Today’s late lunch was a BLT, Chicken and cucumber club sandwich made with good old fashioned Wonder Bread😊with a side of artichoke hearts. Had to have a Cherry-Coke, which I haven’t had in ages. Completely satisfying and delicious. 😋😋Me Agape ❤️Chefs.🌴

Hi everyone. Haven’t posted in awhile . Been busy cooking take-out dinners for friends and catering too . But here’s my Thanksgiving Dinner which was thoroughly enjoyable.
Didn’t do the whole Turkey since it was just myself and my daughter. Instead, stuffed a turkey tenderloin with chorizo, onions and mushrooms. Candied yams, bread stuffing with cranberries, mushroom wine and cream gravy, mashed potatoes, cranberry sauce with port wine, mandarin oranges, apple and spices, and pomegranate. Peace de resistance—bourbon pumpkin pie. Comforting and delicious. 🍷💕🌴😋 Margaritas, too❤️

Friday night dinner for friends.

Started cocktail hour with fried green tomatoes and Remoulade sauce. Onto roasted beets and beet tops with mint, garlic, green onion and orange slices laced with an orange-balsamic dressing. Also a garden salad with a honey-balsamic, sprinkled with French Feta. Tomato ciabatta and jalapeño-tomato ciabatta to accompany.
Next the Entrée —Beef Stroganoff made with Vermouth, Sherry, sour cream, buttermilk, a couple pieces of sun dried tomatoes, mushrooms. Plus buttered noodles and broccoli . I added a fresh grated beet-horseradish mix for the steak bites . Desserts—co
Coconut Cream pie and Greek rice pudding. Delicious night. 😋

Started Dinner this evening with Bruschetta and ricotta cocktail hour. Then on to a fabulous strip steak cooked the way I like it—so it doesn’t say “Moo”. (Others had rare). Twice-stuffed potato whipped with cheeses and other tasty things, topped with bacon bits. Added,in season Brussels, charred, drizzling with evoo, balsamic, and sprinkled Gorgonzola.
Dinner was just twice as good❤️❤️. Me Agape, Chefs

Monday night dinner —
Eggplant Rollatini in tomato sauce with mushrooms. Roasted eggplant slices layered with mushrooms, my homemade ricotta, mozzarella, basil, parsley and Parmesan. Rolled and toothpicks in place and the rolls take the plunge in a wine tomato sauce to simmer and marry. Farfalle tossed in butter, and herb crostini to accompany. A glass of 18 Crimes Cabernet Sauvignon to add to all this deliciousness. Hope your week begins as tasty as mine. 🍷💕🌴😋😊. Me Agape, Chefs

10/26/23. Last Night,
“Imam Bayildi”, a stuffed vegetable and eggplant dish, which migrated to Greece from Asia Minor— Greek name, Anatolia, now Turkey ( a little history). Also the use of molasses, to sweeten, comes into play for this dish .A side of multi colored pearl couscous, to compliment, sautéed with butter, onion, garlic and added chicken stock. A cool topping of whipped Feta, Greek yogurt, mint and dill. Ciabatta freshly baked, Cesar salad, a Fall butternut squash bisque, and toasted seeds with curry in for the swim. The peace de resistance—my creamy rice pudding with sultanas and cinnamon for the finish. Happy cooking, Chefs. 🍷😋💕🌴Me Agape ❤️

Lunch today is quite simple but extraordinary.
Green squash, sweet onion, garlic, evoo, cherry tomatoes, cauliflower, basil leaves, parsley, fresh oregano leaves, splash of lemon, sprinkle salt and pepper. Placed under The broiler to melt the fresh mozzarella. Side of yesterday’s ciabatta toasted with garlic flavored evoo. Everything tossed in the hot sauté pan except the cheese. Easy peasy 💕😋😋🌴. Yesterday we had garden salad with a balsamic-honey vinaigrette, bourbon-honey glaze salmon, cooked in a cast-iron skillet with sesame oil. Perfection!! Accompanied with ciabatta, grilled Baby Bok Choy and a touch of garlic, laced with soy sauce. Plus, Black Pearl Rice with sesame oil and soy. Also served with rice pilaf. Pinot Grigio to go with. Coconut Custard pie for the finish. Contentment is putting it mildly. Me ❤️Agape, Chefs.

Friday’s dinner was one
of my many favorites—my gourmet meatloaf wrapped in hickory smoked bacon.
Started with a green garden salad laced with my honey-balsamic dressing and Feta crumbles, and freshly baked Herb and plain ciabatta.
Ground lean beef combined with, onions, carrots, celery, Italian , plus couple of slices of white bread soaked in milk, fresh parsley, minced garlic, and small amount of tomato sauce, eggs, milk, beef bouillon, kosher salt and black pepper, a few other things which I’ll keep to myself. Then wrapped in bacon and brushed on Gravy Master to seal in the juices. Topped with onion and mushroom bits and baked. Drippings added to the velvety red wine and mushroom sauce. Served with creamy gold mashed potatoes and grilled cauliflower steaks drizzled with a lemon-butter-evoo sauce and sprinkled with fennel frond leaves. Glass of Cabernet Sauvignon to go with and a dessert (not shown) of Syl’s Mamma’s Greek Rice Pudding (it’s like eating ice cream). Plus earlier, enjoyed cocktails with friends.
A deliciously, lovely evening.

Tonight is Beef Barley Soup with everything except the kitchen sink🤣. Served with dry Sherry and, freshly baked this morning, Brioche rolls. First batch made with white flour. Second batch combined whole wheat and white. 😋😋I Love Soup.

Sunday dinner
Chicken breast marinated with cumin, oregano, garlic, lemon, extra-virgin olive oil, salt and pepper, red pepper flakes. Served this with sautéed smashed gold potatoes covered with chimichurri, and shallow fried zucchini, lightly dipped in corn starch, and sprinkled with lemon. Feta folded in pita bread to accompany the flavorful grilled chicken. Ahhh, and my glass of Pinot Grigio .

Made spicy Green Cabbage soup on a cloudy Saturday afternoon with evoo, carrots, celery, red onion, garlic, red bell, jalapeño, Sultanas, fresh tomato, shiitake, fresh fennel bulb, mint, parsley, dill, bay leaf, lemon wedge, green onion, apple, chicken stock, wine, kosher salt and black pepper, while potato for added flavor. Plated with hot Italian sausage and toasted crusty bread. Topping it with sherry adds the piano to the orchestra—magnificent. 😋🍷🌴💕. I love soup. Happy weekend everyone.
