Fattet Hummus

Made by Vineet today for breakfast as I wanted to laze around doing nothing. Weather is great (thankfully not scorching sunny😂) and I can only manage to make Tea for us.
So, he collated this and though dish wasn’t looking picturesquely appetising, trust me I loved it. Its a Middle Eastern dish- savoury and absolutely healthy with ingredients like yogurt, garbanzo beans, tahini, garlic, pine nuts etc.

Now, am hooked to middle eastern stuff and would try grilled artichokes tonight.

HARRY POTTER BUTTER BEER
(Gluten Free)

Hahahah! I know what you guys are thinking. Why all of a sudden I am posting this. So, I am visiting Florida and my teenager being a huge fan of Harry Potter, he dragged me to Diagon Alley and here I am, relishing the world famous Harry Potter Butter Beer. And guess what? Its all gluten free. Reasonably, I was 4 glasses down by the time We finished Hogsmeade village.
Its the best drink I ever had in my whole bacardi life😝😝😝

I am sure many of you have already tried it but those looking to enjoy it elsewhere can make it at home too. So, here goes the recipe:

Ingredients
�1 cup light or dark brown sugar �2 tablespoons water �6 tablespoons butter �1/2 teaspoon salt �1/2 teaspoon cider vinegar �3/4 cup heavy cream, divided �1/2 teaspoon rum extract �4 bottle cream soda

Steps
In a small saucepan over medium heat, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240°F. Now, Stir in the butter, salt, vinegar and 1/3 of the heavy cream. Set aside to cool to room temperature. Once the mixture has cooled, add in the rum extract. In a separate bowl, mix 2 tablespoons of the brown sugar mixture and the remaining 1/4 cup of heavy cream. Now, beat until it has just thickened, but not completely whipped. �

When serving: divide the brown sugar mixture between 4 glasses. Add 1/4 cup of cream soda to each glass and stir well. Fill each glass nearly to the top with little more cream soda and then add the whipped topping over each. Thats optionals though!😋

Matka Doi

It is prepared using the age-old method of boiling the milk first and when its temperature comes down naturally to about 95-100 F, culture is added and kept still in Matka for about 6-8 hours. This is the original Indian method of making curd.

Doi/dahi/yogurt/Curd is prepared using the traditional method so its richer in taste and also retains all the health benefits.

Due to fermenting in a Matka, the curd has an earthly flavour.

Set your curd this way and you would not go back to any other way.

Orange Juice with Coconut Cream

This is the best drink for balancing blood sugars.

Squeeze in 1 cup of Orange Juice. Just add 1/2 cup of full fat coconut milk/cream and a dash of salt. Protein powder has to be gluten free, organic and sugar free. Add 1 scoop tp the juice and blend everything to smooth consistency. Enjoy it on empty stomach in the morning and feel refreshed.

Chicken Teriyaki with a twist

Adding freshly toasted sesame seeds and pine nuts in my Teriyaki Chicken makes it extra delicious. Throwing some roasted peanuts as a garnish is something I love.

breast is boneless cut into 2” pieces and cooked to perfection at 160 degrees.
is homemade with Tamari, rice vinegar, brown sugar, manuka honey, freshly grated ginger and garlic, and cornstarch with water.

Gluten-Free 14 Lentils Sprouts Veggie Dosa/Cheela

This is a go to recipe which can be made in various ways. I began with soaking all the following lentils (Indian Dals) in equal ratio. I took 1/2 cup of each:

Yellow moong
Whole green moong
Split green moong
Horsegram/kulith
Toor dal
Chana dal
Orange masoor
White urad
Black whole urad
Split black urad
Red lobiya

Soak them overnight in enough water. Rinse, drain and grind all the lentils with handful of each:

Sprouted black chana
Sprouted moong
Sprouted Moth dal

Now, add 1 inch ginger, few green chillies and optionally add baby spinach leaves.

Grind everything into a smooth paste with some ice. This is to avoid heating up the batter.

Now, pour the batter in a big mixing bowl and add grated carrots, zucchini, lauki, finely sliced green beans, finely chopped onions, and handful of MICROGREENS.
Add salt, carrom seeds, cumin seeds, red chilli powder, turmeric powder, cumin powder, black pepper, all roughly measured.

Always try to use only cast iron griddle(tawa).
If you plan to make a dosa, add little more water and yogurt and spread it like a dosa.
Same way, cheela can be made as shown in the video. You can also create fritters(pakora) by air frying the mixture.

Homemade Ghee in Instant Pot in 30 mins

Its not the first time I made ghee but ghee is quick, no hassle recipe..

I have used 4 lbs of unsalted one. Just throw the room temperature butter sticks in Instant Pot on Soup mode for 16 mins, forget about it and once pressure is released, just open the lid, swirl, cool and strain. Its that easy.

