Crispy, creamy, and flat out irresistible.
Last night from the deck of the yacht we cracked into the LƤderach Dubai Collection and wow… this is chocolate done right.

You can taste the care in every bite. Perfect snap, ultra smooth texture, layered flavor, and that rich luxury feel without being heavy. It’s indulgent, elegant, and dangerously easy to keep going back for ā€œjust one more square.ā€

We don’t hand out praise lightly but this earned six thumbs up from us. Honestly? Blows Lindt out of the water. If you’re looking for something special under the Christmas tree or just an excuse to treat yourself, this is it.

Norman Island energy in the BVI’s is undefeated. We pulled up to The William Thornton Bar & Restaurant - W***y T the legendary pirate floating bar where the main rule is simple you jump off the boat topless. So naturally this chef understood the assignment šŸ˜„

First time ever diving from that height. No hesitation just trust. I told myself the ocean would keep me safe and she absolutely did. Adrenaline high saltwater grin and then reality hits. I literally set a 15 minute timer because chef life does not pause and the galley was calling.

This is the life I want to share. Food culture adventure family and saying yes to the moment before the timer goes off. Somebody give me a travel show because this is only getting started.

Last night aboard turned into one of those moments that feels bigger than dinner service. A Mexican themed night that flowed straight into karaoke, laughter, and that magic you only get when good food meets the right people in the right place.

I reimagined a Poke Tower of Power with a Latin twist, fired up ribeyes with fajita veggies and a cilantro oregano Mexican pesto, then closed it out with cinnamon dusted chocolate brownies and Luxardo cherries. Loud flavors. Zero hesitation. Full send.

This is the kind of experience I want to build into a travel show. Food, culture, people, and places, seen through a chef’s lens and shared with my family along the way. Real moments. Real meals. No script.

Ready for the next chapter. Let’s go.

Dinner served aboard last night. We did a Mexican Themed Party followed with Karaoke. I did my take on a Poke Tower of Power but gave it a Latin Twist. Then grilled up some Ribeyes topped with Fajita Veggies on a Mexican Pesto (instead of Basil I used Cilantro & Fresh Oregano) Round three was my Cinnamon Dusted Chocolate Luxardo Cherry Brownies. Arrrrrrrrgggggghh

ā€œThe Poached Pearā€ It’s timeless, its elegant and it’s what was for dinner last night aboard Combine Christmas Spice ā€œCinnamon, Cloves, Star Anise, Allspice, & Vanilla Beansā€ reduced down with Tawny Port Wine, Sugar & Lots of Love. I let the pears bubble in this bath for 6-8 hours at a very low temp to let the flavors pe*****te. Then at the end I take some of the liquid and reduce with a slurry to thicken when the sweetness is just right. Then you have the magic, the aroma and the flavor. Long live the pear!
