Blackened Florida Grouper Sandwiches

INGREDIENTS
- 4 (6-ounce) Florida grouper fillets
- 2 tablespoons blackened seasoning (your favorite)
- 4 bread rolls, toasted
- 1 cup lettuce, shredded
- 1 large Florida tomato, sliced
- 1 lemon, juiced
- Oil for cooking
- ¼ cup Florida Avocado Remoulade Sauce

PREPARATION
Preheat a large sauté pan or cast-iron skillet over medium-high heat. Generously season fish with blackened seasoning on both sides. Add oil to pan and sauté fillets for 2 to 3 minutes per side or until cooked through. Squeeze lemon juice over the cooked grouper fillets and remove them from the heat.

To assemble the sandwiches, spread an even amount of the remoulade on the inside of each bun. Add an even amount of romaine lettuce and tomato to the bottom of each bun. Add a blackened grouper fillet to each of the dressed buns. Add another dollop of remoulade sauce if desired and top with the top of the bun. Serve sandwich warm with extra remoulade on the side. Enjoy!

September is the month to start looking ahead to the fall fishing season! It's the time of the year that Snook start moving back into the backwater flats after a long breeding season. Redfish will also be abundant and still prefer cut fresh bait on the bottom in early morning or late afternoon. Flounder action picks up this month, as well, and a light 1/8th ounce jighead tipped with a live shrimp is a sure bet when fished along the edges of channels or around docks. Spanish Mackerel will start the migration back into the gulf, but still plenty of action to be had with these toothy critters on your incoming tides.

September marks the start of cooling off, but it is still a hot month with water temperatures in the mid-80s. At some of the bridges like the Gandy, Howard Franklin and Courtney Campbell, the Black Drum will still be around. Mackerel will also be around the bridges, range markers and reefs between the Skyway and Gandy bridges. Speckled Trout will be in 6-8 feet of water over grassy & shell areas with good sand holes. Snook will be under docks, under the mangroves and will bite best when the water is moving. Look for Redfish to be under the mangroves but also on the flats in 3-5 feet of water near oyster mounds and on grass flats with plenty of sand holes.

Seared Florida Tuna Steaks with Mediterranean Relish and Herb Oil

INGREDIENTS
- 4 (6-ounce) Florida tuna steaks
- 1 cup Florida grape tomatoes
- 1 cup Kalamata olives, pitted and sliced
- 3 cloves garlic, minced
- 2 tablespoons capers, drained
- 2 tablespoons fresh herbs (basil and parsley), hand torn
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- 1/2 cup feta cheese, crumbled or diced
- Sea salt and fresh ground pepper, to taste
- Florida Herb Oil, for garnish if desired

PREPARATION
Combine and mix together the olives, garlic, tomatoes, capers, herbs, lemon juice, olive oil and feta cheese. Taste for seasoning, adjust with salt and pepper if needed, and set aside. Preheat a large saute pan and add 1 tablespoon of olive oil. Season both sides of the tuna with salt and pepper and place into pan. Sear on both sides for 1 to 2 minutes (for rare to medium-rare). To serve, place tuna steak on plate and top with the relish. Garnish with herb oil. Enjoy!

Hottest month of the year, so the "early or late bird, gets the worm". Look for the best bites to be between daybreak and hour before sunset. Bridge fishing is at its peak, not only for us, but for the fish. Cut bait on the bottom for big redfish and snook on the flats and cut fresh blue crabs for black drum under the are bridges as long as the tide is moving. Night fishing around the dock lights will produce some oversize trout and snook; try live large shrimp or small greenback sardines. Mangrove Snapper are here and will entertain everyone using live shrimp around artificial reefs and bridges.

August is typically one of the hottest months but that does not stop the fish from eating, they are just looking to get out of the heat, which they do in several ways. They will get under docks, mangroves, bridges for the shade or they will get into deeper water also. The snook and redfish will be under the docks and mangroves hiding from the sun once it gets high in the air. The speckled trout will be in 5-7 feet of water over grass bottom with sand holes. Cobia and sharks are not bothered by the heat as much and will cruise the flats looking for their next meal but you can also find them out around the range markers and channel markers and when the tide goes slack on the flats head out into the bay!

Green Goddess Pan-Fried Florida Grouper

INGREDIENTS
- 4 (6 to 8oz) fresh Florida Grouper fillets
- 1/4 cup whole milk (or low-fat milk)
- 1 cup plain Greek yogurt
- 3 tablespoons fresh herbs (such as thyme, rosemary, parsley and/or dill), divided
- 1 garlic clove
- 1 lemon, juiced
- 1 teaspoon all-purpose seasoning, plus more to lightly season fish
- Sea salt and fresh ground pepper, to taste
- 2 cups panko or regular unseasoned breadcrumbs
- 1 tablespoon cooking oil

PREPARATION
Prepare dressing by adding milk, yogurt, 2 tablespoons fresh herbs, garlic, lemon juice, all-purpose seasoning, salt and pepper to a blender and blending thoroughly. Taste and adjust seasoning with salt and pepper. Set the dressing aside (or store in refrigerator) until ready to use, reserving 2 tablespoons for breading.

Preheat oven to 350 degrees. Preheat a large, ovenproof saute pan over medium-high heat.

Prepare the Florida grouper by seasoning the top of each fillet with the reserved 1 tablespoon of fresh herbs and a light seasoning of the all-purpose blend. Add the breadcrumbs to a shallow container. Lightly coat the tops of each seasoned fillet with an even amount of the reserved 2 tablespoons of dressing. Once all the fillets are seasoned and dressed evenly, place them with the top side down in the breadcrumbs to coat the top side only. Repeat this process with the remaining fillets. Carefully shake off any excess breadcrumbs.

Add the cooking oil to the preheated pan and carefully add each coated fillet to the heated pan with the coated side down. Cook each fillet for 3 to 4 minutes, until golden brown and crispy. Carefully flip over each fillet and place the pan in the oven. Bake for another 5 to 7 minutes or until almost completely done throughout. Remove the cooked fillets from the oven and let rest slightly. Serve the Florida grouper fillets with the rest of the dressing.