And yes! Ghee has zero carbs and pure fat. Its absolutely necessary for human body. So, make your pure ghee at home and enjoyyyyyy!❤️

Beetroot Lassi/chaas/buttermilk

Try this absolutely refreshing summer drink that goes with anything during lunch and is the best probiotic one can have. It has intense cooling effect on our and acts as powerhouse of nutrition.

I have used chopped beetroot here churned with 1/2 cup of homemade yogurt in my fav .

Mint leaves and cilantro are plucked from my garden, green chillies, ginger, cumin powder, lotsa black pepper, kosher salt, and hint of sugar made such refreshing drink. A must try!

Pine Nut Broccoli Chicken (Gluten Free)

This is a very easy stir fry chicken recipe which can be made in many ways. You can use tofu or paneer instead of chicken. Add carrots, beans or other veggies if you like. In video, you would find directions with captions. Below are the measurements.

2 lb chicken breast, cubed kosher salt, to taste
pepper, to taste
1 lb broccoli florets
8 oz white mushroom, sliced
3 tablespoons sesame oil, for frying

SAUCE
3 cloves garlic, minced
1 tablespoon ginger, minced
2 teaspoons sesame oil
1⁄3 c liquid aminos
1 tsp brown sugar
1 c bone or veg broth
1⁄4 cup gluten free all purpose flour

Skinny Greek Yogurt Ranch Dip w/ Cocktail Cucumbers

Ah haa! I usually gobble my favourite cocktail cucumbers from but today I relished them with a very healthy, homemade, and quick Ranch Dip. It took me literally 2 mins to collate and I was done. You can make it ahead of time and it’s gonna be good for atleast few days in the refrigerator.

Process: I took Greek Yogurt plain and whipped it with a fork for 10-15 seconds. Then, I added 1/2 tsp each of:
Sea Salt
Black pepper
Ground Cumin
Red chilly
Pinch of black salt and lotsa chopped cilantro. Mix it all and its done! ❤️

Enjoy this dip with any veggies or a spread. Its super hit with kids too. You can make various combinations with your fav herbs, garlic powder, sugar, some EVOO etc.

Hahahahah! Quite funny I know. But I had no choice but to hog all my cookies alone given that they are gluten free and guilt free too.

Round cookies: I used Organic coconut flour, sweet potatoes flour, honey, some kosher salt, Pure vanilla extract, salted butter, 1 tsp ACV, Cane sugar, pinch of baking soda and Nestle choco chips. Mix everything and bake as usual at 370 for 30 minutes.

Rectangle cookies: here I mixed Sorghum grounded flour, coconut sugar, vanilla extract, threw in 1/4 cup of brown rice flour grounded in , pinch of baking soda, walnuts, raisins and cranberries.
Mix everything and bake as usual at 370 for 15-20 minutes.

Gluten Free Broccoli saag (curry) with Pearl Millet/Bajra Roti with Jaggery and home made Lal Mirchi Achaar

Today was spontaneous day as its Monday and blues wreak havoc on my mood. I just can’t think of anything to cook and I feel lost. So till lunch I was on my toes with other things so I quickly steamed lot of broccoli, threw in some baby spinach and made a purée in my all time fav . When saag is ready then why not some Bajra roti too? Also, what’s better than giving this dish a company of jaggery and my most favourite Red chilli pickle?

My family loved the lunch and dinner both as they wanted to repeat it.

Recipe is super simple. I sautéed garlic and dry red chillies in homemade ghee and added puréed tomatoes. After they were done, added the blended saag in it to cook it for sometime. Later regular masalas (spices) and then few chunks of paneer (cottage cheese) for that extra twist.
It went so well with my Bajra roti that I didn’t miss Sarso saag and Makai roti at all.

Gluten free Jowar Rolls

I had soaked 6 types of lentils for making jowar thalipeeth and I turned the leftovers of final product into rolls of Sorghum (Jowar) and Chickpea (besan).
They were so crispy and delicious. I thought of air frying them first but you know how I am😂

So, here’s a quick sneak. I soaked toor, green whole moong, yellow moong, orange masoor, horsegram- kulith, chana dal overnight. Made a batter with onions, ginger and green chillies. It was a coarse batter with no water. Threw in lots of veggies for extra nutrition and taste. Kneaded it with jowar flour and made rolls in hot oil.
Serve them hot with homemade cilantro chutney.

Mother’s day Gluten free plate collated by my sweetheart hubby and my tween! ❤️

Gravy/Sauce: butter and garlic sautéed in pan. Sautéed onions in Avocado oil till translucent. Then added green/red pepper till done but crunchy. Then added tomatoes and cooked further. Finished with Hot & sweet tomato chilli sauce with some simmer masala. Added some salt, pinch of cinnamon and black pepper and then diced paneer(cottage cheese).

