Decided to go with a little homemade inarizushi tonight. Little pouches of yummy sushi goodness. Easy to make a mess with since you gotta use your hands to put everything together, but once you get into a routine, they come together quickly.

When you have an abundance of little catfish filet pieces leftover and a big bottle of sesame seeds that both need to get used sooner rather than later, you make sesame encrusted catfish filet chunks.

This is two pans into one - they prolly wouldn’t have cooked that well all piled up like that.

Rinse the catfish filets in cool water a couple times and spread them out on paper towels - don’t pat ‘em dry though, or your crust won’t stick.

Pour out a bunch of sesame seeds onto a plate, mix in some MSG and paprika.

Press your filet chunks into the seeds, flip and press again to coat each side with spices and seeds.

Put ‘em in a foil-lined, oil-sprayed oven safe dish and drizzle a little sesame oil over each one as well as another dash or two of your spice of choice. Bake uncovered at 425 for 15-20 minutes, but keep an eye on ‘em after 15 minutes.

Pro-Tip: Pick a couple pieces of different sizes to be your sacrificial bites to test when they’re done. Pull out pieces of similar size from the oven when your chosen pieces flake with a fork. No fork flaking means it needs more cooking.

I’ve had a hankering for a wedge salad for a couple days now.

Finally decided to swing by the grocery store and buy a head of iceberg and started putting together this monstrosity when I got home from work.

Now I’ve just gotta eat 3 more of these before the rest of the lettuce goes bad.

At least I snagged plenty of toppings while I was at the store.

For as long as mankind has been able to extract the walnut from its shell, folks have been roasting them and eating them. Heck, fire might’ve been the first tool used to easily open walnuts.

If you don’t wanna go full caveman, an air fryer set to 320 for about 5-10 minutes does the trick. Just toss the walnuts in some oil(I used peanut oil, cause why not), roast ‘em, and sprinkle some salt(and a little smoked paprika - trust me).

Couldn’t decide what I wanted to eat and was being my little shadow following me around.

So I let her decide.

I asked her if I should make burgers.

No response.

Asked if I should make a sandwich.

Still nothing.

I asked her if I should make a late breakfast.

Small meow.

Asked her if I should make grits.

Got a “Really?” look.

Asked if I should make sausage.

She turned her back to me and gave me the cold shoulder.

It wasn’t until I asked if I should make chicken and waffles before I got a resounding meow and “pick me up” pat on the leg with her paw.

After air-frying up some chicken pieces and toasting some Eggos, I asked one last question about brunch - Blackburn syrup or honey?

She looked me dead in the face and said “you’re a grown man, so make up your own mind! Just make sure I get some chicken, capiche?”

I’ve been experimenting with my new air fryer, and I finally pulled the trigger on trying my frozen air fried. Gotta say I’m impressed with how crispy it can get pretty much whatever I want to make crispy - like fries and the outside of this Takoyaki. I would be lying though to say it’s the same. When the Takoyaki is deep fried, the batter soaks up just a little oil, and it adds a richness that’s missing. That being said, I’m sure this way is healthier, and the air fryer is MUCH easier to throw together and quicker to clean up.

Got some great gifts today, and made some even greater memories.

My younger brother got me this awesome Zoro statue from One Piece.

My older brother(with an assist from my oldest Wonder Niece) got me this funny mug that I look forward to filling with coffee first thing tomorrow morning. I just have to figure out how to make my hair look like the pictured “Bearded Funcle”. 🤣

And Dad came thru with an air fryer(not pictured - it’s in the other room and I’m being lazy) that I’m gonna be tinkering with in the kitchen from here on out.

But above all material gifts, it was great to get to spend time with family and friends over the last few days. Nothing I could unwrap could ever be better than my Ninja Nephew wanting me to hold his hand while we walk to the parking lot, or my littlest Wonder Niece wanting me to help her put on her dancing shoes so she could dance and twirl.

Even with an unfortunate auto incident(not me and not my ride) throwing a minor wrench in things, I’m thankful that all my folks are safe, happy, and healthy, and I hope you’ve found your Christmas to be just as Merry as mine.

