Cinnamon Nut Rolls
1 1/2 to 2 cups pecans or walnuts
24 frozen dinner rolls (such as Rhodes)
1 cup brown sugar
1 stick vegan butter
1 small package vanilla “cook and serve” pudding
2 teaspoons plant milk
2 teaspoons cinnamon
Butter or spray 9 X 13 cake pan. Spread lightly chopped pecans or walnuts on bottom of pan. Arrange the dinner rolls on top of nuts in 6 rows of 4.
Melt the brown sugar, butter, pudding mix, milk and cinnamon in a saucepan. Pour melted mixture evenly over rolls. Spray a sheet of wax paper wit
Paul Youd
Paul Youd might be the most inspiring, impressive man you'll ever discover. Not only is he an ethical vegan who performs street activism with AV and WTF but he also happens to run ultra marathons in his late 80s when most men his age can barely walk! Paul is also a veteran who served his country in the RAF and Vietnam.
At age 60, Paul made the transition to a 100% plant based diet after learning about the abuses animals face in the meat, egg and dairy industries. Subsequently, he discovered that a plant based diet made his crippling osteoarthritis pain disappear.
During the COVID-19 lockdown Paul took up running for charity and has now completed 11 ultra marathons raising thousands of pounds for the vegan charity Viva! as well as local animal sanctuaries.
So what's next for Paul? His goal is to complete one million press-ups by his 90th birthday and 100 ultramarathons by his 100th birthday!
