Set aside. Add the oats to a food processor. Process until a coarse flour is formed. Set aside. If baking, pre-heat the oven to 400°F. In a large bowl, crumble the tofu with your hands until it resembles the texture of ground meat. Add the flax seed mixture, oat mixture, tomato paste, Dijon mustard, soy sauce, Italian seasoning, onion powder, garlic powder, and salt and pepper. Mix with your hands until well combined. Use your hands to form the tofu mixture into about 14 balls about an inch in diameter. Lightly squeeze so that the mixture stays together. Place the balls on a lined baking sheet. Bake the meatballs for 25 to 30 minutes, flipping halfway through, until golden brown and slightly crispy on the outside.
tofu quinoa stuffed peppers 🫑 ingredients 1 cup cooked quinoa 1 block extra firm tofu (you can also use any cooked ground meat if you’d prefer) Any seasonings of choice, I used salt, pepper, parsley, basil, cumin, paprika, and cilantro. Finely chopped veggies of choice, carrots, tomato, garlic etc Heat the oven to 450ºF. Crumble the tofu into a bowl. Add the quinoa, diced veggies and seasoning of choice. Slice the tops of the peppers off and scoop out the seeds. Add the filling in each pepper. Pour some water in the bottom of a baking dish. Add the peppers with the tops back on. Bake for 30 minutes or your desired softness. Enjoy!
