Egg Roll in a Bowl
Sharing this recipe as it is one of my favorites and most popular. This recipe can be found in my first cookbook and meal plans as it is something I ate often while losing my weight.

RECIPE- Makes 5 cups
Ingredients:
1 lb ground pork
1/2 Tbsp minced garlic
1/2 tsp red pepper flakes
2 tsp chili oil (or you can use sesame oil)
1 Tbsp sambal oelek
1 tsp ground ginger
16 oz bag coleslaw
1/4 cup liquid aminos
2 eggs
1 Tbsp sugar free ketchup
1 Tbsp zero sugar honey
1 Tbsp rice vinegar
1/2 Tbsp golden or powdered monkfruit sweetener

Directions:
1. In a skillet over medium heat, scramble the ground pork. Drain excess grease if needed.
2. Next, add in all of three ingredients except for the eggs.
3. Stir it all together and cook for about 5 minutes, stirring often.
4. Create a hole in the middle and crack the eggs in the skillet.
5. Scramble until cooked through and then stir to combine.

Million Dollar Chicken Bake
This easy weeknight meal is going to be requested by your family again and again! It’s that good! 🥳
*I served brown rice as a side dish and spooned the leftover sauce from the pan on top of it.

RECIPE - Makes 4 servings
INGREDIENTS:
6 slices of bacon
4 large thin sliced chicken breasts
1 & 1/4 cup shredded Colby Jack cheese
4 oz cream cheese
1/4 cup mayo
2 Tbsp Kristy’s ranch dressing
2 green onions, sliced

DIRECTIONS:
1. Place the bacon on a parchment lined baking sheet and put it in the cold oven. Preheat oven to 400 degrees F and cook the bacon for 15 minutes or until cooked through.
2. Remove from oven and lower heat to 375.
3. In a bowl, mix together the cream cheese, mayo, ranch dressing, 1 cup of Colby Jack cheese, green onions (save the green pieces for garnishing after cooking) and the bacon (crumbled.)
4. Place the chicken in a greased 9x13” baking dish and then spread the cream cheese mixture over top.
5. Top with remaining cheese and back for 25-30 minutes or until the chicken as reached an internal temperature of 165. Broil for a couple minutes to get it nice and browned on top if desired.
6. Garnish with the chives.

High Protein Lasagna
I’ve been wanting to make this ever since I first tried the viral cottage cheese flatbread. I finally did and it was so delicious!! 😋👏🏼

RECIPE - Makes 9 pieces
INGREDIENTS:
2 - Cottage Cheese Flatbreads 👇🏼
1 lb ground pork sausage
1 & 1/2 cups Rao’s marinara sauce
1/2 cup blended cottage cheese
1 egg
1 tsp Italian seasoning
10 slices of provolone cheese
2 Tbsp grated Parmesan cheese
1 oz fresh mozzarella cheese
1 tsp dried parsley
1 Tbsp fresh basil, chopped

DIRECTIONS:
1. Preheat oven to 350 degrees F.
2. Make the 2 cottage cheese flatbreads (recipe below.)
3. While the flatbread is cooking, scramble the sausage until cooked through.
4. Stir in the marinara sauce and then set aside.
5. In a small bowl, stir the cottage cheese, egg and Italian seasoning until well incorporated.
6. Once the flatbread is done, cut each one into thirds.
7. Grease a 9x13” baking dish and then add 1/3 of the sauce mixture into the bottom of it.
8. Next place 3 of the flatbread noodles in followed by half of the cottage cheese mixture.
9. Place 4 slices of provolone on next and then repeat those layers again using up the rest of the ingredients.
10. The final layer should be sauce, Parmesan, fresh mozzarella chunks and parsley.
11. Bake at 350 for 30 min.

NUTRITION: 1 piece | 2.7g net carbs | 3.1g total carbs | 0.4g fiber | 361 calories | 24g protein | 27g fat | 2.3g sugar

COTTAGE CHEESE FLATBREAD:
1/2 cup low fat cottage cheese
1 large egg
1 Tbsp grated Parmesan cheese
1/4 tsp garlic powder

DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit.
2. Blend the ingredients until smooth (about 30 seconds.)
3. Spread the mixture out into a rectangular shape on a parchment lined baking sheet. *Mine measured 7”x10”.
4. Bake for 30 minutes or until slightly browned.
5. Let the flatbread cool for a few minutes before removing from the parchment paper.

It was a good day in the garden!! Derek and I worked from afternoon until evening. He dug 13 holes for the fence he’s building around my garden.

I finished planting the 2nd garden. We got hit pretty hard a couple nights ago with a storm. I had laid out my vegetables where I wanted to plant them but then I tired out and didn’t finish. They took a major beating with that storm and I lost quite a bit.

It’s ok though. I planted seeds in their place instead. The seeds I planted were green beans, sugar snap peas, carrots and radishes. Hopefully they’ll do well.

Chocolate Peanut Butter Clusters
This sweet treat is simple to make and oh so delicious! I made it in the crockpot but the microwave will work just fine too.

RECIPE - Makes 18
INGREDIENTS:
1 bag of ChocZero milk chocolate chips (196g)
1/4 cup Crazy Richard’s peanut butter
1/2 cup salted peanuts
1/2 cup pecans

Directions:
1. Turn your crockpot on and add in all of the ingredients.
2. Stir constantly until melted.
3. Scoop 18 clusters onto parchment paper and then pop them in the fridge to set.
*Store in refrigerator.