Today I was gifted an adorable set of handmade ornaments from Rebecca Turner’s oldest daughter Neely. She saw my tree post and remarked that I didn’t have any ornaments, so she went to work drawing and coloring me some. I just so happened to have ordered some ornaments that came in today as well, so my first Christmas tree is a little more filled with love and joy and Luffy.

Now has some targets to try to take off the tree that she has so far only stared at with bright, wide eyes of kitty amazement. I know she’s plotting SOMETHING, but that’s half the reason I put it up in the first place.

I’ve had more than a handful of roommates in 3 different apartments since I left college, but I’ve never had more than a Charlie Brown twig for a Christmas Tree. With getting some gray in her tail, I figured I’d give her something to try to tear up while she’s still young enough to try. Time comes for us all, and it only took 37 years for me to break down and buy my own “permanent” tree(even though it said Artificial on the box). Now I’ve just gotta spend the next hour or so messing with these branches and spreading them out.

Broke out the yesterday to fix one of those pork roast slow cooker kits from the Walmart meat section that I found on clearance. Tough to beat the price per meal of a couple bucks - especially considering how easy it was to just throw everything in, let it run, and check on it every few hours.

10 hours later on the Low setting, and the pork come out fall apart tender while the veggies soaked up all the flavor. Next time I’m gonna add more veggies, but not bad for my first slow cooked meal in the new place.

I’ve been South of the border and across the Pacific ocean in my this weekend.

From potstickers with homemade sauce to deer meat quesadillas topped with avocado cilantro sauce and and from with toppings to black beans cooked with delicious sautéed veggies, I’ve had a flavorful few days.

Is Baja Blast a “part of a balanced breakfast”, and do they even advertise breakfast foods like that anymore?

Used to you’d have a bowl of sugary cereal amongst a buffet of other breakfasty goodies in the commercial to make it look less like a box of sugared sugar, but either I just haven’t seen it or that style of advertising has gone the way of the Dodo.

Oh well.

I’ll be the champion of Baja Blast for Breakfast! Just don’t take it away at the end of the Summer. Looking at you …

Getting a thorough inspection from after returning home with much less hair.

We raised over $163,000 for by the time I ended my 6 hour stint on the other side of the mic, and thanks to the generosity of listeners across the Magnolia State and beyond(we got at least one from AZ) ended the day by raising over $330,000 for the children at !

Thank you for giving to these kids and this amazing organization, and know that your donations will make a positive impact in the lives of children.

Inverted, homemade bowl:

Mashed potatoes however you like them.
Popcorn chicken however you can get it.
Gravy - you can’t beat the Colonel, so pick what you like.
Corn - canned corn works just fine
Shredded Cheese - chunky shredded cheese was on sale last time, and thin shredded cheese was on sale this time, so thin shredded cheese it is.

To save time and energy I dumped the corn, clearance rack popcorn chicken, and gravy all off in the same pan to heat up while I made the mashed taters. Turned out tasty.

This video making the rounds on bird app has my sides hurting from laughing. The tone of voice combined with the quick cut is just a double whammy of funny…or maybe my sense of humor is broken.

I got bored while playing around in the “livery editor” on Gran Turismo. I don’t think the game will let me actually race it against other folks online, but who wouldn’t like to take a trooper car for a joyride around a race track. They Like Our New Flag Halfway Around the World

The guys from Trash Taste After Dark were putting state flags on a tier list(with S being the highest tier), and they had nothing but nice things to say about our new Mississippi flag.

SOLID ice on the ground after 3 days of COLD in Clinton, MS

This stuff has gotten EVEN MORE difficult to navigate by foot on Day 3...let alone in a RWD car. The street, the sidewalk, and especially the grass and leaves are all still covered in it, and because of the temps, the ice just laughed at the salt I threw out to try to melt at least SOME of it. Now I’m starting to think I just made it worse in some patches with the salt. And now there’s a chance for MORE?! I don’t have cabin fever(yet), but I am down to my last tomato, and the bacon ran out two days ago. #FirstWorldProblems #IceApocalypse2021 #WalkingWildlings
