B’s Roast!
This is the easiest roast recipe that you ever make!
1 chuck roast
One package of ranch dressing mix, onion soup mix, and Italian dressing mix
2 cups of water
Place roast into a crockpot and add all three dry mixes, and 2 cups of water.
If your roast is frozen place on high for 8 to 10 hours. If your roast is fresh place on low for 4 to 6 hours, depending upon the size.
I like to make this recipe a day in advance if I’m serving it to guest. Just make sure that you remove your roast from the gravy and wrap it up very well before putting it into the fridge. Another reason that I like to make this a day in advance is so that all of the fat that is in the gravy rises to the top, and I can remove that after it has cooled down. It is easy to finish the gravy on the stove by making a roux.
Breakfast Burritos!
This time I was serving a crowd! I made 50 breakfast burritos!
Often times when I am serving a crowd, I will prep many of my ingredients the day before. Knowing that I had a very early morning to finish my dishes this really helps. As you can see in the video I had sautéed my onions and red peppers separately and had gone ahead and cooked the sausage and bacon. I even went ahead and prepared the scrambled egg mixture. One of the key things you can do to make sure that your eggs are combined very well is to put them in a stand mixer for 10 minutes using your whip attachment. You can easily place into the fridge overnight and they’re ready to go the next morning.
Something that I have found that helps when making breakfast burritos is to make sure that you’re not adding too much liquid to your eggs. You do not want a weepy burritos! I also allow close to one egg per burrito.

3/4 cup whole milk
1 Tbsp salt
1 tsp pepper
Combine all of these ingredients into your stand mixer. Using a whip attachment place this on medium high for 10 minutes. It should make a frothy foam on the top when finished. Note I did do this in two separate batches.
With breakfast burritos you can pretty much add any kind of toppings you want. I opted to cook 1 pound of sausage and 2 1/2 pounds of bacon for this recipe. I also sautéed one half of a very large Vidalia onion and one large red pepper.
I made the scrambled egg mixture in three batches. I did not cook all of the eggs and combine it with all of the ingredients and cook it at one time.
You can toast the tortillas or just heat them in the microwave before you put the filling in. If I’m doing a small batch, I will toast the tortillas. But since I was making 50 I just placed them in the microwave.
For this, I also used 3 1/2 pounds of shredded cheese. You can use any type of shredded cheese that you like. I used a Mexican blend and added mozzarella to it.
