It’s going to be another hot weekend in Roseville so if you are like me, where the idea of using the stove or oven is a big ick, you eat out or cook out.
This salad is perfect for hot weather cooking.
Make your couscous or fonio early in the day, along with the rest of the salad prep (pesto can be made in advance too) assemble in 30 mins. before serving and bing-bang-boom you’re ready to go!