Tasted absolutely delish with almond flour tortillas and a cup of tea. Made my day totally!!!!❤️

Amaranth Gluten Free Halwa

I loved making this Halwa on Ashtmi to celebrate the festival. Being gluten free myself, I chose this flour as I wanted to enjoy something sweet too.

It came out absolutely delicious and we ended up finishing it immediately. Next time, I am going to make more quantity.

In my video, I have tried mentioning everything but still putting ingredients list with measurements here:

Amaranth/Rajgir grains- make a fine powder/flour-1 Cup
Sugar- 1/2 Cup
Ghee - 1/2 Cup
Water- 2 Cups

Gluten-free Quesadillas - (chickpea flour)

Oh my my! These quesadillas are to die for, especially with trader joes various seasonings, cottage cheese and lotsa veggies and sauces. These turned out absolutely delicious and super filling. Being gluten free makes them stand out when it comes to nutrition. Those with gluten allergy can freely enjoy these as they are light on the stomach.

Sorghum(Jowar) Dosa - Gluten Free

This is an awesome dosa which can be made in a jiffy and so healthy.

In the video, I have mentioned the ingredients used:

1/2 cup white urad dal/lentil- soaked for 30 mins
1/4 pink salt
1 cup sorghum grains or flour
1/2 cup cooked rice or soaked poha
1.5 water

Grind everything together into a smooth paste and leave it for fermentation for 8-10 hours.

Make dosas and enjoyyyyy this super healthy breakfast or as a meal.

Navratri Sabudana Khichdi- Gluten Free

I have been making sabudana recipes since long but last few times, my khichdi wasn’t coming out so well. We went on a trip to Cle Elum last week and my friend shared some tips. I tried making it today as Navratris are going on and this is the best dish one can enjoy during this festival.

Believe me, this came out so well that I am thinking to make this everyday till day 7 of the festival.

While everyone mostly know the recipe, few tips that made it awesome and super delicious, are:

- pull out starch while rinsing only.
- soak it only enough water which shouldn’t be more than 1/2 inch above.
-cook it in cast iron pan
-sauté potatoes with some mustard seeds or no tempering.
-make it in ghee only
-add crushed or powdered roasted peanuts before putting sabudana.
Loved the grounded roasted peanuts which I added while sautéing the potatoes. This was better than adding roasted whole peanuts.
-add only salt and pepper for the zing
-don’t cook it too long once you cover the vessel.
-add lemon juice and cilantro in the end

What’s everyone doing these Navratri? I made kheer yesterday for the puja and would post the recipe shortly for that too.

Quinoa Beans Salad in Instant Pot - Gluten free

I collated this for my lunch today and this was wow! Just wow! So filling and refreshing. Full of protein, good carbs, fresh veggies and aroma of fresh cilantro. I felt like I can eat this daily.

Recipe is super simple. I soaked my quinoa for an hour and then rinse it thoroughly. Soaked my black beans and cooked for 45 mins in IP with little salt. Made my dressing with standard ingredients ie Extra Virgin Olive Oil, lemon juice, kosher salt and pepper.

In my salad bowl, first went quinoa, then beans, then avocado, halved cherry tomatoes, corns, bell peppers, some red onions. Tossed everything in the dressing and garnished the salad with freshly chopped cilantro. You can make this in a big batch for 3-4 days but I prefer to cook everything on daily basis and make fresh stuff. But either way is okay.

Today, I made awesome chicken as I had 2 lbs of drumsticks dancing in my refrigerator. I marinated the drumsticks in full fat yogurt with all the spices and herbs resting for 30 mins. Pressure cooked the bones in instant pot for 4 mins on high and then added rice. I had boiled 6 eggs before that but we gobbled them up in breakfast.

Biryani came together with sautéed onion slices, cilantro, saffron milk and my favourite boondi raita. Chicken was so perfectly cooked that each piece had flesh falling off the bone. What all one needs? My boys were super happy and enjoyed their lunch.

Gluten free Sorghum Biscotti
(Jowar and Jaggery)

I wanted something super healthy to munch since few days and this gf biscotti was perfect to go with my cup of evening tea.

Took me total 45 mins to serve and 15 manual minutes. I used Virgin Coconut oil with pure home made Jowar flour and Jaggery. I twisted my biscotti with choco chips though dry fruits can be used too. They turned out super crunchy, flavourful and delicious.
Mix 2 cups Jowar (Sorghum flour) with 1/2 cup coconut oil, 1 tsp vanilla extract, 1 cup jaggery. Mix all and knead it with 1/4th cup milk. Freeze for 30mins and then bake them at 400F for 40 minutes.

You can grind your jowar at home with the grains as that’s what I do and make jaggery powder too. Use almonds, cashews, raisins while baking or as garnishing.
