Passover on Everest

Rachelle Burk has written a true story of friendship and kindness across cultures. Cheryl and Nikki Bart were the first mother-daughter team to scale Mount Everest. The safest time to attempt this dangerous feat is during the spring. Nikki was thrilled to be climbing Everest, but was sad that they would be spending Passover with strangers and missing the Passover seder with her family. She mentioned this to one of the sherpas, the trained mountaineers who work to help the other climbers. Much to her surprise, these people worked hard to put together a seder. Nikki and her mom did not spend the holiday with strangers after all, but a different type of family. Craig Orbach's illustrations are realistic and help the reader envision the trip. Burk's text is interesting but simple enough for young readers. This book sets an example for children, by telling the true story of women who accomplished a lofty goal. But it is also the story of kindness of strangers.

Happy Baking Day!
Check out this delicious Hamentaschen recipe from Lily Blue Riding Hood!

Lily's Skateboarding Hamentaschen
Ingredients:
Dough--
- 4 eggs
- 1 cup sugar
- 1 cup oil
- 4 tsp baking powder
- 3-4 TBSP orange juice concentrate
- 4-5 cups of flour

Filling--
Fun and colorful filling options of your choice. Including jam and/or chocolate chips!

Skateboarding supplies--
One container pre-made frosting
Long flat cookies (one per hamentaschen)
Small round cookies and/or candies (four per hamentaschen)

Directions:
1. Mix dough ingredients.
2. Roll out dough (approx 1/4 inch thick).
3. Cut out circles (approx 2-3 inches diameter. Depending on size of you "skateboard".)
4. Place a small scopp of the delicious filling of your choice in the center of the circle.
5. Pinch together to make 3-cornered hamentaschen.
6. Place on cookie sheet.
7. Bake at 350 degrees F for 15-20 minutes.

After hamentaschen have cooled:
Attach 4 small round cookies or candies as "wheels" to the long "skateboard" cookie with frosting. Voila! You have your skateboard!
Attach hamentaschen to skateboard with frosting. Voila! You've made your very own skateboarding hamentaschen!
