These ✨Cacao Date Energy Balls✨ (recipe below) are some of the easiest and healthiest treats I’ve made! If you’re focused on your diet for the summer, these are a MUST! Ingredients:• 1 cup pitted dates• 1 cup almonds • 1/3 cup raw organic cacao powder• 1/3 cup coconut oil • 1/2 cup shredded coconut • 1 Tbsp chia seeds • tsp of sesame seeds • Pinch of Salt…Easy Method: 1. Soak dates in warm water for 15 minutes to soften. 2. Add nuts, cacao, shredded coconut, coconut oil, and chia and sesame seeds to a food processor and mix. 3. Add dates and pinch of salt to the mix and blend again. 4. Let the mixture sit for 10 mins. 5. Roll the mixture into 1” balls. 6. Roll the balls in shredded coconut. 7. If you’re new to smoking meat, Baby Back Ribs are a perfect cut to start with. They are very forgiving and inexpensive. Here is the step-by-step process: 1. Remove Membrane from the bone side 2. Square up your rack for a more even cook (remove uneven end pieces) 3. Generously season with a pork rub on all sides 4. Smoke at 225-250°f for 3 hours 5. Wrap in foil w/ 3 tbsp butter, honey, more rub and 1/2 cup apple juice for 1 hour 6. Remove foil, coat woth BBQ sauce on all sides and smoke another 15-30 minutes until tacky. Pro Tips!!!*use a butter knife and get under the center of membrane for removal. Use a paper towel with your free hand to remove in one pull. *don’t open the grill lid! Every time you open the lid it will increase cook time 5-10 minutes. If you’re lookin’, it ain’t cookin’!*the meat is done when it has a slight bend when lifted from the center and the meat cracks slightly but is NOT fall off the bone. Internal temp should be 200°f. The sweet cinnamon heat was incredible and goes great on wings, ribs, and even desserts!I smoked this bone-in Pork Butt hot and fast between 300-325°f over indirect charcoal and hardwood using the snake method. Once the internal temp reach 170°f I wrapped in foil and threw it back on the grill. Once the internal reached 200°f, I removed from heat and rested for 1 hour.