This is my favorite thing to make every summer! I bought the antique wash tubs last year. I found the different sizes at various antique stores.

I filled them with styrofoam and soil and then got to planting. It was easily the most gorgeous thing on my deck. I did different plants/flowers this year and can’t wait to see how it fills out!

I used: portalaca, baby sun rose, vinca vine, sweet potato vine, macaronia, lantana, alyssum & sedum.

These were fun to eat and so delicious!

RECIPE - Makes 6
INGREDIENTS:
6 Cutdacarb Flatbreads
1/4 lb ground beef
1/4 lb ground Italian sausage
1 cup Rao’s marinara sauce
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes
1 egg
3/4 cup ricotta cheese
1 tsp garlic powder
1/2 cup shredded mozzarella
6 slices of provolone cheese
dried parsley

DIRECTIONS:
1. Preheat oven to 375 degrees Fahrenheit.
2. Scramble the beef and sausage in a skillet over medium heat until cooked through. Drain excess grease.
3. Stir in the marinara sauce, Italian seasoning and red pepper flakes. Remove from heat.
4. In a bowl, mix together the ricotta cheese, egg, garlic powder and mozzarella cheese.
5. Working with just one flatbread at a time, cut it in half lengthwise.
6. Place one of the pieces on a parchment lined pan horizontally and then the other piece over top in a cross shape.
7. Spread a spoonful of the ricotta mixture in the center and then a spoonful of the meat sauce over top.
8. Fold the bottom piece sides in and then the top piece sides in and place a slice of provolone on top to hold it in place.
9. Repeat with remaining ingredients. Lift each slice of cheese off and spritz with avocado oil spray and then place the cheese back on.
10. Garnish with parsley and then bake for 20 minutes. Cut in half and enjoy!

Steak Street Tacos 🌮
My oldest daughter loved going with her roommate to a local Mexican restaurant near her dorm room. She got steak street tacos and asked me to recreate them. I failed the first time. Then, I went to the restaurant with her when we picked her up for the dinner and actually tried the tacos. I was like “aha…I can make these!” 👏🏼
They turned out fabulous and we all loved them.

*To make these lower in carbs, use zero carb street taco shells instead.

RECIPE: Makes 12 tacos
INGREDIENTS:
1 & 1/2 lb skirt steak
12 corn tortillas
diced onions
chopped cilantro
fresh limes
Marinade Ingredients:
1/4 liquid aminos (or soy sauce)
3 Tbsp lime juice
2 Tbsp brown monkfruit sweetener (or brown sugar)
1 Tbsp fresh chopped garlic
1/2 Tbsp cumin
2 tsp chili powder
1 tsp paprika

DIRECTIONS:
1. Place the steak in a gallon ziplock bag with all of the marinade ingredients.
2. Squeeze the bag a few times to mix up the marinade and coat the steak and then place in the fridge for at least 1 hour.
3. Cut the steak into small pieces and then cook over medium heat on a griddle or in a skillet.
4. Once just about cooked through, begin warming the tortillas on both sides in a small amount of butter.
5. Place two tortillas on top of each other, add on some of the steak and a little bit of onions and cilantro.
6. Lastly, squeeze on some fresh lime juice and enjoy!

*Use zero carb street taco tortillas to shave off 12g carbs per taco!! Be sure to only use one tortilla per taco though as these are thick and do not break easily like corn.

NUTRITION: 1 taco with 2 corn tortillas | 12.5g net carbs | 16g total carbs | 1.5g fiber | 242 calories | 18g protein | 12g fat | 1.6g sugar | 2g sugar alcohol

Cabbage & Kielbasa
This is one of my favorite meals! I especially like cooking it on the griddle. It’s fast and easy. When buying my kielbasa, I always look for the one that has the least carbs. I buy links with 1g carbs per 2 oz.

RECIPE - Makes 6 cups
INGREDIENTS:
1/2 of a large head of cabbage, chopped
14 oz Polska Kielbasa, sliced
1/2 of an onion, diced
3 slices of bacon, chopped
black pepper to taste
2 1/2 Tbsp butter

DIRECTIONS:
1. Heat up the griddle or skillet over medium heat.
2. Begin cooking the bacon and onions in a little bit of avocado oil or 1/2 Tbsp butter.
3. Once they are halfway cooked, add in the cabbage along with 2 Tbsp of butter.
4. Cook over medium heat until just about tender and then add in the kielbasa and black pepper.
5. Cook until the kielbasa is browned to your liking and then enjoy!

Hey guys! I haven’t had much time to post recipes these past couple of days but I’ll be sure too share one this evening. I’ve been busy getting my garden ready for summer. It’s hard work but so rewarding. Derek tilled my garden and then created a second garden so I’d have more room. Today, I mapped out where I wanted everything to go. I got one garden planted. I’ll work on the second one tmrw.

Remind me when I complain of a sore head and bruise on my shin that I hurt myself in the garden. I’m at that age where I get a random bruise or whatever and I think “where on earth did that come from?!” Derek said I need to start keeping notes when I get hurt. 🤭🤦🏼‍♀️
