauce ingredients: Parmesan, Italian seasoning, salt, pepper, red pepper flakes & bacon crumbles.
4. Stir over medium-low heat until the cheese is melted and then set aside.
5. In a large bowl, mix the Filling ingredients: shredded chicken, steamed broccoli, ricotta cheese, bacon crumbles & shredded Parmesan cheese.
6. Working with just one flatbread at a time, lay it horizontally on a cutting board.
7. Place 1/3 of the chicken mixture on the long end closest to you and then roll it up tightly.
8. Repeat these steps two more times for a total of 3 rolls.
9. Cut those rolls into thirds for a total of 9.
10. Place them in a greased 9x13 baking dish and then pour the Alfredo sauce over top.
11. Sprinkle on the mozzarella cheese and 2 Tbsp of bacon crumbles and then bake for 25 minutes.

NUTRITION: 1 roll | 5.4g net carbs | 7.6g total carbs | 2.2g fiber | 307 calories | 18g protein | 21g fat | 0.4g sugar

Last day of school before break!! This week has been spirit week. Today was twin day and the older of the two (on the right) was going to twin with her friends. However, she woke up early this morning, woke her little sister up and picked out outfits so the two of them could twin with each other. So sweet! ♥️♥️

We have a lot to pack in before Christmas! We still want to drive around and look at Christmas lights, go ice skating at tower city and we are hosting a party for Derek’s family. Hope you all have a great weekend!!
