Apple Pies ๐ฅง
Vegan, of course
I didn't measure anything ๐ซฃ
Ingredients :
Vegan Puff pastry
I used honeycrisp & green apples ๐(diced)
Lemon juice ๐
Brown sugar
Cinnamon
Dash of Nutmeg
Few dash of ginger
Pinch of Salt
Cornstarch slurry (1 Tablespoon Cornstarch, 3 Tablespoons cold water)
Vegan egg wash or Non-Dairy Milk & agave mix
Cane sugar to Sprinkle on top
In a saucepan on medium-high heat, add everything but Cornstarch slurry, & cook until apples have softened. Then add cornstarch slurryย until thickened. Remove from heat and allow to cool completely.
Preheat oven to 400ยฐF
Fill pastry with 1-2 Tablespoons filling, cut ventilation slits, fold over & crimp edges. Brush with vegan egg wash or Non-Dairy milk & agave mixture. Sprinkle cane sugar on top. Place on Parchment lined Baking sheetย & Bake for 15-20 minutes or until golden brown. Enjoy ๐

Perfect Quinoa Every Time! ๐ Fluffy, not soggy!
Quinoa is a great substitute for rice! It's a complete plant-based protein!
Recipe:
1 cup Quinoa
1.5 cups Vegan chick'n broth or vegetable broth
Season to taste
1. Rinse Quinoa w/ cold water
2. Bring broth of your choice to a boil
3. Use whatever seasonings you like. I just added sea salt & pepper. Taste broth, make sure it's good!
4. Add Quinoa & a bay leaf ๐
5. Bring back to a boil. Cover and turn down to low
6. Let simmer for 15 minutes
7. Remove from heat & leave it covered for at least 5 minutes.
8. Remove lid & fluff with fork.

Vegan "Lamb" Gyro
Tzatziki:
โข Plain unsweetened plant-based yogurt (I've used @foragerproject plant-based sour cream before & it was delicious)
โข Cucumber(shred & squeeze excess liquid or finely dice) (mine weren't that finely diced, but I didn't care, lol)
โข Lemon juice
โข Olive oil
โข Minced garlic
โข Dill(fresh or dried)
โข Salt & Pepper to taste
Purple Onions:

โข Parsley
โข Salt & Pepper to taste
Gyro Seasoning
โข Vegan Worcestershire sauce (or liquid aminos or coconut aminos or soy sauce)
โข Smoked paprika
โข Rosemary
โข Cumin
โข Coriander
โข Garlic powder
โข Onion powder
โข Thyme
โข Oregano
โข Lemon juice
โข Salt & Pepper
For the gyro "meat," I made it out of vital wheat gluten. You can use mushrooms, Jackfruit, soy curls, tofu, or whatever meat substitute you like.

4 Avocados (depending on how much you're making)
1/2 Purple Onion (or "red" onion ๐)
2 Roma Tomatoes
1/4 cup Cilantro
Juice from 1 small lime
Juice from 1/2 lemon (Optional)
1 Jalapeรฑo(seeds removed)(Optional)
Dash of Cumin (Optional)
2 cloves of garlic, minced
Salt & Pepper to taste
1tsp Lime Pepper (Optional)

Recipe
Ingredients:
Wet~
3 Overripe bananas
1cup Plant butter (softened)
1/2cup Non dairy milk
1/4cup Maple syrup
teaspoon Vanilla extract
Dry~
3cups All purpose flour
3/4cup Cane sugar(or 1cup if you want it sweeter)
3/4cup Light brown sugar(or brown sugar)
2teaspoons Cinnamon
1/2 teaspoon Nutmeg
1teaspoon Sea Salt
2teaspoons Baking powder
1teaspoon Baking soda
1cup Chopped Walnuts
1/2cup Vegan chocolate chips(optional)
Directions:
Feel free to use a hand mixer to mix all wet ingredients.
In a large bowl, mash bananas. Then add butter, & mix. Then add the rest of the wet ingredients and mix well. Next, add dry ingredients, except flour , Walnuts & chocolate chips. Mix well, then add flour. Slowly fold in flour, then add in Walnuts & chocolate chips until everything is incorporated. Don't over mix!
Set oven to 350ยฐF . I like to spray my muffin cups. Dont overfill cups. Bake muffins for about 30-40 minutes depending on the oven.
If making bread, grease pan & bake for about 45min- 1hr.
